Despite the fact that Sec Champagne is probably quite out of fashion nowadays but this is a fine Sec where the minerals and sweetness integrates very well thus the wine has not been dominated by the sweetness. This is done in a less oxidative style which I suspect is related to its demi-sec status. For sure my least favorite Selosse in their lineup in terms of style but I was never a fan of Sec so this may or may not be a true and fair view on the wine. Drink: now+ Rating: 90

90 min decant before first sips. Granny Smith green apples — bruised (Maddy gets baked apple pie) — permeate the initial nose. On a deeper whiff, the layering begins its reveal. Intertwined wet rocks, butterscotch, salinity, and lemon custard play together, nicely. On the palate, textural feel highlighted by a mouth coating presence. Selosse does what few others in Champagne can pull off (NYE)

Quite an amazing pairing with Korean Fried Chicken -- normally, champagne tends to feel a bit dry in the finish, but the dosage certainly solves that problem. Makes the wine feel more fresh.
Otherwise, I think this is a great dessert wine and should be thought of as such. On its own, the sweetness does get a bit overbearing especially if you have more than a few sips. It's quite vinous with great fruit clarity and expression, and I really enjoyed how delicate the bubbles were without being super fine, perhaps due to the viscosity of the champagne.
It might be too way too much to open the night with, but it is a great wine to close the night with. Thanks for sharing XY!

Disgorged 2009. Very mature and quite different from the dry Champagnes I usually drink. It was full of life and lots of different fruit tastes as well as other aromas. But the unusual part was the high dosage. A weak but persistent mousse persisted and the color was "only" straw yellow. It had a long aftertaste and was very complex. A treat to try but not my favourite style.

2017 Chassange Montrachet Rouge Blind: Pronounced nose with notes of yeasty, brioche, sweet biscuit, distinct white chocolate, tropical fruits. Sweet but well balanced by the high acidity. 24g of dosage which is considered as Sec than Demi Sec which require 32g min. As compared, Cristal is only 8g, so those who like Brut nature, or extra brut will not like this.

Beautiful complex nose displaying sweet and slightly dry yellow fruit, dry apricot, peach, orange peel, marzipan, brioche, light caramel and earth. Very good concentration, nicely layered sweet yellow fruit, rich and deeply toned, medium acidity, earthy mineral, and a long sweet yellow fruit driven finish with strong yeast at the end. This is an interesting and unique champagne.

really enjoyed it. The nose was enticing, with lovely notes of honey, brioche, and ripe peach coming through. In the glass, it showed a beautiful golden color with fine bubbles. The palate was rich and full-bodied, with flavors of peach, apricot, and baked apple, accompanied by a toasty brioche character and a touch of honeyed sweetness. The acidity was well-balanced, and the finish was long and satisfying.

Sunday hangout (Chicago, IL): Disgorged April 17, 2012. I've been of the mindset that I just like my Selosse fresher. This was a really weird wine. Definitely sweeter than the fresher bottles of this that I had maybe two years ago (with essentially the same crowd), but with more of a vinous, sappy, and almost slightly cloying quality (though there was certainly plenty of acidity here). No one really wanted a second pour of this, though apparently it went quite well with some Nashville hot. A final sip from the bottle maybe five hours later tasted more like Martinelli's than champagne. Go figure.
Disgorge Nov-13 and kept in my cellar since 2016. Fine but weak bubbles. The balance of acidity and tiny amount of residual sugar is wonderful. Still 1-2 years at least from peak.

2010 Disgorgement – In my humble opinion, Exquise is the least representative Champagne of Selosse house style. Even with 11 years of ageing post disgorgement, this Exquise doesn’t have the complexity compared to other cuvees. Clean array of ripe lemons and pear drops. If Served blind, I most probably would struggle to find the typical Selosse trait. (88/100)

2017 deg Sweetness smoothes out the nuance so much it taste like a generic selosse. Not a big fan. But did have very tough competition at tonight's selosse tasting of LD and vintage 1998 plus many others.

