This is my first time tasting a Paolo Scavino Barolo. I let my Barolo sit in a decanter for three hours, and then I poured. The color is medium Ruby and the nose, mildly fragrant. On day one the wine did not show much. On day two the wine had mellowed a bit, but developed a strong Eucalyptus aroma. I have never experienced Eucalyptus in a Piedmont wine, so this was unusual to me. On day three the wine had continued to mellow, but it did not lose the aroma. I think this wine will continue to age nicely, and I plan to add another bottle to my cellar.

Medium ruby red in color. Full, forward & attractive nose of ripe fruit aromas of cherries, strawberries & cranberries with floral overtones of roses & orange peel, spices, earthy/dusty, minerals, herbs, leather & a hint of vanilla/oak. Medium bodied with a good concentration of well balanced & smooth textured, ripe fruit flavors of red cherries, strawberries & tart cranberries with herbs, minerals, spices & a hint of vanilla/oak. Lingering finish. Drinks quite well with decanting & extended airing but should develop further with additional aging.

A bit early to drink, but we popped one open for the 2021 Holiday season. Almost sweet red cherry, blackberry, and aromas of pine and tobacco. Needs a lot of time to open up - like about 3+ hours - so if you jump the gun like we did, definitely give this one time to begin to shine. Otherwise, if you're more patient this feels like a 2026+ opening date.
