Then, initially, waxy notes, peach, apricot, honey, plus hints of minerality and flint smoke. With more time and air notes of sweet lemon and cantaloupe also appear. (91p) TASTE: Ripe yellow fruits. Very viscous, mouth coating. Perfect balance between fruit sweetness, viscosity and ripe acidity. (89p) OVERALL: Classic Chateau Simone Blanc. So ripe, well balanced and ready to drink, yet so fresh and fruity. Will undoubtedly keep for several more years. Followed it over 6 days after opening; if anything, the wine only became more fragrant and waxy on the nose and more focused and fresher in the mouth. Will probably keep for several years. TOTAL SCORE: 90 points. It is indeed the white wine which is the king/queen of Chateau Simone.

Very often it happens on Thursday (Restaurante Cuenllas - Madrid): Poured in Zalto Burgundian glasses. Aromas of hawthorn, violets and lavender. All wrapped with elegance and good taste. On the palate has tension, a refreshing acidity that opens a long forgotten new door to deep emotions. Great length and breadth. A bottle to be remembered. Aged to perfection. Still a cult wine. I understand why.
Vertido en copas Zalto. Aromas a flor de espino blanco, a violetas y a lavanda. Todo envuelto con elegancia y buen gusto. Al paladar tiene tensión, una refrescante acidez que abre la puerta a emociones largo tiempo olvidadas. Gran longitud y amplitud. Una botella para recordar. Envejecida a la perfección. Todavía un vino de culto y lo entiendo.

Consensus was that this tasted exactly like southern French tondonia. Lively and fresh at this age.
