Mature Chablis at its best. Cheese rind, blue cheese, straw, a touch of wool, slightly peppery, with lots of ripe lemon, pear and apples. Heavy minerals with granite, flint, smoke and chalk. Perhaps lacking a little bit of elegance, but still very, very good. Very good length as well.

First bottle opened was severely premox - undrinkable. Second bottle is starting to show some signs of oxidation and has lost the fruit; after 12h open, second bottle is fading fast and getting more oxidized and less drinkable (tasting flat). If you find a bottle in good conditions, drink it because it won't last once open. I won't score the wine, no point. - My 2 cents.

Quite the looker if a bit strident still. I’d like some more material to warrant those 95 point scores (what?) but the reticent nose does come out with some … aeration … and the intense seashore flavors of the mouth are all there. The length is just fine.

This bottle, while drinkable and giving some enjoyment, is clearly prematurely advanced. Straw yellow, the nose gives some bruised apples, ripe lemon and oystershells. On the palate still high acidity but lacking complexity and fruit. Nice salinity and some chalk. Medium lenght. If I were to score it, it would fall in the range 88-89 points, wich is quite alright but not what you would expect from this wine, especially since past bottles have been much better.

Robe jaune paille, limpide. Au nez, un soupçon d'oxydation, rancio, sirop d'érable (Madame a dit médicament...), vase, puis miel, citron mûr. En bouche, vif et assez tranchant, acidité marquée, belle longueur. Après 48 heures au frigo, la couleur n'avait pas bougé, les arômes de miel, de poires et de foin ont pris le dessus, l'acidité est toujours présente bien que plus modérée. La finale est longue sur de beaux amers. J'ai beaucoup aimé et Madame pas du tout... du coup, j'en ai eu plus!

This was my second bottle. Both were very good, with tons of acidity and white floral notes. I do think that it is time to drink this now and not wait longer. The white flowers were more on the honeysuckle side than jasmine and there was a very slight caramel edge to the finish which inhibited my enthusiasm. Very good but not great.

From 75cl, perfect cork, double decanted 45 minutes, which it needed, best after 2 hours. Initially disjointed and bitingly acidic, finally a bottle which wasn't ruined by premox. Hallelujah. That means this bottle effectively cost me 123,69 EUR at cellar door in 2011. Who ever said that Chablis was underpriced? Brilliant super-ripe lemon, hint of iodine, saline; expansive structured mid-palate, still smaller-scaled than Fèvre's 2008 Preuses and Les Clos, but nonetheless a fine, generous wine. If you're very lucky, and have intact bottles in the cellar, then no hurry at all, this will only improve over the next decade. If not, and in my experience there is a 66,66% likelihood of premox, then you can always pour it down the drain. 93P

This felt quite flawed, likely a defected bottle. I had two previously (one in '13 and one in '18), and the one in '18 was quite complete and enticing. This felt drab and awkward, not so inviting.

This had about an hour or two of air before I brought it to dinner at the Leopard. I thought the color was a bit dark, but the wine was excellent, with no premox. The palate offers classic Chablis sea spray, minerals, bright acidity and a hit of vanilla, and is quite long to the finish. Just great.

After a pre-mox 08 Valmur opened this with some trepidation. Light greenish gold! Classic Chablis nose of sea air and chalk; lovely silky mid-palate with good acidity on the finish. Interesting that had no pre-mox with these but Valmur may be more problematic. This is probably at peak as the fruit and balance are still excellent. On to the 2010s.

This wine drives me nuts. I bought a case on release and of the 6 I’ve had, 3 were pre-moxed to the max and 2 were very good but not great. I forgot about it but saw it at the back of a bin in the vault, so I decided to try again and pray I’d get a good example of the wine at 12. Out of the bottle, the color was a pale yellow and my spirits brightened. The nose was as fresh as a recent Fevre 2014 so I got really excited. The pay off was brilliant grand cru Chablis that we all seek but too often eludes us. Oyster shells & iodine; finish that lasts forever without even a hint of heat despite the 13% alcohol. Every bit as good as Raveneau or Dauvissat. Sad that you probably have to buy a case to get a couple of these (I hope) but my goodness, thiss is really great wine.
Undrinkable. Seems prematurely oxidised like many other bottles of this mentioned here by others. The nose seemed fine but palate was acidic with no significant development or improvement within 60 minutes in the glass. Bitter disappointment.

