엔트리 샴페인 가격 역시 크게 오르면서 일단 4만원대를 찾기 자체가 너무 어려워졌다. 그런 점에서 드보 뀌베 디 브뤼는 4만원대라는 가격도 가격이지만 편의점에서 구할 수 있다는 접근성마저 엔트리스러운 몇 안되는 샴페인 중 하나이다. 게다가 가장 좋은 점은 비싼 샴페인에서 느껴지는 뉘앙스를 가지고 있어 진입점으로도 적절하다.
코에서는 숙성된 샴페인에서 느낄만한 이스트, 브리오슈같은 소위 말하는 빵 향기가 가장 먼저 느껴진다. 물론 지배적이지는 않고 약간 많이 익은 사과나 시트러스 계열의 과실향이 바로 이어진다. 약간 온도가 올라가니 이제는 달달한 냄새도 난다.
입에서는 시원할 때는 괜찮은 산도 때문에 어떠한 음식과도 어울릴듯 싶다. 질감도 부드럽고, 버블도 거친 편이 아니라 웬만하면 호불호가 갈릴 것 같지는 않다. 아쉬운 건 온도가 올라가니 산뜻한 산도는 거의 죽고 좀 밍밍한 맛이 나면서 알코올이 좀 치는 편이다.

Family Holidays; 7/28/2023-9/10/2023 (Alicante - España): By the glass. Blend of 55% Pinot noir and a remaining 45% Chardonnay. Aging of five years for an alcoholic volume of 12% with a high dosage of 8 grams of sugar per liter. Aromatically it is expressed very floral and full of sweet spices. The fruit clearly leans towards ripe citrus and cherries. Simple and already well-known under other flags. On the palate with a good balance between body and acidity that remains only in that, in balance. I would never serve it for anything other than starter.

Aromáticamente se expresa muy floral y lleno de especias dulces. Lo frutal se inclina claramente hacia los cítricos maduros y hacia las cerezas. Simple y ya conocido bajo otras marcas. Al paladar con un buen equilibrio entre cuerpo y acidez que se queda tan solo en eso, en equilibrio. Nunca lo serviría para otra cosa que no fuese el aperitivo.

55% Pinot Noir, 45% Chardonnay, aged for minimum of 5 years on the lees. 35% reserve wines aged in oak casks. This bottle I suspect had plenty of bottle life to. All in all this added up to a pretty full biscuity wine which really needed food or contemplation. High quality but not really to my taste.

Modest aromas on the nose of green apples and citrus. Very smooth texture on the palate with wonderful finish. Acidity was balanced for a Champagne. Bubbles burst out at beginning, but did diminish in less than 5 minutes. With all said, a very good Champagne for $50.

brass color... vivid apple aroma with strong autolytic notes... Some crunchy chalky minerality on first sip.
The bubbles are slightly big and distracting...
Opened the bottle at 12 and started drinking at around 20. In between the flavour and style was even a bit boring and unemotional but I can say the more this champagne lost its bubbles and breathed the more it became alive. In between a hint of gentle phenolic grip which was quickly subdued by fresh apples and minerals. The last sip was definitely the best... (dont worry there are still bubbles in it of course)
So I would tend to recommend decanting/aerating and letting it warm up properly to around 12 degrees.
Was incredibly juicy and drinkable at the end...
Big Pinot Noir glass (!)
Should react well to 2-3 years more cellaring

Pretty reflective gold with very fine bubbles. Tasty nose of lemon pound cake, also reflected in the tasting notes, along with solid acids and good minerality. The texture is slightly watery, but otherwise this is a very nice champagne.

Info supplémentaire: Bien qu’elle s’approvisionne auprès de 950 vignerons travaillant pas moins de 1 480 hectares de vignes, l’Union auboise, cave coopérative au cœur de la côte des Bar, se permet d’aller dans les micros détails en ne gardant que 20% de cette production pour la marque Devaux. Une rigoureuse sélection parcellaire de pinot noir et chardonnay, combinée à un vieillissement de 5 ans.