Aperitifs at Domaine Jacques Selosse (Avize): Mostly made with fruit from Oger that is substantial enough to handle 24g of dosage; created at the request of Bernard Loiseau and Pierre Gagnaire for a sweeter more gourmand style. The sugar is so well integrated that, if this hadn't been served after a number of Champagnes with little or no dosage, it wouldn't have been obvious. Floral, fun and well-made.

SLDS October 2019: Disgorged 07 July 2005. Lemon, quince, marzipan and biscuit notes. Still has good freshness, sweet at the edges with some earthy complexity. Came back to this at the end of the night and it was still really tasty.

Comprehensive Selosse (Chicago, IL): Disgorged April 2017. Fantastic stuff as always. You think it's going to be sweet, but it really isn't. The sugar seems to give this a really creamy texture instead. The Selosse oxidation isn't here; this is more an exercise in white fruit and cream and chalk. Impeccably balanced, for me, this wine is all about the texture, and it's absolutely lovely. Very unique, not just in the Selosse stable, but probably across champagne.

Pausing for the Cause 2018 (Chicago, IL): I love this wine. I think the super generous dosage here rounds out the Selosse style and gives this flesh. It's definitely got the Selosse intensity and the oxidative elements, but the sweetness make this less bracing to drink. Honestly, this goes down really easily and I think represents a bit of an outlier as far as Selosse goes (don't get me wrong -- I still love all the other wines in the lineup).

Light gold in colour. Nose is big and fresh and immediately indicative of Selosse with a pleasantly oxidative character of ripe orchard fruit, maturing yellow apple, cinnamon spices, caramel apple. A fair bit of creaminess that I don’t usually find in Selosse. Floral too. Great effervescence and energy. Intricate and layered. The palate is in a great state of development right now with more ripe orchard and yellow fruit. The Sec sweetness has mostly resolved and is only detectable in some juicy apricot flavours. Creamy texture too, rich with depth. Orange creamsicle. Other than a quick taste at the domaine I’ve never had one of these before and I’m very impressed. Although not stated on the back, based on the label, the neck wrap, the foil, and a bit of detective work by The Rare Wine Co., this is believed to be a 1999 - 2001 disgorgement. Sec. Not just a novelty, this is delicious and complex. Curious as to whether the newer iterations are as good.

Disgorged 9th of March 2016. Complex notes of tarte tatin, green aple, peach, aniseed and honey. It is so close to being too oxidative, too sweet, too weird and too much but straddles all of those lines perfectly. Exquisite Champagne that engages the senses.

Comprehensive Jacques Selosse dinner (Source by Wolfgang Puck, Washington D.C.): It really reminds me a biscotti dipped in vin santo. Medium expressive nose displaying oxidized apple peel, orange peel, mead and yeast a la hefeweizen. Medium concentration, good acidity and a medium finish. Once again, pretty unique.

Dégorgée le 30 juillet 2013, cette bouteille était totalement à point. Couleur paille, bulles très fines, quelques notes oxydatives, belle vinosité, a bien accompagné les différentes tapas. Random Tuesday night (Tipsy Tuesday?) (Riverpark): This wine paired perfectly with my entire meal (a burrata and then a crab salad) unlike some of the heavier reds we had later (didn't do the best job of ordering). It continues to impress me with just how light on its feet it is. The bubbles literally melt in your mouth. Get this rock candy like flavor, but one which has been dumbed down a bit so the sweet isn't overpowering. Nice acidity (but not as pronounced as the last bottle I had which made me wonder on aging). Still - got an extra this time to sit down for some years. Best demi-sec I've ever had.

Fall auctions return - Acker Sept 2016 (Marea in NYC): This wine really surprised me. Perhaps one of the biggest surprises of that day. I expected to like it, but something about the softness of the bubbles, the just hint of sweet (mostly rock candy), touches of spice that keep the sweet in its place... well - it was perfect for a morning treat. One of my wines of the day.

