8/4/2020 - Xavier Auerbach wrote: 100 pointsA private dinner (Restaurant Zoldering, Amsterdam, NL): ID 215027, “received its cork spring 2015”, released 2018. An individual batch of 200 (!) bottles. Original disgorgement, aged in the cellars at Krug until release, recorked in 2015. Pale golden colour, youthful for age, gentle but perfectly lively mousse; the most amazing nose, fresh and incredibly complex, so layered and deep and fragrant, rich but pure and precise, white walnuts and spiced honey and citrus fruit and flowers, only a hint of mushroom - pointless to offer individual descriptors; the palate has the elegant, minerally core of the terroir and the bright and lively acidity of the vintage, wonderful seamless freshness at 32 years of age, very youthful, gentle bitters; crème patissière on the complete, very long and layered finish that keeps on going. An effortless masterpiece with decades ahead of it. |

For me, the essence of Yquem. |

11/17/2022 - Xavier Auerbach wrote: 100 pointsPétrus dinner (Restaurant Sinck, Amsterdam, NL): Double decanted (briefly). Perfect condition, from an unopened case purchased en primeur. Mint. Warm and ripe but fresh and flowing, fully mature, the bouquet is the right bank equivalent of the nose of Haut-Brion 1989, perfect harmony and balance, perfectly at ease with itself, rich but effortlessly elegant, sweet and gentle but firm and lively, flowers and crushed red berries, hint of white truffle, long and dreamy finish. Words of mine cannot do it justice. Dances away into the night. |

12/9/2000 - Xavier Auerbach wrote: 100 pointsA Madeira Tasting at Madas NV (Antwerp, Belgium): Otherworldly. So much depth, richness and concentration. From a bottle that had been open since November 1999. Endless nuances and layers, everything so perfectly integrated, so refined, outshines even the 1827 Serrado, amazing length. A dream. Displays none of the dry or sharp notes Liddell talks about. Perfection. |

3/7/2009 - Xavier Auerbach wrote: 100 pointsGreat Wine Dinner (Rheingau Gourmet & Wine Festival Hattenheim, Germany): With its 100% Syrah deeper and darker than the La Mouline 1988 that preceded it and with more staying power too; glorious balance, minerality and length; an utterly amazing wine, a unique combination of power and elegance, even after twenty years the (42 months) new oak remains completely absorbed, an essence of Syrah. |

12/29/2010 - Xavier Auerbach wrote: 100 pointsA private dinner (Restaurant Morston Hall *, Holt, Norfolk, UK): An absolute beauty. Incredible nose, endless nuance, dreamy, essence of Shiraz, so subtle, refined and layered, deep and balsamic, earthy and ethereal at the same time, finest fruity white pepper, white chocolate, sweet fruit (raspberry, strawberry, cassis), dried herbs, vanilla and flowers, sous-bois, opening subtly onto cocoa, smoke and bacon. Beautiful balance between grande finesse and enormous power, creamy tannins sheathed in ripe flesh, no trace of heaviness, superb finesse, so intense and concentrated but soooo light.... Perfect harmony and endless length. A big score but it was just perfect. Drink now until 2024. |

5/18/2007 - Xavier Auerbach wrote: 100 pointsThere are no great wines, just great bottles and this bottle was perfect. One of those very rare wines that reveal a deeper truth about the universe. The quintessence of Nebbiolo and Barolo, with a power, finesse and beauty that defy words. Lively, ripe garnet; tar and roses; perfectly seamless, totally at one with itself, lovely weight, soft, sweet fruit, lovely elegance and finesse, dry richness, great length. This bottle left me speechless - and grateful. At Hotel Kronenschlösschen, Hattenheim, Germany. |

A perfect bottle. Immense. Closed, deep, spicy. Very fresh and rich, stellar fruit, christmas spices, a clenched iron fist but the glove is not quite velvety yet. Enormously structured. Too young, believe it or not. Drink from 2020. Will easily live to be 100 years. Perfection. A humbling experience. |

