CNY Day 2 at Highland. Drank in Zalto Universal. Appearance is clear, medium intensity, gold colour. Thin legs. Fast fading bubbles. Nose medium+ intensity, with aromas of lovely mushrooms, bruised apples, golden peach, lemon verbena, marzipan. Developed. On the palate, dry, softened medium+ acidity, medium- alcohol (12.5%), medium body. Medium+ flsavour intensity, with flavours of honey, brioche, biscuit, bruised apples, golden peach, lemon verbena, sweet baking spices, marzipan and white chocolate. Long finish. Very good quality. Drinking well probably at peak. Nice stuff, but can't help but keep thinking that Krug just crushes this as competition.

A great champagne to start the evening. Brioche, citrus (more lemon then others) rose petal, and fresh berries. Once in mouth the bubbles simply danced off the tongue and revealed a potpourri of flavors.
Creamy textured up front then vanilla, then lemon, then cream again then peaches and even some hazelnut's on the finish.

This was showing beautifully - precise and fresh with good acidity and minerality, notes of brioche, yellow fruit, hints of nuts, floral notes. Very balanced and smooth on the palate, round and generous, at the same time vibrant and so very very long. Excellent. Drink (or keep). 94-96

Reading other recent notes I’d say we got a cracker of a bottle. Lively mousse and beautifully tight persistent beading. This was pretty much the best champagne I’ve had. A bright golden colour. Tastes of peach, apricot, lychee, white flowers, honey, toast and nuts. So superbly put together. A perfect evolution of flavour and structure. Still a rather bright acidity. Brilliant.

Another surprisingly advanced experience similar to a few months ago from the same case. Pronounced golden straw colour. Almost no mousse and rather tired bubbles that disippated quickly even in a very small champagne flute. Rich and masculine nose of fresh-grated nutmeg, toasted hazelnuts, lightly toasted 'Hovis' bread. Palate has a similar rich, yeasty, masculine body that is very 'Sir Winston' but seems surprisingly very advanced and on a downward path. Little finale. Was bought in the secondary market and I'm guessing that there may have been some storage issues. Anyway, if you have this I suggest trying a bottle and coming to your own conclusions on longevity. To put it in perspective, I am normally a huge fan of this wine.

Mildare doft än de flesta andra som prövades under kvällen, det är blommigt med lite knäck och citrus. Rund och härlig smak av aprikos och gröna och röda äpplen. Nice, but a bit lackluster. Somewhat lacking in expressivity compared to previous experiences of PRSWC, which may be attributed to the none too great vintage.
Served side by side with Roederer -08, neither was an obvious winner.

Absolutely loved this. Displays a medium brown color, still translucent, a nice foreshadow of the complexity to come. Very fine, almost non-existent mousse - didn't affect the wine in my opinion, but suggested the bottle may have been mishandled at some point (I've owned for just a couple of years). Brilliant nose: toasted almonds, grapefruit, with a bit of cigar smoke. Acidity medium/low, age appropriate. Despite low mousse factor, still had effervescence on the palate, with the more complex savory flavors dominating into a nice 20 second+ finish. Drank rather quickly (it was good!) so didn't a chance to gauge the evolution over an evening but I think it's peaking (again, the bubbles). Loved it - excellent drinking experience now, PRSWC is among the best champagnes in the world.

Deep straw gold. Big bubbles. Not much mousse. Nose is nice and bready with lots of straw and brioche. Palate is deep and rich. Lots of yellow fruits and white apricot. Resonant and long but a bit tummy burning. Much more advanced than a couple of bottles we drank six months ago; knowing all 3 bottles this one was down to recent home storage, I think.

It’s been 2 years since we had this wine and 7 years since we tried it first and in 7 occasions that we have had it the range of 91-92 has been consistent. This is well evolved and has been like that for some time and in a way it’s very surprising how this is going on. Rich and well evolved, very vinous of a wine and much as we always say this is a wine for those who love their champagnes well evolved. A special wine at a special time. 91-92

From magnum. What a wine! Deep straw colour, persistent although quite large bubbles. But what a nose! First red apples, then a slight honeyed tone, then some chalk and crushed stone, and then wonderful, fresh citrus. More like a white Burgundy than a classic champagne, almost without autolytic aromas. Full bodied, high acidity, very nice caressing mouthfeel. smooth and silky bubbles (strange, as they appeared so large in the glass), expands on the mid-palate, giving lots of fruit (apples, citrus, lime) and chalk, ending in a long finish with some marvellous honey tones. This is the best WC I have ever tasted with a perfect balance between sweetness, minerality, and acidity. Sophisticated wine.