A 100% Chardonnay Champagne with 24 g/l of dosage. Annual production some 1000 bottles, representing about 2% of Selosse's output. Disgorged October 29th, 2015.
Pale Mirabelle plum color. Very complex, nuanced and a bit sweet nose with fragrant aromas of bread, spicy fruit cake, some toffee and caramel notes, a little strawberry, a hint of lemon curd and a touch of smoky flint minerality. Full-bodied, yet structured palate with and sweet-and-sour character resulting from a combination of moderately high dosage, high acidity and pronounced minerality. Layered flavors of bitter, chalky minerality and steel, ripe citrus and citrus marmalade, some apple jam, a little caramel and toffee and a hint of spicy woldhoney. More pronounced and powerful notes of caramel, apple jam and toffee in the aftertaste with flavors of lemon marmalade, bitter stony minerality and a hint of chalk. The very persistent finish seems even a bit more powerful than the midpalate, as if the complex nuances "open up" after the wine is swallowed, giving the wine a sort of back-beat hit.
Easily the best non-Brut Champagne I've had to this date with incredible depth, complexity and finesse for a bubbly with as high dosage as this. For those who think that high residual sugar always masks the nuances and complexity of a wine, Cuvée Exquise proves exactly the opposite. Not only this is a spectacular wine for those who can't enjoy the crisp appeal of the Brut and Zéro-dosage Champagnes, Cuvée Exquise is also a truly enjoyable wine even for those who otherwise shun wines with high dosage. At 110€, this wine is expensive for sure, but as the wine really is without peers, the price is justified.

Richebourg Dinner (Yan, National Gallery, Singapore): Not my favourite in Selosse's line-up, but this was a very good and definitely very interesting demi-sec. This particular bottle was disgorged some time back, in July 2008, so there was a nice bit of bottle age to it (which really helped). The nose was lovely, with sweet peaches and cream, red apples, a blush of florals, and then a more savoury nut and earth character. Plenty going on. This was just a precursor to the lively complexity on the palate though, where bright layers of peach and mango and other shades of stone fruit were wrapped in a package of creamy mousse, all this leading into a more tensile finish, where a real spine of mineral and spice and some lemony acidity took to the fore alongside some of Selosse's typically oxidative white meat shades. Super-complex, yet the gentle sweetness of the wine added a certain deliciousness that kept it from being too much of a intellectual exercise. A good end to the night, this was another bottle that was showing well at its age.

Some Wines from a Swing Through France-Paris, Chablis, and Champagne; 4/1/2016-4/9/2016: Disgorged July, 2015. Very fragrant peach and citrus. Medium weight, fresh, and not as sweet as the ample dosage would suggest due to wonderful finishing minerality. Not quite as electric or impressive as some of the other Selosse wines we've had over the past few days, but it made a very fine aperitif wine.

HDH Auction (Restaurant Tru, Chicago, IL): Adrian's bottle. Selosse? Extra dosage? YES PLEASE! Like a light egg custard - finally someone said meringue and that nailed it. Sweet, creamy, minerals, bronze-wood, spicy, some vanilla and light citrus notes outlining the nose. Palate is stupid: opens with sweet creamy custard - light delicious and airy, and the middle to end of the palate, this aspect combines with some acid structure/citrus notes and chalky minerality to create a transcendent alloy. Really toe curling - that's how good it was. This combination continues into the finish: custard, chalk, lemon, meringue - delicious. Nose - 5/6, Palate - 6/6, Finish - 5.5/6, Je ne Sais Quoi - 1.5-2/2 = 18-18.5/20.

HDH auction tasting at Tru (Chicago, IL): Disgorged November 24, 2008. I thought this was the top of the three NV Selosses that we drank today. This has the same attack as the Initiale, with a cornucopia of fruit, but it's modified by the presence of the significant dosage, which puts in a very attractive element of sweetness. The wall of mineral and chalk then catches up to the fruit and integrates into what is pretty much a complete wine. Despite the concentration, this is not a heavy wine. Finishes very long.

