A Day in Chablis: 2006 Chablis Grand Cru Grenouilles, Les Chablisienne (from demi-bouteille)—With foie gras, confit d’abrigots on “ginger snaps”—Quite a good match if all of the elements of the dish are combined. Easy on the apricot or the wine turns bitter. More green apple than citrus. The longer the wine sat, the more pronounced the oak until it finally overwhelmed on the final sip.

This bottle was singing! Perfectly balanced, line, pear, well integrated oak. Minerality was present. Went very well with an Epoisses.

Gelbe Früchte, Kräuter, mineralisch. Herrlich stofflig und saftig am Gaumen. Mundfüllend und lang. Sehr guter Chablis.

In Le Bistrot des Grands Crus. Great lunch on their terrace on way home from Morvan. Honey, lemon, very tasty indeed.
