Monday hangout at Domaine (Chicago, IL): Served double blind. Clearly red Burgundy, but I thought it was maybe a decade or so older (2001?). High acidity and some delicate red fruit, with a grainy earthiness to its tannins. I didn't really pick up the spice here, so missed the Dujac call. Whoops.

Dujac through and through. Excellent bouquet with some strawberries, red berries fruit basket, roses, spicy mint. On the palate, it's mineral and has that orange bitter finish which may come across as a touch thin and edgy. Nose > palate for me today, and mightily enjoyable for a bottle of this level.

Burgundy village theme: My contribution. Most guessed ‘07/08 Chambolle. Pretty floral nose, but a little thin and dilute on the palate. Some delicate red fruit emerged with air but not sure if this will put on weight with more bottle age.

Advanced colour shows maturity; evocative nose, sous bois & briary, soft red fruits; palate has a velvety texture, with a dry earthy edge, easy going acidity, mid-weight; (later) tetchy finish (ameliorated by pigeon). Best drunk soon.

Coravined. Similar to previous notes, this is drinking well at the moment. Floral and expressive nose, wide open now. Continues to add weight and complexity over the years, no different from a lot of 1er Crus out there. Inner mouth perfumed and lingering spices on the finish, very very nice. Showing even better than previous experiences. Over-achiever for an average vintage.

Hard to believe this is village burgundy. Deep and rather dark fruit. Elegant and velvety on the palate. Broad and with a nice, long aftertaste. Really beautiful. Drinking nicely now and over the next 3-5 years.

Classic Dujac nose of stems, spice and red and blue fruit. Still a bit young but offers a good amount of pleasure. Good structure and acidity makes this a very good food wine, with time I believe this will soften and give way to a more balanced wine. Punches above it class, 1er cru material here.

PnP. ABV 13%. Explosive floral nose with some dark soil too, very nice. Bright acidity, fine tannins and approachable now. Pretty good concentration and length for a village, probably have put on weight over the years. Good balance with no trace of alcohol. Finished with old barrel spices, that’s nice. Wide open and enjoyable now. Love this bottling from Dujac, pretty much punches above its weight every vintage.

Fairly ripe, The black fruits become more prominent as the wine evolves in the glass. Bourgogne and Village Dinner (Tonny Restaurant, Geylang Lor 3, Singapore): Better and surprisingly more developed than the last bottle I had a few months back - this was a lovely little Morey village. It had beautiful young Burg aromas of sweet red cherries and blue berries on the nose, just edged with a bit of candy maybe, but also with nice touches of earth, bramble and Morey spice. It would have been an amazing bouquet if not for the slight distraction of new-oak induced sweet vanilla tones. Still very nice though. The palate also had a touch of that new oak on it, but that aside it showed beautiful balance and polish in its sweet notes of blueberries and dark cherries, with shades of earth and spice lingering into long, beautiful finish. Still a bit primary, this needs time - maybe another 4-5 years at least - before it really hits its stride; but this was a very classy, very Dujac wine - all supremely integrated and velvety and delicious even now.

Takes 10-15 minutes to open up and when it does you get very pretty red cherry and stem notes. Light-to-medium bodied palate with supple red cherry, stem, florals and spice. Drinking nicely on the earlier side with class and elegance throughout.

Rather muted on opening but with a bit of coaxing, this showed such elegant fruit in the nose with young morello cherries, rhubarb and young strawberry and some dusty notes. Coravined. Floral and elegant on the nose. Notes of rose, underbrush, soils, and oaks. Not as dense and smooth as '12 vintage, seems to have higher acidity too, slight heat at finish. Enjoyable but probably prefer the '12 version. Finished the bottle one month later, nice but certainly does not have the density and concentration of '12 vintage, slightly short on the finish but good balance and spices though. If there is value in Dujac's line-up, this bottling must be it, less than 1/2 the price of most Dujac 1er Crus and provided 90% of the pleasure. In good vintages like '10 and '12, I am not entirely convinced that Aux Combottes is much better bottling than this, more likely pro critics just like to have some score seperations between Village and Premier Crus. On a side note, Coravin Model 2 has been almost flawless so far, no sign of oxidation despite time lag in between consumptions. Only blemish so far was on one of the old bottle, there was a slight seepage on the cork but no oxidation.

The nose kept changing during the evening, with blackberries, a medicinal touch which slowly dissipated, a bit of oak and beef broth. It slowly found its balance and center and had meat, dark fruit and spices - cloves, almost. On the palate it has substance but it is also lively. Savory and juicy, with a fine-grained tannin which isn't very aggressive. Saline and spicy finish. Very intriguing. Not a charmeur right now, but it calls for and keeps your attention. Great potential, I think...

As usual, extremely suave and polished for a village wine. Juicier and not quite as dense or fleshy as the 2012, but that's to be expected. Teases with exotic spice aromas for a few minutes before switching gears to more customary cherry fruit character - not even the usual brown spices, much further afield than mere oak seasoning - brings to mind things like ginger and cardamom. No overt wood or stems here.

Sushi at Shinji. This was a massive village wine, in terms of quality and power. First from a case. Dark red, with an impressive bouquet of violets, rose petals, crushed blueberries, lavender and spice. I would use "slightly modern" as a description, but certainly very balanced and not extracted or overly oaky and sweet. The wine had a terrific structure, velvety tannins, and a mouthful of rich, red and blue fruit, with blueberries and strawberries, chocolate and pomegranate. With extended time, this took on a more savoury profile, with broiled meat, beef broth and earth, but still maintaining a good core of fruit and acid. What a magnificent village wine, a worthy competitor to the bottles of 2012 I drank earlier this year. If ever, there was a village wine you had to try to understand and picture the maker's 1er and Grand Cru standards and character, it would be an MSD from Dujac. Absolutely brilliant!

Mittellanger leicht bitterer, rotfruchtiger Abgang. Schwierige Phase?Denke schon.

Spice and red fruits on the nose. Good balance, tannins present but not obtrusive, good zip. Medium finish. Good weight for a village wine, with some emerging elegance. Should be excellent with some age.

Domaine Dujac Cellar Visit and Tasting (Morey St.-Denis): Tasting at the domaine. A clear step up from the MSD F&P, this is perfumed with red cherry and berry and more weight and spice. Very good for its level.

Tasted at Domaine. Good village wine. Really the only affordable Dujac these days. Better than most village wines though. Nice fruit/structure.

BORGOGNA 2015; 2/22/2015-3/22/2015: Tasting at the domaine. Rispetto al Morey Fils & Père è più caldo, più rotondo, più fruttato, più tannico e più lungo.
Ovviamente anche molto più indietro!!

Red fruit, quite fine nose. Bright acidity, pure fruit, a bit lean. 87-89

Quite spicy, quite Morey; sappy and supple. Nice fruit, a bit lightweight. Fine, moderate length. 89-91+