Writing this on day 2. Which is better for the wine. Didn't like it at all yesterday, but today it "goes down". I am beginning to understand it! Seemed too sweet initially, but given time it can come around. Dark yellow in color. Very fat and a strong attack. Citrus, pear, peach, nuts, cherry and rye bread. The Champagnes of Jacques Selosse (Roberson Wine, South Ken, London): Disgorged 20Jan2012. 100% Chardonnay, 12% Alc, ~24 g/l dosage. Light, pale straw colour. Light nose, however the palate it is full on. The dosage here makes an impact too and the wine is riper, lush, fat champagne with a sweetish/ripe fruit core. Spicy notes. Round champagne but also less tidy. Lacks the definition and complexity of the lower dosage Selosse wines. Maybe time can help. 91-92 at the moment for us

My first time trying the Exquise and it was interesting to compare this demi-sec to the Initiale which I have had on numerous occasions. The addition of dosage (25gms?) was the main difference with the Initiale. Nose was yellow fruits like lemon, brown sugar, nuts, stone and minerals, with a caramelly finish. Palate had a nice complexity which was actually highlighted by the dosage and there were notes of apple, citrus, flowers and a soft creamy finish. Not quite as exciting as some of Selosse's other offerings but it was an interesting part of the lineup Bottle was disgorged Oct 2010.

2012 - Meeting with new friends (Sabatini cucina, Taipei): Alcohol :: 12% Degorged at 08-Sept-2010. Opened for 30mins and drank for 3hrs. Light golden. This bottle was more expressive than the last. Complex aromas continuously emerging in the glass: brown sugar, sugar cane, almond, hazelnut and sweet herbs intermixed with intense note of honey lemon, melon and peaches. There is this adorable lily and yellow flowers fragrance too. Medium bodied. Outstanding vibrancy over the sweet honey coated mouth feel. Seductive and elegant with the soft sweetness and yellow fruits as well as lovely inner perfume of sweet yellow floral scents and lily. Excellent persistent, long finish. Alcohol :: 12% Degorged at 02-02-2010. Very fine persistent bubble. In the beginning it was holding back by the austerity and tightly coiled, especially toward the finish. 3hrs in the bottle, at last it opening up more and reveals complex bouquet of sweet pear, melon and lemon intermixed with soft but huge mineral, iron, yellow flower and cold herbs. The wine continues to develop in the Burgundy glass and the sweet yellow floral scents become even higher tone that is truly seductive. Silky smooth entry follow by subtle sweetness with great level of intensity, delineation and deeply layer. The sweetness and acid has perfectly integrated for the impeccable balance and harmony. A SEC, sweet and lush but still retains the freshness and focus thanks to the complex mineral and acid backbone. The long lingering finish is fully of energy and purity. This is a truly seductive Champagne with finesse and elegance.

The most amazing aspect of this surprising Selosse wine is the quantity of bubbles when poured... akin to a beer more than a fizzy wine! While we were expecting roundness and sweetness from this cuvee (never having tasted this wine), instead we received wonderful freshness, precision and sharpness. Lot of acidity but no oxydation. At the other end of the 1998 Sir Winston Churchill we started the dinner with. Does "Sec" for Selosse mean non-oxydized? A wonderful wine.

It was a little too cold when we first poured it into the white wine glass, and needed time to warm up and open. Lots of bubbles and a little heady, yeasty, a little metallic with light caramel notes - it's easy to smell the sweetness on the nose and see that this was clearly not a brut Champagne... Sweet on the palate as expected, a little thick and viscous in the mouth, with the finish a little short and nutty. With the second pour a little bit of toast emerged in the nose. Still later, the nose became pretty explosive and open - what I would expect from a Selosse. Finish tasted of marmalade, and it was pretty awesome.