Dinner with Shane and Caroline (The White House, Pok Fu Lam, Hong Kong): Yellow hay gold. Quickly dissipating mousse in a medium sized wine glass. Streams of tiny beaded bubbles. Nose is rich toasted Hovis bread. Palate is fizzing and very refreshing Epsom Salts that is much lighter than the nose would suggest but still with a rich toastiness on the back end. Nicely long and resonant. Really lovely. A typical masculine Sir Winston. This is drinking beautifully and is fully open for business. We opened a second instead of going on to a white Burgundy because it was so good. 92+

Much more advanced than a magnum we drank 10 months ago. Pronounced golden straw colour. Fast-dissipating mousse leaving large, languid bubbles. Lovely rich and masculine nose of fresh-grated nutmeg, toasted hazelnuts, lightly toasted 'Hovis' bread. Palate has a similar rich, yeasty, masculine body that is very 'Sir Winston' but seems surprisingly advanced for its still relative youth. Nicely resonant and reverberant on the decently long finish. Lacks the pomp and dimension of better vintages but great to drink now whilst you wait for the 1996, 1999 and 2002 to take their slower path to maturity.

Five years ago, the wine needed 2.5-3h of decant to really show its best, leading me to predict that it would improve beyond 2030. Definetely not my prediction after this bottle. Pulled at around 11C cellar temp, the palate felt partly overly mature and with a grape fruit note that got it out of sync. After 10-15 minutes in the fridge it started picking up and over the course of the next 1.5-2h it was singing as I poured it around 9-10C (guesstimate, but definitely more chilled than I usually like them). Overripe and juicy lemons and apples. Nutty and mushroomy. Not hugely complex, but with so much character, depth and fabulous balance. Seamless and so long in the finish. One of the most delicious PRs in recent memory. 94-95p

Absolutely delicious now, but with plenty of life left, this was richer than I expected, and showed both fresh fruit (Macintosh apple) and a toasty, wheaty character. Where it shone was the finish, which carried on for as long as I could wait before taking the next sip. Fabulous bottle.

OMG why did n t we had that first to every wine... although it was so good and refreshing at that moment... insanely beautiful, nutty and brioche like, no sugar at all, so fresh, palate is crisp and laser like, long time I had such a fantastic champagne, big personality there.. hope there are some left for another tasting... perfect ending of that massive evening ... what a treat !!! Thursday Evening Thai Dinner (Friends' Rooftop, Pok Fu Lam, Hong Kong): From magnum. Medium straw gold. Very few bubbles. Nose is muted warm straw and a touch of barnyard. Palate is nicely burnt wheat. Nice masculine weight. Very wheaty. Moderate weight for a Sir Winston. No particular length. Too young?
Pol Roger Cuvée Sir Winston Churchill is a more sophisticated and finely-complex version of Pol Roger vintage Champagne. Same with Pol Roger, this Cuvée is very Pinot Structured, smokey and weighty-creamy textured. Charming and more refined, concentration is a notch above Pol Roger vintage. Fairly energetic apricots and white blossom. Great balance and mineral/sea shell backbone, a bit tight and not powerful on the nose. A graceful Champagne. Went superbly with teppanyaki lobster and sashimi. (93/100)

Pre 'Typhoon Mangkhut' White Truffle Birthday Dinner (Octavium, 8/F, 22 Des Veoux Road, Central, Hong Kong): Drank from magnums. Medium straw gold colour. Persistent beads of very small bubbles but moderate mousse. Super nose of new leather, ozone and high piano notes of grapefruit. Palate is grapefruit skin and its white pith followed by yeasty brown bread. Some resonance, length and headiness. Has improved from when I last drank it a couple of years ago, when it was rather painfully young and acidic. It is now very enjoyable as an aperitif although I don't think it has the characteristics of a great vintage.

