Brilliant bouquet of dates, figs, oranges, raisins and dried apricots; the palate starts off quite sweet showing the PX, but then the saltiness takes over on the midpalate through the extensive finish. Beautiful nuttiness on the aftertaste. Great balance and complexity. A bit like a slightly sweeter version of the Del Duque. Really fantastic pairing with all kinds of cheese. 17.5/20.

Rich amber, nearly dark brownish, and still a star brightness. Pronounced dark caramel, toast, and vanilla aromas. Has a slight residual sweetness from the PX blended in, and a very dense caramelised feel, even nearly burnt, as well as buttery, raisiny flavours, and a backfeel of fungals. Dark olive/amber. Thick and viscous. Nose and palate pretty much the same. Great complexity. Espresso, caramel, dates, figs, pecans, cinnamon, nutmeg, raisins, and a touch of wood. Off dry due some PX mixed in. Impressive length. Slightly drying/woody finish. Outstanding!

Hazy notes from a few days ago. Light brown in colour, lots of rancio, caramel and raison notes on the nose. The oxidation and acidity are also met a brief sweetness, so there's an interesting bitter/sweet thing going on; but its dry (and somewhat salty) overall. Interesting version of a Palo Cortado (B+/A-).

Nutty brown. Fig, alcohol, gingersnap, burnt caramel. Each time you nose it another feature comes to the fore, kaleidoscopic nose. Huge rancio, huge dryness with paradoxical sensation of sweetness without it being sweet. Looong finish. Awesome intepretation of palo cortado verging on oloroso due to the PX addition. Clearly aged with complex mid palate notes that last. As an aperitif or digestif it is sublime for sherry lovers (yes, an aquired taste for some). Read Paul S's note down below, he nails it.

XVIII Salón de los Mejores Vinos de España -Peñín; 10/23/2017-10/24/2017 (IFEMA - Madrid): I reaffirm in my initial idea: that aftertaste that is both sweet and bitter is a claim for spiced rums lovers. In this drink this PC preserves those aromas of candied citrus fruits and bottled nuts. A treat. And still has time to show lactic notes. Multilayered. Ideal for a good cigar after coffee.

Nose: Dark raisins, dark caramel, dried prunes, dried figs, oily nuts. Taste: Medium to medium full bodied, hints of sweetness but much drier than the nose suggests. Slightly salty, some brine and meat stock / consomme. Taking into the equation both the saltiness and the underlying acidity, the wine comes across as between dry and off-dry.

A Tribute to Anne-Claude Leflaive (Iggy's, Hilton Hotel, Singapore): A great end to a great night. Sourced from a solera created in 1862 with an average of some 30 years of aging, this was a lovely sherry. Unusual though. After some 10 years of being aged as a Palo Cortado, it is then blended with Pedro Ximenez grapes (making up some 13% of the final cepage) before further aging. Incidentally, I think Gonzalez-Byass might just be about the only house in Jerez that still grows PX grapes in is own vineyards. In the glass, this had the salty, saline nose of a Palo Cortado, with roasted ground-nuts and dried fig peel and just that hint of penicillin going on, but these were met by sweeter PX aromas of dried cherries and raisins, a bit of mahogany and a nice waft of spice. Very nice, and the palate was every bit as good. This was a lovely, complex mouthful, with compellingly rich, off-dry layers of raisins and cherry pips and fruit skins on the attack, leaning out into a drier midpalate and then a finish of great clarity, freshness and balance, where tangy, salty Palo Cortado notes full of preserved fig peel and nutty nuances took to the fore again. I loved that interplay of rich and fresh notes and the way it all came together so that one barely noticed the 20% alcohol on the wine. Good stuff – this went really well with the deliciously unctuous epoisses dish we had to cap the meal off.

Textbook nose of walnuts and pistacchio, old barrels, just a hint of honey and molasses from the PX. Full bodied, fresh, good acidity, nuts and sea salt, the sweetness is hardly noticeable. Long, complex, nutty finish, with a tail of chewy acidity. Impeccable.

