Later on: the nose is wild strawberries with a floral edge, violets; on the palate more red fruit, cherry and red plum, juicy, with a bit of butterscotch and cardamom, long finish.

Medium Ruby with red fruits on the nose, high acidity overwhelms and doesn’t give much up on the palate, some interesting pepper and eucalyptus on the finish. 87. On day 2 acidity is less harsh and improves a bit - still sort of closed off with very little fruit on the palate, but interesting with those earthy peppery eucalyptus notes.

Beautiful, elegant wine. Peppery, menthol up front followed by floral strawberry at the end. Long finish and very savory. Paired with cacio e pepe and salmon pasta in miso broth; both were inspired pairings. With the cacio e pepe, the peppery menthol softened with each bite of the cacio and the red fruit and floral notes became more pronounced while still maintaining balance with the savory notes. And the salmon pasta in miso broth caused the wine to have an equal balance between the savory notes anda the fruit/floral notes. This is a gem.