From 75cl, exquisite cork. Purchased 2011 in a fancy wooden case at cellar door; never moved since placed in my cold cellar a few days later. Were it not for a hint of gout de fusil / gunflint I would have guessed this as a good Bourgogne Ordinaire, or just perhaps as a passable St. Aubin (or similar) 1er Cru. But no way does this pass as a GC Chablis from a fine producer, sorry. Probably a victim of premox, but just not as pronounced in the other, completely premoxed, bottle opened this evening. That makes two expensive bottles opened without pleasure, Oh well, stupid me for buying cases of white Burgundy. From now it is single bottles only, if that. There are always other Chardonnay wines, bottled under screwcap, and/or using sufficent SO2. 87P

It's amazing that people (like me) still buy white burgundy at all.

3rd Annual Gentlemens Dinner (Villa Ekenhov): Had two bottles of this and one had more than a streak of premox but the other delivered well on par with expectations. A bit closed at first but opened up with lovely white flowers, peach, lemon, apples and just hints of butterscotch. Intense minerality combines with zippy acids for a very fresh and energetic feeling. Underneath good substance, detail and complexity. Long finish with intense, almost sparkling minerals, lemon and lime. Masterclass chablis!

A good bottle based on recent reviews. Looking very young for its age.....especially against many other Burgundies of the same vintage. Very lean and long. Excellent choice for a chicken confit - cutting through etc. Will hold for a few more years and may improve if properly cellared. Good value compared to Burgundy.

Had to crack this after seeing all these great reviews. Had purchased this from Skinner auctions.
Pretty green-golden color. Wine is clear and bright.
Oyster shell and golden delicious apples on the nose. Underneath is lemon and pie. Lemon chiffon pie? Touch of butter on nose. Hint of oxidation.
Medium-low acid. Long, clean finish. Citrus, passionfruit, minerality. For whatever reason, though, this wine feels a little disjointed to me. To my palate it needs more acid and fruit. Has it gone dumb? Some kind of subtle flaw, like what Burgundy_Al described about a year ago?
I like this but to my palate it is by no means a “wow” wine. But a) I like my wines young, especially Chablis; and b) I really don’t know the provenance or condition of this bottle so I can’t really tell if it’s at its peak. I certainly wouldn’t wait any longer.

The bottle variation continues but thankfully this one shows wonderfully, if surprisingly forward. Apple and crushed stone dominate the nose, leading to a ripe but structured palate of apple, mineral, and spice. Very good but no consistency between bottles.

A real stunner. Bright citrus-driven fruit with mineral, floral and white pepper notes on nose. Exquisitely balanced palate of mouth-coating, lightly-flavored fruit that matches the lacy mineral acidity and then persists and penetrates. Drank next to 2008 Long Depaquit GC La Moutonne. Fresh, vibrant, intense with a slightly creamy note. Very mineral, almost saline, very bright, this was almost a little thin at first. But with some time in the glass it added more weight and generousity without loosing any of its precision and intensity. Very very long. Fabulous. 95-97

Significant bottle variation with this wine. I found this bottle rather austere and lacking in fruit, yet sufficiently bright, with a long finish, as to not blame subtle TCA. Intense minerality but none of the citrus of my previous bottle. This drinks like a young Chablis from a good vintage. Weird.

PnP; perfect cork. Medium greenish gold. Intense airy nose of sea air. Citrus and saline on the palate; very good intensity on the finish. This worked well with a seafood spaghettini. Interestingly a 14 Varner Ampitheatre Block, which was richer, also complimented the dish because of its excellent minerality. I think the Boguerots is probably at peak as the acidity has receded and the balance is still lovely. Still has a hint of the exotic which I very much like.

I drank this with trepidation. My wines of the same cuvee of 2007 had all be pre-moxed. This had just a tad of it, but so little it blew off. Leaving a great wine with stone, grapefruit flavors and a full mouth feel. I would drink up thought. I think this could also oxidize soon.

wow, drank this after opening a few bottles of 2008 Wm Fevre Les Clos and finding them badly premoxed, this bottle on the other hand was drunk over three nights and was really nice on all, early it was all acid / citrus / mineral, which I love, over the next two nights it had same base but rounded out a bit with less tension / grip and gained just the right amount of richness... if I had more I would decant for three hours in the AM and then take to dinner... suspect that will create an awesome white burg experience

Very full and almost rich on the palate, perhaps atypical for Chablis, but then the finish has the classic high acidity and intensity. This bottling often rivals Les Clos for ripeness and intensity. I think this is still on an upward trajectory and should last another decade; no sign of pre-mox in the 3 bottles I have opened.