Crushed walnuts and almonds on a bed of rock salt--then drip caramel over the mess and add some dates. Just an smidgeon of RS on this keeps it smooth and a great sipper. Where this sailed was with Marcona almonds, but it blew up with the amazing nutty Comte brought by Valerie. What a treat. On the top Tiger Tail in Brentwood watching the sunset before T-day dinner with my pops.

Mahogany colour. Nose: Nice, deep nose with oxidised notes, salt, iodine, nuts, earl grey tea and citrus. Unmistakeably sherry but really not that oxidised nose. Taste & palate: Off dry, salty, richer than expected from a PC. Very nice freshness (lots of acidity) and zest, actually rather fruity. Great fruit/acidity/oxidation/sweetness balance. It's only the alcohol which is a little out of balance, but not enough to distract my attention from the fact that this is a lovely wine. Long, fresh, minerally and salty aftertaste. Another great reminder that Sherry is one of the great wines of the world (and that at an incredibly low price)!

Extremely good example of a Palo Cortado. Has the beautiful combination of the fino sharpness and the amontillado nuttiness. Round and rich on the palate with a lingering nutty sweetness buffered by medium acidity. Long finish.

Clear and bright, medium amber colour and presence of legs. The nose is clean and fully developed, showing pronounced intensity aromas of coffee, toasted almonds, hazelnuts, toffee, caramel, varnish, chocolate, tobacco and neutral dried fruit. The wine is off-dry in the mouth, with a low acidity, high warm alcohol, full body and pronounced intensity flavours of neutral dried fruit, hazelnuts, toasted almonds, chocolate and toffee. Long finish.
It is an outstanding quality wine with an amazing complexity, a very good balance between alcohol and flavour concentration, a lingering finish and a great flavour concentration. Drink now, not intended for ageing since it is already fully developed.

(Harbour outing w Joe&Lab) Dark amber in glass, smelling beautifully of dark toasted nuts, dried figs, polished wood, hint of savoury soy sauce, sea spray and toffee caramel. Surprisingly dry, with some oily textures, and yet more caramel (kinda odd to have caramel without any sweetness whatsoever). More toasty wood, cocoa bitters, and salty seaweed. Some iodine. Incredible complexity and balance, one does not even notice the 20%. Long, harmonious finish, silky, and finally revealing some raisin sweetness and tea florals right at the end. Dinner with Friends (SHS, Cos, Donnhoff, RM, +++) (Our home): After some discussion about Sherries, I decided to open this .375. Brown in color. The nose is 100 points. Just lovely with caramel, nuts, some raisins, and Crème Brule. Unctuous texture. On the palate, this is dry, perhaps a touch of sweetness. It worked well as an aperitif but may be a bit dry for dessert. Nutty with some caramel. Not as complex as I might have hoped for, but not simple either. Interesting experience.

This is a second tasting note on a bottle opened yesterday (see previous note). Rubber, candied orange peel, treacle, and almonds on the nose. On the palate, there are the same elements as the nose, plus fruitcake, walnuts, and dark chocolate. There's great balance between the acidity and sweetness as well as some real richness of flavour. The finish is long and sweet, but with an enjoyable bitter element highly reminiscent of the after-taste of walnuts. I prefer this to yesterday - a thinking man's sherry to be consumed in the study...

Darker colour than I was expecting. The nose reminds me of a 30-40 year-old sherry cask whisky, with rubber, polished wood, almonds and hazelnuts. On the palate, there's lots of nuts - hazel, almond, and walnut, along with lots of black treacle. It's pure and well balanced with decent concentration, plus some real freshness from the acidity. There's a fair amount of nutty bitterness on a longish finish. Palo cortado is easily my favourite style of sherry and this is a good example, if not quite up there with the very best.

NOSE: tawny; nutty; interesting high-toned note; oak; raisins; underlying brininess that is reminiscent of a good Manzanilla or Fino.
BODY: golden brown color of considerable darkness; medium-full to full bodied.
TASTE: oaky; quite tawny; like a hypothetical mostly dry tawny port; hint of brine; alc. can be felt in the belly a bit (20% alc.); concentrated black tea; scorched marshmallow; somewhat bitter; too much oak and tastes too roasted; this is tasty, but pales in comparison to Palo Cortados that haven’t been desecrated with PX. I honestly don’t know how impartial I am able to be in scoring this wine, as I’m having a hard time ignoring my disdain for blending PX into a Palo Cortado.

