Pale lime green color. Rich, expressive and surprisingly autolytic nose with complex aromas of roasted nuts and toasty autolysis, ripe citrus fruits and sweet stone fruits, some vague spicy character, a little bit of grassy greenness and a hint of yeasty leesiness. The wine is dry, smooth and quite mellow on the palate with broad mouthfeel and flavors of ripe red apples, stony minerality, some sweet autolytic character of brioches and almond paste, a hint of honey and a touch of herbal greenness. The mousse feels very fine and delicate. The acidity feels only medium, which makes the wine feel a bit sweeter and weightier and also slightly lacking in energy as the bubbles dissipate. The finish is crisp, dry and refreshing with pronounced stony minerality along with toasty autolysis, nutty character, some sweet spicy character and a hint of sharp, green-toned character.
The wine was a tad low in acidity, making it lack some energy and freshness and letting the dosage a bit too much to the fore, but otherwise the wine was surprisingly toasty and nuanced with terrific depth and energy. It's rather rare to see this much toasty and nutty characteristics in a Cava at this price point (approx. 20€). A nice and enjoyably serious bubbly.

Freixenet Elyssia Cava ... And in my opinion one of the better Cavas to enter the Ontario market in quite some time. Aromas of fresh bread with hints of citrus zest and pith. The palate continues with the citrus theme, tasting of both pith and pulp, which gives a sort of sour bitterness to the tongue, but then comes the acidity and fresh bread, and that's the wow-factor here ... It's really playful and a great aperitif; with a little time in glass (and I do mean little time cause it went fairly quickly) the wine developed a welcome bit of Mac/bruised apple ... At under $20 a bottle this was a great find and one worth having on hand for any occasion ... For us that occasion was Tuesday.

Pale, subtly green-hued yellow color. Somewhat restrained but also nicely nuanced nose with layered aromas of yellow apples, slivered almonds, some smoke, a little bit of toffee and an autolytic hint of nuttiness. The wine feels medium-to-moderately full-bodied and lively on the palate with nuanced flavors ripe peach-driven yellow fruits, some roasted almonds, a little bit of nutty autolysis, a hint of red apples and a touch of honey. The wine is moderately high in acidity with crisp and lively mousse. The finish is long, bright and racy with flavors of tart green apples, some sweet yellow apples, a little bit of pithy grapefruit bitterness, light nutty autolysis and a touch of grassy greenness.
A surprisingly sophisticated, enjoyable and complex effort that really took me by surprise - this was the first time I have been impressed by a Freixenet Cava. Lovely toasty complexity here and great depth of flavor with balanced structure, impressive stuff and worth the price at 19,97€.

Not a cava in the traditional sense, blend wise: 40% Chardonnay, 30% Macabeo, 20% Parellada and 10% Pinot Noir. Lemon citrus nose, creamy mouth, more like a classic brut than a cava, not that thats a bad thing.

New one @MLCC - was part of wine festival - not sure if the MLCC will stock this - but i won't be upset if not...typically a fan of prosecco and CAVA for value and taste profiles, but as a couple of others have said, this is not up to the higher price tag. Typical light nose of citrus and yeast. Palate is similar, but very light on flavour - a little bitter note, but similar to nose. Nice light, bubbly and refreshing and all that...but can find other cava or prosecco for cheaper and a little more "omph"

Completely underwhelming. Toasted bread and some lemon peel come through on the nose. A soft mousse with some citrus and baked apple fruit up front that then completely falls off on the mid palate through finish. Thin and boring.

Nothing special on this sparkling wine. Correct nose with some yeast and citric aromas, but on the palate is extremely plain, with more sugar than expected. For the price paid there are better "cavas" in Spain.

Pretty good for a Cava but nothing to write home about. At first it was quite unidimensional and bitter, but after an hour or so it improved considerably revealing some nice toasty notes. It is nowhere near being worth the 20€ i paid for it, however.