Hawksmoor wine club (Hawksmoor London Bridge): Appearance is still rather pale (certainly when compared next to the '95 Dom which was served just before). Lots of very fine bubbles and wonderful texture in the mouth. This is a ripe vintage certainly, but it is not flabby or fat and the wine still possesses a wonderful streak of acidity. There are now hints of toast and honey on the nose but remains very primary in the mouth with green apples prominent still (!!).

Full nose with some development. Ripe apple, lemon, oystershell and some toasty Gun-powder. Depth with chocolate. Balanced, full and elegant palate. Some development. Smoky, rich and powerful. Combines elegance with richness in typical Winston-style. Can be cellared much longer for more creaminess. Good grip, but a bit lesser than the top vintages.

Kunne ønsket litt mer intensitet på nesen. Likevel vakker duft av røde epler, blomster, spice, svakt sitrus og aprikos. Hint av mocca med tid. Intensiteten øker også etterhvert - pen modning. Dette er vakkert, elegant og alt faller på plass. Suberb mousse som gir en strålende munnfølelse. Elegant konsentrert med en viss rikhet i den kjøttfulle frukten. Nydelig friskhet - ikke syre som du skjærer grimaser av, men som bare lekent løfter det hele til strålende balanse. Dette er virkelig bra! Nydelig nå, men vil også være knakandes god i mange år fremover. Strammer seg opp i utgangen hvor mineraliteten viser muskler. Meget lang ettersmak. En utrolig flott flaske!

This provided fantastic company. It was the only bottle that two of us needed to open and was drunk over three hours and was pure class. Sure the colour wasn't pristine yet the richness and depth remain poised. Still has time to go I reckon. Not for lovers of fresh and vibrant Champagnes but for us, pure class.

We have had this wine quite a few times over the last few years and this is the 3rd time in the last few months. On its own like yesterday it shown very nicely, fatty , ripe, toasty and with honey touches. it lacks the energy and acidity of super cuvee but this was always meant to be a riper/fuller rounder expression of champagne. 92 once again

We have had this wine a few times and in a way it always leaves an anti-climax feeling. High on star value, very promising but it just under-delivers to expectations. Ripe & rich, lots of spice, orange peel feel, toasty. Honeyed texture and well mature now but not at that tertiary level yet. Good wine but we expect more. We have a few more bottles and we will try and drink them sooner than later. 91

Appearance: Bright and clear, it has light lemon color, with watery rims and legs. Nose: Clean, with medium intensity of citrus fruit of lemon, green fruit of apple, autolytic notes of brioche and yeast, mineral notes of stony, oak notes of toast, some nutty notes. The wine is developing. Palate: Dry with high acidity, the wine has medium alcohol and light body, demonstrating medium intensity of flavors including citrus fruit of lemon, green fruit of apple, autolytic notes of brioche and yeast, oak notes of toast. The wine has a medium finish. Conclusion: Very good quality Champagne with a reasonably intense nose showing good complexity, the wine has a high acidity, providing crispness and refreshing palate, with a similar flavor profile of good concentration and fair length on the finish. Overall a wine is in good balance on all fronts, typifies how a good champagne with Pinot Noir predominant characters could perform. Ready to drink now though can benefit from further ageing of another 4-6 years.

Pol Roger Tasting (Sunfish Cellars): My first taste of this, consumed a glass over about 45 minutes. This is a "Wow" champagne. Fantastic, complex, extremely masculine and powerful. I would love to drink a whole bottle.

Pol Roger Tasting (Sunfish Cellars, St. Paul, MN): Medium gold color. Drank 1+ glass over 30 minutes. Wow, wow, wow, this has it all. Amazing depth and power, full bodied and rich, though really not heavy, finessed, toasted, brioche, nutty, deeper than the '00 Vintage, pear, citrus, , hints of red fruit, citrus zest, yeast, spine tingling minerality, very long and intense finish. Birthday lunch for Mike and Andrew: Served to me blind, I did not pick this as a 2000 Winston. However, it was obvious, once the Champagne was revealed. I could see the 2000 potentially developing on towards something like the 1995 in five or so years. The bouquet not showing the complexity or evolution of the 1995. A fresher, more citric and malic nose with some savoury, yeasty, caramel and mineral elements. In the mouth, there was a little development and a leesy, almost creamy component. However, it was much tighter, and less oxidated, than the 1995. Quite intense with good mid palate weight. I’m holding my bottles for at least five more years.