2/25/2023 - Xavier Auerbach wrote: 100 pointsA private tasting (Buurtcafé De Tros, Amsterdam, NL): A blend of 53% Cabernet-Sauvignon, 40% Merlot and 7% Petit Verdot. Amazing, perfumed nose, perfect proportions on the palate, everything in the right place, incredible richness of ripe mulberry fruit, floral lift and spicy depth, voluptuous and feminine but firm and lively, magical balance and elegance, satiny tannins, real concentration but such a lightness of being, effortless line and length. Huge promise. The new 1961? My guess is that it is, and for me this was a perfect bottle. 6 people found this helpful, do you? Yes - No / Comments (3) |

5/4/2016 - Xavier Auerbach wrote: 100 pointsA private lunch (Restaurant l'Oustau de Baumanière **, Les Baux-de-Provence, France): According to the young sommelier a disgorgement of the period, the bottle having remained untouched in the restaurant's cellars ever since. Their last bottle. Level 1cm below the foil, very light depot. Perfectly bright, lively golden colour with only a hint of amber; completely fresh nose with candied fruit, hints of dried fruit, explosive aromas of fresh Paris mushrooms, white truffle and dried porcini, spices, vestiges of red fruit, whiff of vanilla caramel, no off notes, lovely depth; retains a very gentle mousse on the palate, still juicy and lively, dry but rounded and completely together, gentle bitters, subtle citrus flavours with candied lemon eventually develop a tangy, salty nuttiness; extremely long and intense finish. Remains perfectly intact over ninety minutes. Once in a lifetime. I lack the experience to really rate this, but I cannot imagine a more perfect bottle of centenarian Champagne. |

5/2/2013 - Xavier Auerbach wrote: 100 pointsChambertin / Chambertin-Clos de Bèze dinner (Christie's Directors' Boardroom, 8 King Street, London, UK): Quite a powerhouse of a wine, lots of potential, incredible depth and minerality, energy like a coiled spring, a magical marriage of elegance and perfect intensity, fabulous fruit and amazing length. In no way the closed and surly wine I had anticipated to encounter, but aren't truly great wines great at any age? Perfection. Half a century in it at least. |

6/15/2004 - Xavier Auerbach wrote: 100 pointsA private lunch (Buçaco Palace Hotel): A fascinating wine, an old nobleman who bears his age with grace and a straight spine. Completely mature appearance; incredible nose of eucalyptus, mediterranean herbs and cedar, reminiscent of dry Vintage Port (Dow 1927 or 1934 come to mind), deep and smooth, "gradevole", wonderfully harmonious, slight sweetness, elegant and stylish, richly textured, firm tannins, well-rounded; excellent length. Fascinating and sublime. Clearly proves that wine is more than fysiological ripeness, levels of extract and barriques; great wine has a spiritual dimension, a magic that can be experienced but never understood or analysed. That is the essence. |

7/20/2000 - Xavier Auerbach wrote: 100 pointsPurchased in 1991 from Vinattiere Zanobini in the Via Sant'Antonino in Florence. Age has given it a wonderful, intense, deep orange-amber colour; the nose is enchanting, deep, intense yet explosive, bittersweet, fruit of bitter orange and lemon with a hint of ripe apricot, a touch of chocolate leaves an impression of liqueur bonbons, topnotes of Alpine herbs, field flowers and eucalyptus. A perfect nose, utterly unique, I have never encountered so many nuances with such definition. Perfect shape on the palate, medium sweet, all elements perfectly in harmony, rich and velvety texture, fleshy and concentrated but not fat, juicy, wonderfully elegant and refined style, flavours of toffee, herbs, flowers and some fruit; the acidity provides a wonderfully lifted finish with amazing length. Such nuance, such finesse, so sensual. I am smitten. The most beautiful expression of Malvasia I have ever encountered. |

Mature but lively colour, very gentle mousse; mature but fresh nose, still some red berries left, smoky and beautifully harmonious and relaxed and flowing, very gentle bitters, no sense of fatigue at all, long and poised, very subtle, crème patissière, red apple, perfect in itself. A mind-blowing, earth-shattering experience. No words of mine can do justice to it. We guessed 1985... |
