Beautiful wine, fully developed and still with a ton of energy and focus.
The wine looks straw colored. The legs are medium. There is no sediment in the bottle. It smells like lemon. The body is medium. The wine has satin-like texture. The wine finishes long. The wine has high acidity.

You would need to tast a different vintage against the 2007 to discern the brett. It is definitely a bit more "earth" than the normal Peay profile; but also very well structured and a ton of cherry fruit. Impressive for a 10 year old CA pinot noir.

Hardly a classic Chambolle - Musigny. Should have been a very good bottle given the reputation of the vineyard and vintage, but alas it was an inspired oak-bomb! Highly disappointed.

Outstanding white Burgundy from a tiny producer based in Meursault. From their 6.5 hectares of land, half goes into the Bourgogne Blancs, both of which they are incredibly proud of. The Cuvee des Ormes is produced from vines aged 35 to 60 years and the house style is based on elegant, mineral, terroir driven wines that really over deliver for the money. The grapes were picked early, fermented using natural yeasts in old oak barrels, and then aged on their lees in a mix of new and old oak for 12 months. The result is a sleek, classy white with delicate citrus and tropical fruit, lovely texture, firm acidity and minerality, and wonderful poise and balance. It's long, delicious and satisfying and, whilst drinking beautifully now, will age happily for 4-6 years. Given where they are and how it tastes, this is relatively a bargain.

Decanted and pour back into the rinsed bottle two hours before re-opening. Improved and opened up over the next two hours. Classic Lynch Bages “dust”, bright red fruit and savory spice. Hard to believe this was almost 27 years’ old, tasted very young and fresh – simply stunning.

Decanted after standing for a few days in the cellar. Opened about an hour before pouring. It need another hour+ to fully evolve. A brilliant old-school CA Cab. Rusty, iron-like aroma with hints of ashy smoke. The tannins are fully resolved into a smooth, Bordeaux-like texture and the restrained fruit complemented by a savory, gamey tinge, this is a complete, balanced bottle. Unfortunately, CA cab is no longer made in this style.

Classic Nuits St. George. Had it next to 2002 Chevillon from same vineyard and Mangien obviously uses less new oak. Drinking at its peak, but will last a few more years. A stunning surprise.

Not as transparent as expected, or should be, actually a bit cloudy, but well balanced. Clearly this wine must have tasted over-extracted in its youth. Now it is fully mature and into secondary notes. The high alcohol level is evident. Not going to evolve beyond its present state – drink if you still have any in your cellar.

Opened for 90 minutes before consuming. Very elegant, seamless wine with a laser-like focus. Secondary flavors starting to emerge - oriental vosne-like spices. Very long finish. Beautiful wine Best of the evening. (Pousse - Santenay - Gravieres '02, Lange Three Hills '02)
