Bright lime gold. Disgorged September 2000, vinous and yeasty nose, full-bodied and lightly oxidized, clearly tastes of black grapes, like sparkling red Burgundy except with white fruit. Deep and long mouth-watering finish of underripe peach and red apple, appropriately modestly effervescent. Really delicious.

Bubbles had receded, very little "pop" but a fine mousse that continued into the glass. Now a nice wine, hardly a champagne. Low acidity, strong mineral and slight oxidation, went very well with amuse bouches. Drink up - it won't get better.