Simple Series I: Andrew's Birthday (Asia Grand, Odeon Towers): A very good demi-sec. More dry than I expected, so much so that it went pretty well with our savoury course. Enchanting nose - manuka honeycomb, beeswax, white stone fruits, some flowery muskiness and lots of chalky mineral. Again, lots of honeycomb with little brambly bits on the palate. Great balance, gentle mousse, bubbles were a little big, but still gave the wine a nice mouthfeel. Lots of flavours here in layers of melting sweetness, with fuzzy peahces, sweet green apples and other pit fruits moving into a mid-length finish. There was a stern backbone though, with quite a bit dryness streaked in. A champagne full of personality - almost like a Riesling with bubbles. Very nice indeed.

Golden yellow. Good mousse with large bubbles. Delicious nose of various exotic fruit like pineapple and peach, sherry, rye bread and buttertoasted nuts. More of the same in mouth together with a pronounced fatness and a good, but not overdone, sweetness. At first it seems a bit flabby, but with a bit of air it begins to show a spine of a great spätlese like acid. All the Selosse characteristics are there wrapped in a off-dry package.

Very doughy aromas with quince, apple and honey as well. The palate is not as sweet as I expected, to me it was much more subtle and along the lines of an off-dry style with great balancing acidity. Interesting and very good.

Selosse Champagne (Blue Hill): Styled as an after-dinner Champagne, but this is only very barely sweet, in fact I would not be surprised if it were drier than many big-house N.V. brands. Sipping it with our raspberry dessert made it taste bone-dry in comparison. I would have to think hard to come up with an ideal function for a wine like this.

After dinner drink - the nose was really reminiscent of dough, the palate was slightly disappointing. The sweetness is not apparent at all. The good thing about this wine is that it kept evolving and changing, especially the nose which was always a moving target. Interesting, but overall not a big fan.

Intertwined wet rocks, butterscotch, salinity, and lemon custard play together, nicely. On the palate, textural feel highlighted by a mouth coating presence. Quite an amazing pairing with Korean Fried Chicken -- normally, champagne tends to feel a bit dry in the finish, but the dosage certainly solves that problem. Makes the wine feel more fresh.
Otherwise, I think this is a great dessert wine and should be thought of as such. On its own, the sweetness does get a bit overbearing especially if you have more than a few sips. It's quite vinous with great fruit clarity and expression, and I really enjoyed how delicate the bubbles were without being super fine, perhaps due to the viscosity of the champagne.
It might be too way too much to open the night with, but it is a great wine to close the night with. Thanks for sharing XY!

Disgorged 2009. Very mature and quite different from the dry Champagnes I usually drink. It was full of life and lots of different fruit tastes as well as other aromas. But the unusual part was the high dosage. A weak but persistent mousse persisted and the color was "only" straw yellow. It had a long aftertaste and was very complex. A treat to try but not my favourite style.

2017 Chassange Montrachet Rouge Blind: Pronounced nose with notes of yeasty, brioche, sweet biscuit, distinct white chocolate, tropical fruits. Sweet but well balanced by the high acidity. 24g of dosage which is considered as Sec than Demi Sec which require 32g min. As compared, Cristal is only 8g, so those who like Brut nature, or extra brut will not like this.

dégorgée le 15 juin 2009 - lovely nose of marmalade. This was so soft, so elegant and beautiful. Some honey and brioche, toasty but elegant, not in-your-face kind. Later a little salted lemon, a hint of Chinese salted plums along with telltale minerals.

