A fair Chablis, the new normal for Chablis seems to be over powered and resinous and this one risks being a touch forceful but has a nice juicy finish. Not bad. A bit dry on the end. EDIT.. Much better after oxidation. The bitterness has gone.

Wine evolved in the glass over time and with food. Started with orchard fruit-green apple evolving to epar with hint of lime zest and some wet chalk. Toasty notes developed as the wine evolved in the glass. Had with peach burrata salad and pairing was wonderful.

This wine evolved as we drank it. First notes of orchard fruit balanced with minerality but then developed slighlty more toasty notes. Lovely wine.
