As part of Ridge’s virtual tasting, this newly released Cab was featured. It’s a blend of 84% Cabernet Sauvignon and 16% Merlot. Given its youth, we decanted for about an hour and a half. It was almost blue black when first opened, but developed an inky deep purple opaque core with only the thinnest rim of plum. Primary flavors of plum, cassis, cigar and mint. The finish is all licorice and vanilla. Angular tannins but with a decent decant this is enjoyable now, but why deny it its eventual greatness? Hold for ten years. Not a grain of sediment in either of the bottles. 13.3% alc. With mushroom tart and London broil (beef) and assorted cheeses. 03.29.24. Recommended.
