Along came this beautiful wine off the list of Parcelles in Paris and one could not say no. In general white wines are an arbitrage in the city of lights. A beautiful wine as expected, maybe some decanting is not a bad idea but we didn’t decant, and has all the hallmarks of beautiful top end Chablis. Limes, salinity, flinty side and full on mineral . But one but cannot admire the elegance here which we will take away as our little souvenir for this wine experience. An easy 96 and with a lot of life ahead of it , if of course comes from a good wine cellar.

Vincent Dauvissat Chablis Les Clos 2015 Trenger mye luft. Super-steinete nese med mengder vakker frukt og florale innslag. Frukten mer gul enn hvit, men ren som få. I munnen eksploderer det fullstendig. Full gass - svært intens. Hinsides konsentrasjon med en pen friskhet som takler det bra, i tillegg sterkt hjulpet av mineraliteten. Sunne flasker vil sikkert leve i 30 år til. Holder trøkket hele veien. Lang som et vondt år. Intens presis finish med voldsom mineralitet. 96p

Off restaurant list. Very young still but reasonably extressive, lemon, lime, sea shell. Precise palate but not thin. Good potenital here. Open this after 2027. 94-96

Park Avenue Fine Wines - Portland: Legacy Pour flight: Light gold color. Complex and beguiling aromas of green pear and lime zest, melted stone, fresh white and rose florals, gingerbread and nutmeg spices, along with hints of earth-forest. Firm on the attack, moving to roundness and elegance as it goes. Expressive and seamless in its flavors, zesty fruit with layers of savory mineral and subtle spice depth. Refined and lithe, yet very dense and serious, with bright and vibrant high tones. Loads of complexity on the finish.

Great acidity, plenty of lime zest, a lot of saline. Interesting vegetal notes of Fennel. Only nit is I wanted to taste more terroir/stoniness.