This was an absolutely outstanding bottle. Opulence in a glass! This has definitely developed since we drank it a year ago. Creamy, buttery and very moreish. I guess this could catch you off guard if you were not expecting this type or kind of flavour. However, we loved this and I found myself savouring each sip. A glorious golden colour in the glass. I found there was a truly special finish too. I am not sure how this could develop further and agree with other posters on here. But, and this is a big but....this really is palate staining stuff and I adored it.

Dinner at Otto e Mezzo (Otto e Mezzo, Alexandra House, Central, Hong Kong): Light straw gold colour. Furious and persistent beads of very small bubbles but very little mousse. Lovely nose of white shoe cream, new leather, ozone and high piano notes of grapefruit. Palate is sharp....razor-sharp....grapefruit skin and its white pith....very high acidity, a bit too much so but still refreshing. Some resonance, length and headiness but too much grapefruit pith to be really enjoyable and even food couldn't temper it. Quite different from when I last drank it several months ago.....it seems to have gone into an unusual place for now. Re-visit in a year or two but I don't think this is a characteristic vintage for this wine.

Decanted. After 21/2-3hrs it really took off in the right direction. Wood, mature apples and exotic spices on the nose. RICH. In the mouth, great consentration and acidity, creamy and tiny bubbles. Again RICH. Long and complex. Clearly in beginning of drinking cycle, should improve greatly until 2030-40.

FW-BYOB-HT#2: ¤FW - Really good stuff! In many ways this is reminding me of a good white Burgundy. Nose is dominated by sulfuric minerals, gun powder, crushed stones, but there is also plenty of apples of all sorts, nougat, coffee, citrus and orange peel. There is a fantastic depth to the nose that really shows of the wines quality. Broad, generous fruit on the palate with a high intensity that smoothens out the really high background acidity. Immaculate length!
Given a few hours in the glass it really shows it's quality, so I'm guessing it has a long and prosperous future ahead of it.

Typical pinot noir dominated Winston Churchill champagne. Delicious as always. Probably doesn't have as much potential for improvement as a champagne from a vintage like 2002, though, so I would go for the Winston Churchill 2002 over this, for storage, although that is rather unsurprising, if you compare 2000 to 2002 in general. It still has room to develop, just not as much as the 2002 imo.

White Truffle Lunch (Otto e Mezzo, Alexandra House, Central, Hong Kong): Drank a bit too cold initially. Golden yellow colour. Effervescent and vigorous bead. Lovely nose: toasty, rich and lots of whole-roasted lemons. Palate is super-racy acidity and lemons with some Epsom Salts minerality ad effervescence. Refreshing. Young. Appealing. Less masculine than your usual 'Winston Churchill' - probably a sign of its youth but I doubt it will ever match the masculinity of the 1999.

My fourth time trying this champagne and I always find it intriguing. Red apples, nice mousse, great minerals, a touch of calvados maybe, vinous and with no appearant bubbles. Very interesting and very good. With bubbles this would have been a 94, maybe even a 95.

60th Birthday at home with 15 guests and superb caterer (Kalm Kitchen) - wines from my cellar. Limited note taking. 5 bottles consumed with canapés. Perfect mousse, bready and apple nose, great depth of flavour and concentration, full bodied and good length. On its plateau, but will hold at this peak for at least another four or five years in my view. A food wine.

A Champagne of great class, complexity and elegance. The nose is a Boulangerie of bakery goods, brioche, freshly baked bread and biscuits. It is creamy in the mouth with incredibly fine bead and fine citrus flavours. There is a dollop of freshly churned butter and it finishes with good mineral cut and length of flavour is excellent.