Solera created in 1862. Palomino and PX. Amber; Utterly fascinating and very complex nose of dried fruit and nuts, caramel, flowery high notes like Grande Champagne Cognac, a salinity reminiscent of Islay whisky and hints of rum raisins. Off-dry, silky attack, initially smooth but then the acidity and salinity take over and the flavours are almost bone dry with just a hint of caramel, very intense and concentrated; outstanding length, nutty and woody. Magnificent nose, impressive on the palate. And what an incredible bargain!

A stunning fortified wine for the money. This 30 year old sherry is 10% PX which as just a touch of sweetness to soften this salty nutty wine. This is not just a drinking sherry, it is a sit down and slowly savour sherry.
It has a complex nose of tasted hazelnuts, toffee apples, raisins, caramel, figs and other dried fruits. The kind of nose where you keep on discovering new aromas every time you take a sip. The palate is very soft and the alcohol is so balanced with a medium level of acidity. It's ever so slightly off dry and has all the classic hallmarks of a VORS. Salty, nutty and toffeed with a long length.
This was one of the first sherry's which opened my eyes to just how exciting this type of fortified wine can be, beyond the commercial sweet wines. Yes there are better 30 year old Palo Cortado's available, but not at this bargain price of around £15. It's the kind of wine which I always have in my cupboard and has been an hit with any of the customers I have recommended it to.

I opened my third bottle at the end of my 4/9/11 syrah and lamb dinner. Although it didn’t seem quite as good, my notes were the same as those written on 2/6/11… a great bouquet of caramel, dried fig, raisin, roasted nut and mocha aromas. I opened this at the end of our 12/12/10 duck dinner. It had a tremendous bouquet of roasted nuts, caramel, toffee, coffee and dark chocolate aromas. The palate was very smooth and balanced with a slight touch of residual sugar and flavors that followed the nose. There were several guests who declared it their WOTN. 95+

Below average? Please, try another bottle, excepting if you are a nordic drinker, probably danish, you can enjoy the bark of Seville orange, spiced drops of narrownes, nutty aroma, caramel flavors and almost a creamy wine. A complex but delicious bottle. Palo Cortado is not a style for everybody. I agree this is a sherry for malt whisky or spiced rhum lovers.

After a few hours this was a truly superb wine. Great nose with raisins, grilled nuts, dates and a hint of blue cheese - something one looks for in old, dry sherry. A really intoxicating, complex nose with just a hint of VA. To taste, superb, warming mouthcoating and lingered for minutes. Dry, raisiny and absolutely classic - I'll be getting more of this.

Nuts and spice and everything nice. The nose is a mix of acetone, nuts, salt air, musty cellar and mixed brown spices. Smooth with a hint of sweetness and rich flavors of wood, cinnamon, raw nuts, cooked sugar, salt air and more. Smooth and soft in the mouth I only wish I was sitting down enjoying a sunset on the beach. Truely a great wine. 5/5

Medium caramel color. Nose of walnuts, caramel and orange peel. It is quite fat in the nose. On the palate it is full bodied, medium-sweet, with notes of wood and sherry pungency as well. There is perhaps a slight thinness in the mid-palate flavor. Good long finish.

Rich amber, nearly dark brownish, and still a star brightness. Pronounced dark caramel, toast, and vanilla aromas. Has a slight residual sweetness from the PX blended in, and a very dense caramelised feel, even nearly burnt, as well as buttery, raisiny flavours, and a backfeel of fungals. Extremely high alcohol burn, even nearly unbalanced. Long finish, mainly of the hot caramel flavours

Dark olive/amber. Thick and viscous. Nose and palate pretty much the same. Great complexity. Espresso, caramel, dates, figs, pecans, cinnamon, nutmeg, raisins, and a touch of wood. Off dry due some PX mixed in. Impressive length. Slightly drying/woody finish. Outstanding!

