Touch of dark cherry, ripe blackberry and some iris on nose, along with forest floor, cigar leaf and cedar. Cherry, blackcurrant and blackberry still discernable on palate with decent depth and freshness. Tertiary forest floor and tobacco leaves along with pencil shavings and hints of pepper. Considering this is almost 30 years old and a second wine it's an impressive showing. Holding up well bit I'd drink up over the next few years to enjoy at it's prime.

At our Commanderie dinner of Second Wines(1995 & 2005 Pavillon Rouge, 2005 Bahans Haut Brion, 2009 Croix de Beaucaillou and 2009 Reserve de la Comtesse).
More developed than the 2005 at this stage. At a good place in its development. I was very impressed. Many in our group liked the bit of Brett. Other were very bothered. Drink now-2025.

Drank from magnum over past ten days then decanted the remaining circa 700ml and rank over a couple of hours. Clearly better from magnum than from a regular bottle. Ruby red color, some haze to the color and translucent on the rims. Nose of ash, black fruits, pencil shavings and tobacco fully reflected on the palate but with less dark fruits. Good acidity, decent structure and complexity and tannins still present but on way of being resolved. Lacks the Margaux finesse which I have noticed in several Pavillion Rouge in the less stellar years but a decent finish. Not the best QPR but still enjoyable.

Eclectica at Table, Donkey and Stick (Chicago, IL): Served double blind. 2002 Loire cabernet franc. So much pyrazine and with the fruit and power, this really seemed to be a good call. Loved the hint of sweetness on the fruit, showing some ripeness as well. Not the best blind call I've made.

Blind 1995 Bordeaux at Table, Donkey and Stick (Chicago, IL): Served blind in flights of 1995 Bordeaux. The nose on this was much better than the palate. Tons of graphite and pencil shavings, coupled with dark fruit. The acidity here is plentiful, but the palate isn't too there. It feels a little thin and the acids jut out a little bit too much. Still, a fairly easy left bank guess for me.

During a merchant tasting. Medium dark brick. Expressive nose with lovely aged notes of cigar box, earth, red fruit, cloves, very nice Margaux typicity. Medium bodied, mid palate can't quite follow the aromatic power.

Almost a ruby crystal color in the glass. Showed great currant and blackberry fruit with some leather from age on the nose and palate. Amazingly delicious from bottle open for 2-3 hours. Unfortunately I let it rest some and when I came back, it had fallen apart and had lost any vivacity. Not bad just nothing interesting left in the last third. I would recommend drinking upon opening and not getting it too much air.

This bottle was flat and obviously past peak. Needed half an hour of decanting--and food--to show something of interest, and even then it didn't show well compared to most 95's of reasonable breeding.

Smokey nose, earthy too, a bit flat. Elegant balance on the palate, just not showing much, structure is weak too. Very tight still after a few hours, black fruit but very one-dimensional. Ok, but not showing the best of what to expect from the vintage.

A classically styled bordeaux with some green elements - bell peppers. At first it seemed a bit light and angular, but it got better in the glass. Didn't decant but a short spell in the decanter might have helped. The second wines of first growths have to offer some of the worst value for money in the world!

With a 30 minute splash decant this was very nice. Dark fruits, a bit more body than you might expect, and some finishing tannins that you would expect from the vintage - but ripe tannins. Certainly worth the price at the time. A-

Has gone downhill very quickly. Had a bottle in the fall of 2012 which was great, as was a bottle earlier that year. This one was very mundane. One of the Pro Reviewers has 2013 as the back end year of the drink window. Should have listened to him.
Typical '95 in that it lacks the full stuffing you would like, and shows its tannin, but with air this was very enjoyable and great with food. Has time. A-

Very barnyard nose, took over two hours of decanting for the fruit to make it's presence felt on the nose which evolved into red currants, raspberries and that typical reflection of margaux terroir. Deep ruby color, signs of aging on the rim, good attack on the palate, balanced acidity, decent but not overwhelming fruit, slightly under ripe, and a decent but slightly dry finish. Respectable wine if only for it's great terroir but not the best showing.

Nose: overwhelmingly barnyard, and earth with some red fruit poking through. This mellowed with aeration. The palate was impressively fresh for a wine of this age, pure acidic red berry notes with an earthy, tobacco, and capsicum -mid palate through finish. Slightly bitter, not terribly long... and lacking depth and complexity overall.

Decanted and let sit for about an hour. The initial taste after that hour's wait was a bit unimpressive yet told us to be patient, better things were coming. After another half hour we found the cherry, earth, leather, and wonderful fine tannins in this beautifully balanced wine. It excites from the middle of the tongue on back. This wine may have another 5 years of resting before it starts to go down hill. For those who judge Cabernet Sauvignon by an American standard, this wine will not be very impressive. For those who appreciate understated, balanced wines, this one will satisfy.

Opened and decancted 2 hrs. before dinner. Barnyard aromas upon opening. Oh no - was this to be another disappointing Bordeaux from '95? Did Robert P. oversell this vintage? Extremely bitter upon initial taste - green apple pucker, not pleasant. Delayed judgement one more hour but opened another '95 when dinner guests agreed the wine was too acidic to enjoy. Dinner helped a little to moderate the acid but fruit was not apparent. '95 Cht. Kirwan had same initial impact but mellowed after 1 hour but high acidic notes remained (not "harmonious"). Guests agreed we needed to open something to enjoy from CA or WA. Let no man rate your palate (you can quote me on this). I recorked both wines and will try them again tonight to see if they will open up with more time.

Dark ruby with purple tones; This was very integrated and seemed ready to drink with dark fruit overlaying minerals and an earthy flavor. A touch of green after the bottle was open for an hour. There was some question of slight TCA as the earthiness was possibly TCA. About 89 points but not rated due to possible TCA.

So, back to the drawing board we went for another trial with 1995. Initial aromas of currant and spice were subsumed by a shallow midpalate and dry finish... While not unpleasing, 1995 has continued to be a disappointing vintage--perhaps I will find them mature in my 90's...

Christmas dinner: Man oh man was this a beast! Just a purple/red monster out of the bottle that thrilled with grilled meat flavors and a deep dark core of fruit. I thought the Pavillon Rouge was drinking well, but still needed more time. It opened up a bit, and gave a great showcase of earth, leather, spice, and cigar box aromas, and low levels of brett, but seemed overall restrained and not showing it’s full potential. I’ll try this again in a few years.

Brought by a friend who purchased a case on release. Still very youthful looking with no signs of age. Wondeful scents of red fruit, and a touch of wood. This followed through on the palate. Medium weight and pleasant finish. This wine continued to improve in the decanter.

Seemed very closed at this point. Some sense of restrained elegance but I really had to work for it.

Not a bad drink but still very closed. Do not open another until 2010. Lots of minerals and well balanced, but simply not open for business.

BLIND 1995 Bordeaux etc...: Tasted BLIND. A bit tight on the nose. Structured. Youthful. Dark fruit with underlying earth. Nice.

Brought by a friend who purchased a case on release. Still very youthful looking with no signs of age. Wondeful scents of red fruit, and a touch of wood. This followed through on the palate. Medium weight and pleasant finish. This wine continued to improve in the decanter.