This lovely Champagne is now approaching it’s drinking window. It’s actually really entered it, showing some signs of maturity. Some nice nuttiness, yellow apples, flowers and bread/yeast. Second layers with caramel and some fudge, with coffee & orange peel. On the palate creamy pinot characteristics showing, with butterscotch, nuts, yellow apples, toast and some lemon fruit present. Long, rich and precise, with a medium + length mineral tail. Good material all over, from fruit to acid, makes this a very well balanced wine with a good future, so no rush to finish. Very good Sir WC, especially given the vintage in general from Champagne.

Wildman Tasting at Peninsula (Chicago, IL): Lots of caramel notes on the nose (first time I've found that in a Champagne). A bit of brioche and yeast as well. This is an incredibly soft and mushy Champagne that's a bit umami and sweet on the palate without anything to hold it together. I've never had a flabby Champagne before either, but there's a first time for everything.

A fresh, citric nose with lifted aromas. Toast and a lactic quality, perhaps creme brûlée. Some chalkiness. An intriguing nose. On palate, a vibrant, taut wine with excellent tension. Very elegant and quite approachable. The racy acids, with a rich, full, creamy body and complexity combine to make this a lovely Champagne. However, there was doubt in the room, that I shared, as to whether this would make really old bones. Still right now, or in the next few years, 94.

Tasted at the winery. This is primarily Pinot Noir with some Chardonnay. 8-9 gm/ltr of sugar. The grapes used for this wine were planted in 1965 and come only from Grand Cru vineyards. The Winston Churchill was first released in 1984 with the 1975 vintage. This was the most complex of the wines poured. Yellow color. Solid bead. Notes of pear, apricot, toast and crushed stones. Full bodied. 95-96 points.

At the Bordeaux Index Champagne Tasting. Young and with lots of time to develop but not austere at all and definitely already drinking well and better than the 1998 for example. Maybe its a vintage thing. Has a nice round feeling to it, with ripe toast notes developing as it relaxed in the glass. Young still. They future is bright for this wine. 92 at this stage but this will only get better. Patience

This wine is predominantly Pinot Noir with some Chardonnay as well. No exact figures given. The dosage is 8 grams and no oak used. The result is a wine with an expressive bouquet of brioche and minerals. On the palate a lot of minerals as well. Very full bodied, a bit drying in the finish and some pleasant oxidized and nutty impressions. A lot of finesse, freshness and complexity. Very tasty bubble. 93-94

Dracks för att fira att huslånet betalts av. Först till en fransk bondost vilken gav en fin balans. Därefter till en Soupe de petits pois som även den passade bra. Syran är nu silkeslen och de nötiga brödiga tonerna som jag gillar har verkligen kommit fram. Har en flaska till av årgången, den kommer sannolikt att hålla ytterligare flera år.

A great champagne to start the evening. Brioche, citrus (more lemon then others) rose petal, and fresh berries. Once in mouth the bubbles simply danced off the tongue and revealed a potpourri of flavors.
Creamy textured up front then vanilla, then lemon, then cream again then peaches and even some hazelnut's on the finish.

Reading other recent notes I’d say we got a cracker of a bottle. Lively mousse and beautifully tight persistent beading. This was pretty much the best champagne I’ve had. A bright golden colour. Tastes of peach, apricot, lychee, white flowers, honey, toast and nuts. So superbly put together. A perfect evolution of flavour and structure. Still a rather bright acidity. Brilliant.

Another surprisingly advanced experience similar to a few months ago from the same case. Pronounced golden straw colour. Almost no mousse and rather tired bubbles that disippated quickly even in a very small champagne flute. Rich and masculine nose of fresh-grated nutmeg, toasted hazelnuts, lightly toasted 'Hovis' bread. Palate has a similar rich, yeasty, masculine body that is very 'Sir Winston' but seems surprisingly very advanced and on a downward path. Little finale. Was bought in the secondary market and I'm guessing that there may have been some storage issues. Anyway, if you have this I suggest trying a bottle and coming to your own conclusions on longevity. To put it in perspective, I am normally a huge fan of this wine.

Mildare doft än de flesta andra som prövades under kvällen, det är blommigt med lite knäck och citrus.
Rund och härlig smak av aprikos och gröna och röda äpplen.
Bra mousse men hyfsat svag syra fick mig att tänka att det varken var 96 eller 02.
Kändes lite blyg och hade tufft att stå upp mot motståndet ikväll även om det absolut var ett bra vin. Gissade Winston 00.

