Medium gold. Decently fresh for its age, still some grassy sauvignon blanc, sharp gooseberry. But overlaid now by beeswax, honey, almond and lots else. An almost oily texture. Long. Well into maturity now but still very enjoyable. A very good bottle, appropriate ageing/oxidation only in this one.

1994 Domaine de Chevalier from Pessac-Leognan is the oldest still white wine I tried so far so def a new experience for me. Medium amber color, still got iconic gooseberry and some bell pepper notes after 30 years. But the main notes now were dominated by beewax, hazelnut, walnut, roasted almond. The texture is almost oily (full body), very long finish with delicate oxidative notes balanced well with the medium plus soft acid. I dont think it can be hold much longer though.

Top-Bordeaux 1995 (Restaurant Central Park, Voorburg): WIth my previous experiences in my mind, this bottle was surprisingly enjoyable. Evolved, mature and clear oxidation aromas. Absolutely. Yet well balanced, complex and generous.

Clear deep gold; clean medium plus nose of wax, honey, cheese, yellow beans and macadamia nuts; dry; high acidity; medium alcohol; full body; pronounced flavour intensity; palate is tarter with addition of caramel and walnuts; long finish; absolutely divine - drinking perfectly with beguiling oxidative notes; wow!

My first old white Bordeaux. I will look for them at auction because these are awesome when good. I think I was lucky though. This bottle was perfect after 45-60 min opened (no decanting).
The wine has perfect balance, it had such a soft mouthfeel while still having the freshness, the acidity you need. I would not wait any longer, because the window it is in now is not endless. I have another bottle which I will open at Christmas. Thank you to the person who kept this perfectly in his cellar before putting it up for auction!