Beautiful complex nose displaying sweet and slightly dry yellow fruit, dry apricot, peach, orange peel, marzipan, brioche, light caramel and earth. Very good concentration, nicely layered sweet yellow fruit, rich and deeply toned, medium acidity, earthy mineral, and a long sweet yellow fruit driven finish with strong yeast at the end. This is an interesting and unique champagne.

really enjoyed it. The nose was enticing, with lovely notes of honey, brioche, and ripe peach coming through. In the glass, it showed a beautiful golden color with fine bubbles. The palate was rich and full-bodied, with flavors of peach, apricot, and baked apple, accompanied by a toasty brioche character and a touch of honeyed sweetness. The acidity was well-balanced, and the finish was long and satisfying.

Definitely sweeter than the fresher bottles of this that I had maybe two years ago (with essentially the same crowd), but with more of a vinous, sappy, and almost slightly cloying quality (though there was certainly plenty of acidity here). No one really wanted a second pour of this, though apparently it went quite well with some Nashville hot. A final sip from the bottle maybe five hours later tasted more like Martinelli's than champagne. Go figure.

Disgorge Nov-13 and kept in my cellar since 2016. Fine but weak bubbles. The balance of acidity and tiny amount of residual sugar is wonderful. Still 1-2 years at least from peak.

Tried blind tasting between 1997 Salon, NV Selosse Exquise and 2005 Dom Perignon.
1997 Salon exhibit fresh, crisp, lemon, very acidity along 3, slight yeasty, pale lemon. After 20-30min in glass, more oaky notes appear.
NV Selosse Exquise had medium lemon, toast, yeasty, sweet palate.
2005 Dom Perignon had the best nose, most yeasty note, toasty, palate the best
WOTN went to 2005 Perignon.

Aperitifs at Domaine Jacques Selosse (Avize): Mostly made with fruit from Oger that is substantial enough to handle 24g of dosage; created at the request of Bernard Loiseau and Pierre Gagnaire for a sweeter more gourmand style. The sugar is so well integrated that, if this hadn't been served after a number of Champagnes with little or no dosage, it wouldn't have been obvious. Floral, fun and well-made.

A distinctive difference as compared to the 2008 Dom which is fresh, high acidity, bread and Henri Giraud MV07 which exhibit cedar, toast, flora.
Personal preference ranked Selosse first, Giraud MV07 then DOM2008.

The sugar seems to give this a really creamy texture instead. The Selosse oxidation isn't here; this is more an exercise in white fruit and cream and chalk. Impeccably balanced, for me, this wine is all about the texture, and it's absolutely lovely. Very unique, not just in the Selosse stable, but probably across champagne.

Light gold in colour. Nose is big and fresh and immediately indicative of Selosse with a pleasantly oxidative character of ripe orchard fruit, maturing yellow apple, cinnamon spices, caramel apple. A fair bit of creaminess that I don’t usually find in Selosse. Floral too. Great effervescence and energy. Intricate and layered. The palate is in a great state of development right now with more ripe orchard and yellow fruit. The Sec sweetness has mostly resolved and is only detectable in some juicy apricot flavours. Creamy texture too, rich with depth. Orange creamsicle. Other than a quick taste at the domaine I’ve never had one of these before and I’m very impressed. Although not stated on the back, based on the label, the neck wrap, the foil, and a bit of detective work by The Rare Wine Co., this is believed to be a 1999 - 2001 disgorgement. Sec. Not just a novelty, this is delicious and complex. Curious as to whether the newer iterations are as good.

Random Tuesday night (Tipsy Tuesday?) (Riverpark): This wine paired perfectly with my entire meal (a burrata and then a crab salad) unlike some of the heavier reds we had later (didn't do the best job of ordering). It continues to impress me with just how light on its feet it is. The bubbles literally melt in your mouth. Get this rock candy like flavor, but one which has been dumbed down a bit so the sweet isn't overpowering. Nice acidity (but not as pronounced as the last bottle I had which made me wonder on aging). Still - got an extra this time to sit down for some years. Best demi-sec I've ever had.