Absolutely loved this. Displays a medium brown color, still translucent, a nice foreshadow of the complexity to come. Very fine, almost non-existent mousse - didn't affect the wine in my opinion, but suggested the bottle may have been mishandled at some point (I've owned for just a couple of years). Brilliant nose: toasted almonds, grapefruit, with a bit of cigar smoke. Acidity medium/low, age appropriate. Despite low mousse factor, still had effervescence on the palate, with the more complex savory flavors dominating into a nice 20 second+ finish. Drank rather quickly (it was good!) so didn't a chance to gauge the evolution over an evening but I think it's peaking (again, the bubbles). Loved it - excellent drinking experience now, PRSWC is among the best champagnes in the world.

Deep straw gold. Big bubbles. Not much mousse. Nose is nice and bready with lots of straw and brioche. Palate is deep and rich. Lots of yellow fruits and white apricot. Resonant and long but a bit tummy burning. Much more advanced than a couple of bottles we drank six months ago; knowing all 3 bottles this one was down to recent home storage, I think.

From magnum. What a wine! Deep straw colour, persistent although quite large bubbles. But what a nose! First red apples, then a slight honeyed tone, then some chalk and crushed stone, and then wonderful, fresh citrus. More like a white Burgundy than a classic champagne, almost without autolytic aromas. Full bodied, high acidity, very nice caressing mouthfeel. smooth and silky bubbles (strange, as they appeared so large in the glass), expands on the mid-palate, giving lots of fruit (apples, citrus, lime) and chalk, ending in a long finish with some marvellous honey tones. This is the best WC I have ever tasted with a perfect balance between sweetness, minerality, and acidity. Sophisticated wine.

Dinner with Shane and Caroline (The White House, Pok Fu Lam, Hong Kong): Yellow hay gold. Quickly dissipating mousse in a medium sized wine glass. Streams of tiny beaded bubbles. Nose is rich toasted Hovis bread. Palate is fizzing and very refreshing Epsom Salts that is much lighter than the nose would suggest but still with a rich toastiness on the back end. Nicely long and resonant. Really lovely. A typical masculine Sir Winston. This is drinking beautifully and is fully open for business. We opened a second instead of going on to a white Burgundy because it was so good. 92+

Much more advanced than a magnum we drank 10 months ago. Pronounced golden straw colour. Fast-dissipating mousse leaving large, languid bubbles. Lovely rich and masculine nose of fresh-grated nutmeg, toasted hazelnuts, lightly toasted 'Hovis' bread. Palate has a similar rich, yeasty, masculine body that is very 'Sir Winston' but seems surprisingly advanced for its still relative youth. Nicely resonant and reverberant on the decently long finish. Lacks the pomp and dimension of better vintages but great to drink now whilst you wait for the 1996, 1999 and 2002 to take their slower path to maturity.

Five years ago, the wine needed 2.5-3h of decant to really show its best, leading me to predict that it would improve beyond 2030. Definetely not my prediction after this bottle. Pulled at around 11C cellar temp, the palate felt partly overly mature and with a grape fruit note that got it out of sync. After 10-15 minutes in the fridge it started picking up and over the course of the next 1.5-2h it was singing as I poured it around 9-10C (guesstimate, but definitely more chilled than I usually like them). Overripe and juicy lemons and apples. Nutty and mushroomy. Not hugely complex, but with so much character, depth and fabulous balance. Seamless and so long in the finish. One of the most delicious PRs in recent memory. 94-95p

Pol Roger Cuvée Sir Winston Churchill is a more sophisticated and finely-complex version of Pol Roger vintage Champagne. Same with Pol Roger, this Cuvée is very Pinot Structured, smokey and weighty-creamy textured. Charming and more refined, concentration is a notch above Pol Roger vintage. Fairly energetic apricots and white blossom. Great balance and mineral/sea shell backbone, a bit tight and not powerful on the nose. A graceful Champagne. Went superbly with teppanyaki lobster and sashimi. (93/100)

Pre 'Typhoon Mangkhut' White Truffle Birthday Dinner (Octavium, 8/F, 22 Des Veoux Road, Central, Hong Kong): Drank from magnums. Medium straw gold colour. Persistent beads of very small bubbles but moderate mousse. Super nose of new leather, ozone and high piano notes of grapefruit. Palate is grapefruit skin and its white pith followed by yeasty brown bread. Some resonance, length and headiness. Has improved from when I last drank it a couple of years ago, when it was rather painfully young and acidic. It is now very enjoyable as an aperitif although I don't think it has the characteristics of a great vintage.

