Three 96 Rav Grand Crus mano a mano. All of these bottles looked solid with yellow centers and clear rims.
This wine's nose developed from medium to high- intensity with air showing honeysuckle, citrus, green apple, and marzipan notes.
In the mouth, this was the most powerful of the 3 with great richness, balance, and length. While the fruit was sweet and ripe it was balanced but a "wall" of acidity.
Assuming the bottle is not poxed, this wine should continue to develop for 5-10 years. It was outstanding now but will likely pick up a point or two with the additional time.

Sunday Lunch with Raveneau Chablis and Chave Hermitage (Piccino Restaurant, San Francisco): Yellow and it even retains a glint of green! Scents of citrus, secondary perfume, and the only wine with a whiff of truffled maturity. Medium weight, much more grip and less flashy feel than the 2005. Flavors of bitter citrus, broth, and herbs. I'd say this had the most Chablisien mix of all of the wines today with some of the oyster and iodine as well. Nothing sweet or excessive about it. A very great old style Chablis, and it is not fully mature either. Wow, what a privilege to taste this in all of its glory.

From magnum. Rich and complex. Arguably even better after an hour of air time.

Perfect bottle. Elegant, smooth, but with good depth. Lovely saline and mineral notes.