Recently purchased at auction, no information about the disgorgement date or base vintage. Usually the recipe for this wine is 55-60% Pinot Noir from the Côte des Bar and 40-45% Chardonnay from the Côte des Blancs, Montgueux and the Côte des Bar, 35% or more vin de réserve, partial malo, 5 years sur lattes, approximately 8 gr/l dosage. The result is a seamless and silky wine, with considerable vinosity and weight, a lively but gentle mousse, spicy depth, very good aromatic complexity (ripe citrus, flowers, brioche, vanille), lovely balance and a certain elegance, and good persistence (mandarin, orange zest). My impression is that this was disgorged a couple of years ago and that the post-disgorgement ageing has brought additional finesse. Excellent.

Wijnkoperij Okhuysen Annual Tasting (Haarlem, Netherlands): Merchant tasting, brief note. Base wine 2011, vin de réserve (aged in wood) from 2010 and 2009, five years sur lattes, dosage 6 gr/l. An equal blend of Chardonnay and Pinot Noir. A very complete Champagne, flavoursome but elegant, intense but fresh, generous but stylish, yeasty but mature, citrus and spice, very good length.

The D de Davaux wines are Champagne Devaux's premium range made from selected parcels of older vines. The La Cuvée is two thirds pinot noir and one third chardonnay. Creamy, toasty nose. Quite intense and concentrated with some slight dried apricot flavours. Good complexity. Impressive. Very Good Indeed.

Wijnkoperij Okhuysen Annual Tasting (Haarlem, Netherlands): Merchant tasting, brief note. Base wine 2011, vin de réserve (aged in wood) from 2010 and 2009, five years sur lattes, dosage 6 gr/l. An equal blend of Chardonnay and Pinot Noir. A very complete Champagne, flavoursome but elegant, intense but fresh, generous but stylish, yeasty but mature, citrus and spice, very good length.

Happy New Year, dear friends! We celebrated with this bottle of Deveaux Cuvée D, one that I stowed in my suitcase. In the glass it's expansive punctuated by baked apple, bitter walnut shells, and anise pastille. Big, powerful, and vibrant in the mouth with high toned acidity that rolls into a pleasantly bitter and vinous finish of white grapefruit, wet dough, gravel, and shale. Sample

Retailer tasting (@ O in H): The bouquet is a bit locked. The wine has some nutty flavors, dough, citrus and grapefruit acidity and bitterness. Some complexity. Good Champagne, but not extremely interesting.

A private lunch (Restaurant Het Veerhuys, Almere, NL): A blend of 60% Pinot Noir and 40% Chardonnay, 12 months on oak, 5 years on the lees. Translucent medium white gold with a green tinge; impressive nose, red apple, flowers, citrus, spices, some reduction; good intensity of fruit on the palate with some bitters from the wood, fresh and mineral core; complete finish, good length. More stylish than most from the Côte des Bar.

Weekly tasting group #083; Vertical of 8 vintages Coudoulet de Beaucastel plus a few extra's (@ DJ): The bottle I tasted was bottled in 2006. The bouquet was quite mature with ripe apples and some caramel. Same on the palate. Minerals and some bitterness. A pleasant and mature bubble.

Pale golden color; fine bead, slightly rounded nose with some brioche, slight yeasty, nose fades quite quickly; palate has nice medium-full body, refreshing bubbles, a lime tartness, fairly good acidity at first, midpalate fades out very quickly, palate thins out and loses density; finish ends kind of watery. A decent champagne as an aperitif, but not one I would seek out again especially at $40. Drink now. 85-87

Slightly deep, golden color, have has this stored for a year and a half. Very precise fit with the notes of RichardJennings from august. Very tasty, medium to full body. Maybe slightly more mature notes. Longish, dry finish.

Very attractive straw gold color. Very lively with lots of fine bubbles. Subdued floral and light toasty bread aromas. Crisp, very dry and quite spicy. Not particularly deep but good length. A good Champagne but a little pricey for what it offers.

The D de Davaux wines are Champagne Devaux's premium range made from selected parcels of older vines.
The La Cuvée is two thirds pinot noir and one third chardonnay.
Creamy, toasty nose. Quite intense and concentrated with some slight dried apricot flavours. Good complexity. Impressive. Very Good Indeed.