Hawksmoor wine club (Hawksmoor London Bridge): Appearance is still rather pale (certainly when compared next to the '95 Dom which was served just before). Lots of very fine bubbles and wonderful texture in the mouth. This is a ripe vintage certainly, but it is not flabby or fat and the wine still possesses a wonderful streak of acidity. There are now hints of toast and honey on the nose but remains very primary in the mouth with green apples prominent still (!!).
What a wonderful wine - wish I owned some of this.

This provided fantastic company. It was the only bottle that two of us needed to open and was drunk over three hours and was pure class. Sure the colour wasn't pristine yet the richness and depth remain poised. Still has time to go I reckon. Not for lovers of fresh and vibrant Champagnes but for us, pure class.

A BUBBLY GUCCI Evening with ONE FINE RED (My house, Hamburg, good old Germany): As a german who knows a lot about history the name of this cuvee is somehow making me feeling slightly queasy, but history is history and this stuff is outstanding+, this one is all about finesse, rich body, a fine brioche showing, still a little yeasty, nice mature cuvee, an very elegant long+ finish, enjoy now and over the next decade, ***(*+), 92-94+

We have had this wine quite a few times over the last few years and this is the 3rd time in the last few months. On its own like yesterday it shown very nicely, fatty , ripe, toasty and with honey touches. it lacks the energy and acidity of super cuvee but this was always meant to be a riper/fuller rounder expression of champagne. 92 once again

We have had this wine a few times and in a way it always leaves an anti-climax feeling. High on star value, very promising but it just under-delivers to expectations.
Ripe & rich, lots of spice, orange peel feel, toasty. Honeyed texture and well mature now but not at that tertiary level yet. Good wine but we expect more. We have a few more bottles and we will try and drink them sooner than later. 91

Birthday lunch for Mike and Andrew: Served to me blind, I did not pick this as a 2000 Winston. However, it was obvious, once the Champagne was revealed. I could see the 2000 potentially developing on towards something like the 1995 in five or so years. The bouquet not showing the complexity or evolution of the 1995. A fresher, more citric and malic nose with some savoury, yeasty, caramel and mineral elements. In the mouth, there was a little development and a leesy, almost creamy component. However, it was much tighter, and less oxidated, than the 1995. Quite intense with good mid palate weight. I’m holding my bottles for at least five more years.

This was an absolutely outstanding bottle. Opulence in a glass! This has definitely developed since we drank it a year ago. Creamy, buttery and very moreish. I guess this could catch you off guard if you were not expecting this type or kind of flavour. However, we loved this and I found myself savouring each sip. A glorious golden colour in the glass. I found there was a truly special finish too. I am not sure how this could develop further and agree with other posters on here. But, and this is a big but....this really is palate staining stuff and I adored it.

Dinner at Otto e Mezzo (Otto e Mezzo, Alexandra House, Central, Hong Kong): Light straw gold colour. Furious and persistent beads of very small bubbles but very little mousse. Lovely nose of white shoe cream, new leather, ozone and high piano notes of grapefruit. Palate is sharp....razor-sharp....grapefruit skin and its white pith....very high acidity, a bit too much so but still refreshing. Some resonance, length and headiness but too much grapefruit pith to be really enjoyable and even food couldn't temper it. Quite different from when I last drank it several months ago.....it seems to have gone into an unusual place for now. Re-visit in a year or two but I don't think this is a characteristic vintage for this wine.

Decanted. After 21/2-3hrs it really took off in the right direction. Wood, mature apples and exotic spices on the nose. RICH. In the mouth, great consentration and acidity, creamy and tiny bubbles. Again RICH. Long and complex. Clearly in beginning of drinking cycle, should improve greatly until 2030-40.

