Aiolos walkaround tasting (Aiolos HQ): Double decanted Very fragrant, extrovert, decadent, spicy, pot pouri, peppery, capsicum filled nose, so welcoming, there is also DMS-like sweetness here which is strange (like cooked corn), gets more herbal with time. Palate shows the same flavor profile, high acidity, tight tannins, a touch warm, big bold tannins that are not aggressive, mineral, long finish

Opened for about 30 minutes and drank half of the bottle. The wine is bold, lots of acidity, bacon fat, a bit tart, not complex and short finish. My girlfriend like it a bit more than me. We put it in the fridge to revisit in about 2 hours, didn’t decant it for the lack of one.
The wine went downhill further, the tart notes because flat out bitter and the acidity to the roof.
I’ll hold my last 2 bottles for about 3 years and then make sure to give it at least one hour decant…

Drank over 2 days. Nose of dark black and blue fruit, olive, funk, spice. Palate was similar with a little sanguine note. Overall a very good wine that got much better on the second day. 50+5+13+17=8

I found this to be quite nice. A much more restrained Cayuse. Elegant. All the usual notes you'd expect from Cayuse, but more balanced, maybe even nuanced.

Big wine but pretty smooth. A little gamey. Still pretty young.