Hazy notes from a few days ago. Light brown in colour, lots of rancio, caramel and raison notes on the nose. The oxidation and acidity are also met a brief sweetness, so there's an interesting bitter/sweet thing going on; but its dry (and somewhat salty) overall. Interesting version of a Palo Cortado (B+/A-).

Final bottle from a bunch purchased 6 years. Still holding out perfectly so no need to rush to drink up other than because it’s so delicious.
Lovely nuttiness with a slight hint of sweetness from px dosage. Finishes with ripe acidity and long length.

Nutty brown. Fig, alcohol, gingersnap, burnt caramel. Each time you nose it another feature comes to the fore, kaleidoscopic nose. Huge rancio, huge dryness with paradoxical sensation of sweetness without it being sweet. Looong finish. Awesome intepretation of palo cortado verging on oloroso due to the PX addition. Clearly aged with complex mid palate notes that last. As an aperitif or digestif it is sublime for sherry lovers (yes, an aquired taste for some). Read Paul S's note down below, he nails it.

In this drink this PC preserves those aromas of candied citrus fruits and bottled nuts. A treat. And still has time to show lactic notes. Multilayered. Ideal for a good cigar after coffee.
Me reafirmo en mi idea inicial: ese retrogusto que es a la vez dulce y amargo es un reclamo para los amantes de los rones especiados.
En este trago este PC conserva los aromas a cítricos confitados y a frutos secos garrapiñados. Una delicia. Y todavía tiene tiempo para mostrar notas lácticas. Multifacético. Ideal para el puro habano de después del café.

Belle robe caramel. Au nez, c’est l’abricot, le butterscotch/caramel, le sel de mer, les pépins de citrouille, la fumée. En bouche, l’attaque est franche, puissante, une minuscule pointe de sucre suivi des arômes identique à ceux au nez avec une bonne longueur puissante avec un bel équilibre. Le tout dans un milieu avec une bonne acidité et une touche saline importante. Toujours aussi bon, l’Apostoles. 92

Taste: Medium to medium full bodied, hints of sweetness but much drier than the nose suggests. Slightly salty, some brine and meat stock / consomme. Taking into the equation both the saltiness and the underlying acidity, the wine comes across as between dry and off-dry.

A Tribute to Anne-Claude Leflaive (Iggy's, Hilton Hotel, Singapore): A great end to a great night. Sourced from a solera created in 1862 with an average of some 30 years of aging, this was a lovely sherry. Unusual though. After some 10 years of being aged as a Palo Cortado, it is then blended with Pedro Ximenez grapes (making up some 13% of the final cepage) before further aging. Incidentally, I think Gonzalez-Byass might just be about the only house in Jerez that still grows PX grapes in is own vineyards. In the glass, this had the salty, saline nose of a Palo Cortado, with roasted ground-nuts and dried fig peel and just that hint of penicillin going on, but these were met by sweeter PX aromas of dried cherries and raisins, a bit of mahogany and a nice waft of spice. Very nice, and the palate was every bit as good. This was a lovely, complex mouthful, with compellingly rich, off-dry layers of raisins and cherry pips and fruit skins on the attack, leaning out into a drier midpalate and then a finish of great clarity, freshness and balance, where tangy, salty Palo Cortado notes full of preserved fig peel and nutty nuances took to the fore again. I loved that interplay of rich and fresh notes and the way it all came together so that one barely noticed the 20% alcohol on the wine. Good stuff – this went really well with the deliciously unctuous epoisses dish we had to cap the meal off.

Mahogany colour.
Nose: Nice, deep nose with oxidised notes, salt, iodine, nuts, earl grey tea and citrus. Unmistakeably sherry but really not that oxidised nose.
Taste & palate: Off dry, salty, richer than expected from a PC. Very nice freshness (lots of acidity) and zest, actually rather fruity. Great fruit/acidity/oxidation/sweetness balance. It's only the alcohol which is a little out of balance, but not enough to distract my attention from the fact that this is a lovely wine. Long, fresh, minerally and salty aftertaste.
Another great reminder that Sherry is one of the great wines of the world (and that at an incredibly low price)!

