  • Little expectation - so really impressed with this excellent singleton which we drank with our 1984 vintage daughter at Sunday dinner. Sub was ready in case!
    Decanted through aerator and stoppered till drinking (1hr). Dark but with a distinct meniscus. Juicy, ripe (almost sweet) plum and black berries infused with smoke and charred oak. Hints of strap. Dusty integrated tannins and decent acidity to balance. Everything working in harmony albeit medium bodied with quite a delicate feel. Respectable length.
    Fully mature and for drinking up.

  • Domaine de Chevalier lunch (Macleay Street Bistro, Potts Point): The appearance is clear and deep garnet in colour. Tears are present.

    On the nose, the wine is clean with a medium intensity. There is a distinct aroma of bottle age (new leather, subtle tobacco). Swirling reveals black fruit (blackberry), subtle oak (clove), and subtle herbaceous notes (jalapeño). The wine is developing.

    On the palate, the wine is dry with medium acidity, medium alcohol, and medium(+) body. The medium level tannins are soft and fine-grained and capture some of the warmth from the alcohol. The flavours have a medium intensity and show a herbaceous character (jalapeño), notes of black fruits (blackberry, blueberry), bottle age (tobacco, subtle leather), and subtle oak (clove). The finish has a long length.

    This is a very good quality wine. The flavours are concentrated, and have a great balance with the acidity and good balance with the alcohol (a bit of warmth from the alcohol shows during the finish). The subtle oak treatment is well-integrated, complementing the flavour profile. The soft tannins are well-balanced with the acidity, also complementing the flavour profile. The wine is complex, with primary, secondary, and tertiary characteristics, and has a finish with amazing length. The flavours provide a very clear expression of Cabernet Sauvignon, with typical black fruit and herbaceous aromas.

    This wine drinks well now, and is suitable for further ageing. The fruit shows good intensity, and there is some tannic structure and acidity that will help support the wine as the tertiary notes continue to develop.

  • Domaine de Chevalier Birthday lunch (McLeay Street Bistro, Potts Point): Red berry, very red fruit, leathery, almost red plums, overall the impression is quite ethereal. Very Pinotesque and very nice. Still fresh and juicy.

  • Good stuff. Far from dead. Very tertiary nose but there is fruit still there. The zingy palate reflects a cool vintage. The finish is mid length. Wish I had more.

  • Coravin fun - Dom. de Chevalier tasting (E & M's in the rocks, Sydney): From Coravin. Dusty aromas with leather, bramble, autumn leaves, mushroom, baked earth. In the mouth the wine is juicy, refreshingly so, slight bramble fruit, drops quite quickly but, for me, rather lovely none the less.