Pale Mirabelle plum color. Very complex, nuanced and a bit sweet nose with fragrant aromas of bread, spicy fruit cake, some toffee and caramel notes, a little strawberry, a hint of lemon curd and a touch of smoky flint minerality. Full-bodied, yet structured palate with and sweet-and-sour character resulting from a combination of moderately high dosage, high acidity and pronounced minerality. Layered flavors of bitter, chalky minerality and steel, ripe citrus and citrus marmalade, some apple jam, a little caramel and toffee and a hint of spicy woldhoney. More pronounced and powerful notes of caramel, apple jam and toffee in the aftertaste with flavors of lemon marmalade, bitter stony minerality and a hint of chalk. The very persistent finish seems even a bit more powerful than the midpalate, as if the complex nuances "open up" after the wine is swallowed, giving the wine a sort of back-beat hit.
Easily the best non-Brut Champagne I've had to this date with incredible depth, complexity and finesse for a bubbly with as high dosage as this. For those who think that high residual sugar always masks the nuances and complexity of a wine, Cuvée Exquise proves exactly the opposite. Not only this is a spectacular wine for those who can't enjoy the crisp appeal of the Brut and Zéro-dosage Champagnes, Cuvée Exquise is also a truly enjoyable wine even for those who otherwise shun wines with high dosage. At 110€, this wine is expensive for sure, but as the wine really is without peers, the price is justified.

Richebourg Dinner (Yan, National Gallery, Singapore): Not my favourite in Selosse's line-up, but this was a very good and definitely very interesting demi-sec. This particular bottle was disgorged some time back, in July 2008, so there was a nice bit of bottle age to it (which really helped). The nose was lovely, with sweet peaches and cream, red apples, a blush of florals, and then a more savoury nut and earth character. Plenty going on. This was just a precursor to the lively complexity on the palate though, where bright layers of peach and mango and other shades of stone fruit were wrapped in a package of creamy mousse, all this leading into a more tensile finish, where a real spine of mineral and spice and some lemony acidity took to the fore alongside some of Selosse's typically oxidative white meat shades. Super-complex, yet the gentle sweetness of the wine added a certain deliciousness that kept it from being too much of a intellectual exercise. A good end to the night, this was another bottle that was showing well at its age.

HDH Auction (Restaurant Tru, Chicago, IL): Adrian's bottle. Selosse? Extra dosage? YES PLEASE! Like a light egg custard - finally someone said meringue and that nailed it. Sweet, creamy, minerals, bronze-wood, spicy, some vanilla and light citrus notes outlining the nose. Palate is stupid: opens with sweet creamy custard - light delicious and airy, and the middle to end of the palate, this aspect combines with some acid structure/citrus notes and chalky minerality to create a transcendent alloy. Really toe curling - that's how good it was. This combination continues into the finish: custard, chalk, lemon, meringue - delicious. Nose - 5/6, Palate - 6/6, Finish - 5.5/6, Je ne Sais Quoi - 1.5-2/2 = 18-18.5/20.

This has the same attack as the Initiale, with a cornucopia of fruit, but it's modified by the presence of the significant dosage, which puts in a very attractive element of sweetness. The wall of mineral and chalk then catches up to the fruit and integrates into what is pretty much a complete wine. Despite the concentration, this is not a heavy wine. Finishes very long.

My first time trying the Exquise and it was interesting to compare this demi-sec to the Initiale which I have had on numerous occasions. The addition of dosage (25gms?) was the main difference with the Initiale. Nose was yellow fruits like lemon, brown sugar, nuts, stone and minerals, with a caramelly finish. Palate had a nice complexity which was actually highlighted by the dosage and there were notes of apple, citrus, flowers and a soft creamy finish. Not quite as exciting as some of Selosse's other offerings but it was an interesting part of the lineup

