Having 2 x 19 Fevre GC’s now (19 Preuses being the other) the quality of the vintage is without doubt – and there is merit to some early peeks, but put these to sleep for a while. A little of the 6 year old barrel is felt on the surface, warm sourdough bread and a touch of richness. But readily beneath this is a foundation of minerals and all other geological delights. Hold.

This has really tightened in the last 6 months. It intensely chalky and razor sharp. There's a suggestion of citrus and it is compact, deep and long. It has fabulous cut and will be something special when it unfurls.

Chablis Grand Cru - the Jewel in the Crown (Hong Kong): Cote Bouguerots is a 1 hectare lieu dit within 15 hectare Bourgos climat. Belongs to Herriot Champagne. Bougros derived from Latin word Bucca meaning mouths of the river and refers to a narrowing of the river Serein. Soil is clay and marks with Kimmeridgian. Wine is aged 14-15 months in stainless & used oak barrels, 5-6 months on lees.
1 hour slow oxidation in bottle. Nose of citrus, green apple, retrained minerality, perhaps a little tastiness. A little apricot and pineapple indicates that the fruit captured the sun. Palate very ripe but balanced fruit & acidity indicated well placed soil vis-a-vie the sun. Buttery and smooth with a crispness. Reasonable finish.

Chablis Domain Visits-Louis Michel, Pinson, and William Fèvre (Chablis, France): Yellow. Medium weight. Salt and vanilla flavors, lemon in the background, puckering, stony finish. Not a huge wine but young and bracing. I loved this. It outpaced the 2020 version by a mile.