FW-BYOB-HT#2: ¤FW - Really good stuff! In many ways this is reminding me of a good white Burgundy. Nose is dominated by sulfuric minerals, gun powder, crushed stones, but there is also plenty of apples of all sorts, nougat, coffee, citrus and orange peel. There is a fantastic depth to the nose that really shows of the wines quality.
Broad, generous fruit on the palate with a high intensity that smoothens out the really high background acidity. Immaculate length!
Given a few hours in the glass it really shows it's quality, so I'm guessing it has a long and prosperous future ahead of it.

Typical pinot noir dominated Winston Churchill champagne. Delicious as always. Probably doesn't have as much potential for improvement as a champagne from a vintage like 2002, though, so I would go for the Winston Churchill 2002 over this, for storage, although that is rather unsurprising, if you compare 2000 to 2002 in general. It still has room to develop, just not as much as the 2002 imo.

White Truffle Lunch (Otto e Mezzo, Alexandra House, Central, Hong Kong): Drank a bit too cold initially. Golden yellow colour. Effervescent and vigorous bead. Lovely nose: toasty, rich and lots of whole-roasted lemons. Palate is super-racy acidity and lemons with some Epsom Salts minerality ad effervescence. Refreshing. Young. Appealing. Less masculine than your usual 'Winston Churchill' - probably a sign of its youth but I doubt it will ever match the masculinity of the 1999.

60th Birthday at home with 15 guests and superb caterer (Kalm Kitchen) - wines from my cellar. Limited note taking.
5 bottles consumed with canapés. Perfect mousse, bready and apple nose, great depth of flavour and concentration, full bodied and good length.
On its plateau, but will hold at this peak for at least another four or five years in my view. A food wine.

It’s actually really entered it, showing some signs of maturity.
Some nice nuttiness, yellow apples, flowers and bread/yeast.
Second layers with caramel and some fudge, with coffee & orange peel.
On the palate creamy pinot characteristics showing, with butterscotch, nuts, yellow apples, toast and some lemon fruit present.
Long, rich and precise, with a medium + length mineral tail.
Good material all over, from fruit to acid, makes this a very well balanced wine with a good future, so no rush to finish.
Very good Sir WC, especially given the vintage in general from Champagne.

Wildman Tasting at Peninsula (Chicago, IL): Lots of caramel notes on the nose (first time I've found that in a Champagne). A bit of brioche and yeast as well. This is an incredibly soft and mushy Champagne that's a bit umami and sweet on the palate without anything to hold it together. I've never had a flabby Champagne before either, but there's a first time for everything.

A fresh, citric nose with lifted aromas. Toast and a lactic quality, perhaps creme brûlée. Some chalkiness. An intriguing nose. On palate, a vibrant, taut wine with excellent tension. Very elegant and quite approachable. The racy acids, with a rich, full, creamy body and complexity combine to make this a lovely Champagne. However, there was doubt in the room, that I shared, as to whether this would make really old bones. Still right now, or in the next few years, 94.

Tasted at the winery. This is primarily Pinot Noir with some Chardonnay. 8-9 gm/ltr of sugar. The grapes used for this wine were planted in 1965 and come only from Grand Cru vineyards. The Winston Churchill was first released in 1984 with the 1975 vintage. This was the most complex of the wines poured. Yellow color. Solid bead. Notes of pear, apricot, toast and crushed stones. Full bodied. 95-96 points.

At the Bordeaux Index Champagne Tasting.
Young and with lots of time to develop but not austere at all and definitely already drinking well and better than the 1998 for example. Maybe its a vintage thing. Has a nice round feeling to it, with ripe toast notes developing as it relaxed in the glass. Young still. They future is bright for this wine. 92 at this stage but this will only get better. Patience

This wine is predominantly Pinot Noir with some Chardonnay as well. No exact figures given. The dosage is 8 grams and no oak used. The result is a wine with an expressive bouquet of brioche and minerals. On the palate a lot of minerals as well. Very full bodied, a bit drying in the finish and some pleasant oxidized and nutty impressions. A lot of finesse, freshness and complexity. Very tasty bubble. 93-94
