This was a very nice bottle of mature Chablis drank with parchment paper halibut. It had that salty minerality I really like in Chablis. It was way better than a bottle I drank in 2017. I have one more that I will drink in the next year or so.

Dekantert 2 t. Frisk nese med sjø, østers, sitron og kalk. Flott mineralsk munnfølelse med sitrus i svansen. Bra friskhet, endelig moden og suveren til østers og sjøkreps.

Chablis Dinner with the Oakland Crew (Wood Tavern): Served blind. Bit of funk / burnt rubber. No one else at the table reported this - interesting discussion on individual sensitivity to specific aromas...acidity very strident, a wine more to be admired than enjoyed perhaps? Again - table consensus seemed to be the more chablisienne of the flight - sneaking suspicion that I have somewhat MOR tastes in this area...
Revisiting later with food it was much more pleasurable.

Very nice aged Chablis drank with a baked chicken. Still fresh and bright with good minerality. Wish i had a few more. Drink now.

With deep fried halibut. Okay but missing that minerality I love in Chablis. More of a green apple highlight.