Extremely good example of a Palo Cortado. Has the beautiful combination of the fino sharpness and the amontillado nuttiness. Round and rich on the palate with a lingering nutty sweetness buffered by medium acidity. Long finish.

This is a second tasting note on a bottle opened yesterday (see previous note). Rubber, candied orange peel, treacle, and almonds on the nose. On the palate, there are the same elements as the nose, plus fruitcake, walnuts, and dark chocolate. There's great balance between the acidity and sweetness as well as some real richness of flavour. The finish is long and sweet, but with an enjoyable bitter element highly reminiscent of the after-taste of walnuts. I prefer this to yesterday - a thinking man's sherry to be consumed in the study...

Darker colour than I was expecting. The nose reminds me of a 30-40 year-old sherry cask whisky, with rubber, polished wood, almonds and hazelnuts. On the palate, there's lots of nuts - hazel, almond, and walnut, along with lots of black treacle. It's pure and well balanced with decent concentration, plus some real freshness from the acidity. There's a fair amount of nutty bitterness on a longish finish. Palo cortado is easily my favourite style of sherry and this is a good example, if not quite up there with the very best.

NOSE: tawny; nutty; interesting high-toned note; oak; raisins; underlying brininess that is reminiscent of a good Manzanilla or Fino.
BODY: golden brown color of considerable darkness; medium-full to full bodied.
TASTE: oaky; quite tawny; like a hypothetical mostly dry tawny port; hint of brine; alc. can be felt in the belly a bit (20% alc.); concentrated black tea; scorched marshmallow; somewhat bitter; too much oak and tastes too roasted; this is tasty, but pales in comparison to Palo Cortados that haven’t been desecrated with PX. I honestly don’t know how impartial I am able to be in scoring this wine, as I’m having a hard time ignoring my disdain for blending PX into a Palo Cortado.

A stunning fortified wine for the money. This 30 year old sherry is 10% PX which as just a touch of sweetness to soften this salty nutty wine. This is not just a drinking sherry, it is a sit down and slowly savour sherry.
It has a complex nose of tasted hazelnuts, toffee apples, raisins, caramel, figs and other dried fruits. The kind of nose where you keep on discovering new aromas every time you take a sip. The palate is very soft and the alcohol is so balanced with a medium level of acidity. It's ever so slightly off dry and has all the classic hallmarks of a VORS. Salty, nutty and toffeed with a long length.
This was one of the first sherry's which opened my eyes to just how exciting this type of fortified wine can be, beyond the commercial sweet wines. Yes there are better 30 year old Palo Cortado's available, but not at this bargain price of around £15. It's the kind of wine which I always have in my cupboard and has been an hit with any of the customers I have recommended it to.

Light amber, nuts on the nose and walnuts on the palate. Very appetizing and easy to drink. Sort of like a Bual Madeira with the acidity toned down. Gentle sweetness. Every other palo cortado I've tried is bone dry and something of an acquired taste but this is a crowd pleaser. Excellent.

¡Qué bueno es este Palo Cortado! Glicérico pero con un toque dulce, procedente de la PX. Caramelo con frutos secos con un tacto en boca untuoso. Siempre una buena compra.

Bueno con marisco, impresionante con unas simples olivas, irresistible con unas almendras saladas: naranja amarga, caramelo quemado y una estupenda madera bien integrada. Una "anomalía" de las de verdad, sin artificios, un Palo Cortado muy aromático y de sabor untuoso. Para conservar por meses.

Same complexity and quality as before but just a touch more woody on the nose. I think this sherry is better on the second day after it has been opened - we just popped and poured and I think it needed more time to open up.

After a few hours this was a truly superb wine. Great nose with raisins, grilled nuts, dates and a hint of blue cheese - something one looks for in old, dry sherry. A really intoxicating, complex nose with just a hint of VA. To taste, superb, warming mouthcoating and lingered for minutes. Dry, raisiny and absolutely classic - I'll be getting more of this.

Medium caramel color. Nose of walnuts, caramel and orange peel. It is quite fat in the nose. On the palate it is full bodied, medium-sweet, with notes of wood and sherry pungency as well. There is perhaps a slight thinness in the mid-palate flavor. Good long finish.
