Opened at Les Climats in Paris. P&P and enjoyed over lunch.
This blossomed beautifully with a bit of air, and I agree with the previous note that the signature Chablis minerality was there but not at the forefront. Gorgeous notes of honey, brioche and butter balanced with a precise acidity, coming together with a wonderfully supple feel in the mouth. Excellent stuff and will definitely continue to get better with some age.
I look forward to trying this again in 3+ years or so, if I have the patience to let these age. Once again want to give a shout-out to Tom the Sommelier, whose recommendations have been consistently fantastic.

Blind, opened the day before and double decanted. Nobody guessed Chablis - the almost too signature minerality was nowhere to be found unless you look for it. Pure orchard, white fruit, dense and broadening but light on its feet. Concentration, pure focus. Easily WOTN and a great Chablis. 95+

I thought this was great. This was served at cellar temperature at a restaurant and then we fully decanted and kept at room temp for 90 mins. At first, it was tight and a little unyielding, but not “shut down.” But after less than an hour, it was much more expressive with aromas of pear, citrus oil, and a element of brioche/bread, and quite a bit of vanilla coming through later, as well. And with food, I really liked this. It has a tactile/phenolic texture on the palate that I suspect will resolve with maturation in the bottle. Not as young and bracing as I expected. With the right treatment, open and approachable.
