Popped and poured; probably should have been given an hour or two in an decanter. Earthy nose, powerful mouth with structure, some earthiness. Still needs time to maturity. Cellared since original release.

Four years later, I pop another one. Clear, glossy, medium ruby in color. Clean and much more intense in the nose that I remember. The 30 minute wait definitely worth it. Notes of raspberry, cranberry, red apple along with cedar, mushrooms, blood and rusty nails. There's some depth to this wine. Nose is definitely developing. On the palate it is dry. Acid, tannin, alcohol are all medium and balanced. It is medium bodied with a silky texture. Very intense and lithe at the same time. The notes of raspberry, cedar, iron and blood emerge once again. The finish is long. Excellent bottle. It has developed beautifully and still has room to develop a little further.

This totally outperformed tonight. Had it at Charlie Bird and it was humming. Rich ad deep flavors of cherries, bright red fruit, red apple skin. Complex and nuanced. Medium body and length but bright and powerful flavors. Hard to see how this could have been better.

Maido - Lima, Peru This was probably the best meal of my life. And Chevillon delivered. Garnet color, no bricking but it shows its age. Dark fruits, ferrous, sanguine, sous-bois. On the palate, the tannins are a bit dusty but it rounds up about 30 minutes after opening. Drinking lovely. There's no better pairing with Uni or Soy than red Burgundy for me. Amazing experience.

Drinking beautifully, fully mature, solidly orange on the rim. A little reticent on the nose but after an hour or so of decanting the palate opens to a lovely array of black cherry, minerals and a touch of forest floor. Still holding onto a fairly strong structure, with tannins which will fading retain their robustness.