Degorged at 08-Sept-2010. Opened for 30mins and drank for 3hrs. Light golden. This bottle was more expressive than the last. Complex aromas continuously emerging in the glass: brown sugar, sugar cane, almond, hazelnut and sweet herbs intermixed with intense note of honey lemon, melon and peaches. There is this adorable lily and yellow flowers fragrance too. Medium bodied. Outstanding vibrancy over the sweet honey coated mouth feel. Seductive and elegant with the soft sweetness and yellow fruits as well as lovely inner perfume of sweet yellow floral scents and lily. Excellent persistent, long finish. A wine with impeccable balance, freshness and class. 93-94

Degorged at 02-02-2010. Very fine persistent bubble. In the beginning it was holding back by the austerity and tightly coiled, especially toward the finish. 3hrs in the bottle, at last it opening up more and reveals complex bouquet of sweet pear, melon and lemon intermixed with soft but huge mineral, iron, yellow flower and cold herbs. The wine continues to develop in the Burgundy glass and the sweet yellow floral scents become even higher tone that is truly seductive. Silky smooth entry follow by subtle sweetness with great level of intensity, delineation and deeply layer. The sweetness and acid has perfectly integrated for the impeccable balance and harmony. A SEC, sweet and lush but still retains the freshness and focus thanks to the complex mineral and acid backbone. The long lingering finish is fully of energy and purity. This is a truly seductive Champagne with finesse and elegance.

The most amazing aspect of this surprising Selosse wine is the quantity of bubbles when poured... akin to a beer more than a fizzy wine! While we were expecting roundness and sweetness from this cuvee (never having tasted this wine), instead we received wonderful freshness, precision and sharpness. Lot of acidity but no oxydation. At the other end of the 1998 Sir Winston Churchill we started the dinner with. Does "Sec" for Selosse mean non-oxydized? A wonderful wine.

It was a little too cold when we first poured it into the white wine glass, and needed time to warm up and open. Lots of bubbles and a little heady, yeasty, a little metallic with light caramel notes - it's easy to smell the sweetness on the nose and see that this was clearly not a brut Champagne... Sweet on the palate as expected, a little thick and viscous in the mouth, with the finish a little short and nutty. With the second pour a little bit of toast emerged in the nose. Still later, the nose became pretty explosive and open - what I would expect from a Selosse. Finish tasted of marmalade, and it was pretty awesome.

Simple Series I: Andrew's Birthday (Asia Grand, Odeon Towers): A very good demi-sec. More dry than I expected, so much so that it went pretty well with our savoury course. Enchanting nose - manuka honeycomb, beeswax, white stone fruits, some flowery muskiness and lots of chalky mineral. Again, lots of honeycomb with little brambly bits on the palate. Great balance, gentle mousse, bubbles were a little big, but still gave the wine a nice mouthfeel. Lots of flavours here in layers of melting sweetness, with fuzzy peahces, sweet green apples and other pit fruits moving into a mid-length finish. There was a stern backbone though, with quite a bit dryness streaked in. A champagne full of personality - almost like a Riesling with bubbles. Very nice indeed.

Golden yellow. Good mousse with large bubbles. Delicious nose of various exotic fruit like pineapple and peach, sherry, rye bread and buttertoasted nuts. More of the same in mouth together with a pronounced fatness and a good, but not overdone, sweetness. At first it seems a bit flabby, but with a bit of air it begins to show a spine of a great spätlese like acid. All the Selosse characteristics are there wrapped in a off-dry package.

Very doughy aromas with quince, apple and honey as well. The palate is not as sweet as I expected, to me it was much more subtle and along the lines of an off-dry style with great balancing acidity. Interesting and very good.

Selosse Champagne (Blue Hill): Styled as an after-dinner Champagne, but this is only very barely sweet, in fact I would not be surprised if it were drier than many big-house N.V. brands. Sipping it with our raspberry dessert made it taste bone-dry in comparison. I would have to think hard to come up with an ideal function for a wine like this.

After dinner drink - the nose was really reminiscent of dough, the palate was slightly disappointing. The sweetness is not apparent at all. The good thing about this wine is that it kept evolving and changing, especially the nose which was always a moving target. Interesting, but overall not a big fan.