This was nice... very nice. I actually preferred this to a Coche (village) Meursault that we had on Thu evening. Distinct notes of honey, nectarines, white-flowers and chalk on the nose. Very good palate weight too, with yellow fruits and a good douse of minerality plus a slight touch of salinity, culminating in a long finish. Very good!

Domaine William Fèvre 2014 Seminar (Plum Market - Chicago IL): Best (freshest) bottle of this wine I've had in several years. Plenty of maturing green apple with a steely, oystershelly texture that is classic and attention grabbing. But the fruit is softening and aging, so I would drink these sooner rather than later.

Les Clos has been my favourite Fevre Chablis in the past but this bottle put up a good challenge. Bright mid yellow suggest some age. The nose is inviting with chalk and mineral notes and yellow apple and lime, quite exotic. The palate then put its over the top; intense, quite viscous, and long. It’s like biting on a oyster shell soaked in lime juice. There is fruit sweetness that balances the acidity beautifully.

PnP. Perfect cork. Light straw color; immediate nose of chalk, sea air, limestone and citrus. On the palate this has an intense minteral taste with very bracing acidity. With air it develops a silky quality on the mid-palate and the acidity recedes somewhat. Still a baby and more classic than some other vintages of this bottling which sometimes has a more exotic character. This went beautifully with some grilled local halibut.
Opened for about 6 hours before dinner, with about a 30 minute decant. I enjoyed this wine, but not as much as Mr Meadows. Got a nice mouthful of lemon-lime cream and chalky minerals, but very little of the saline oyster shell that I love in chablis. Let's see how the next few bottles go...

PnP at a restaurant in a decent but not ideal stem. Eloquent exposition of minerals and fruit with a medium-long finish. Has lost some of its flinty, crystalline youthfulness for better or worse, most noticeably on the flatter than expected nose. The breadth and depth on the palate were impressive nonetheless. Kind of a tweener, no longer doing the limestone and lemon juice thing but not quite ready to fully spread its wings of maturity.

Chablis-athon (Chicago, IL): From double magnum. This has a much riper and fatter character about it in comparison to the leaner and racier Clos. Still, this still has ample acidity, though the fruit is perhaps a bit more prominent and shows fatter here. It really fills out those JUICY sweatpants, if you know what I mean...
Essential Chablis. Singing nose of green apple fruit and sea breeze. Palate doesn't disappoint. Lean apple/ sour patch kids holds forever. Tremendous minerality. Awesome

My first experience with the "Côte Bouguerots" part of the Bougros vineyard. Pale gold color. Diverse nose of seashells, freshly-cut grass, pear and cinnamon. Palate echoes the pear flavor, with solid underlying minerality. The acidity on this one is fairly moderate, but should keep this wine on its feet for another three to five years. Nice wine (and better I think than Fevre's Bougros Grand Cru), but still a far cry from my one true love, Les Clos.

Terroir-istes International - Chablis Grand Cru & one 1er Cru (Rodwell House): Light+ yellow with baked fruit, mineral and wet pebbles. Lovely poise in the front end with petrichor (rain on stone), crushed rocks, thundercloud, etc bracing acidity with a lovely fine boned linearity to the wine. There is a richness but all is punctuated by shards of mineral that taste better than it sounds!

Classic. Aromas of chalk, minerals, a saline quality and lemons. Similar flavors. Crunchy acidity keeps it all on a razors edge. Concentrated flavors. Balanced. Over three hours this wine gained depth and length yet remained energetic and concentrated. Although youthful, this is quite enjoyable now and will give several years of pleasurable drinking.

Tart, lots of minerality, like drinking rocks. I found it wonderful with many notes, though clearly very, very young and in need of serious bottle age. Score inevitably will reach 95+ on this one with time. Just damn good.

Bourgogne soirée (Coffe-Bar restaurant, Tel-Aviv): Light golden straw color. Expressive mineral and fresh citrus-lime aroma with some green apple. Med-bodied, sharp & elegant, well balanced, good harmony, citrus & green apple flavors, nice minerality, pleasant medium ending. Can age beautifully 3-6 years more.

Rocking. Beautiful lanolin, lemon-lime qualities, with a massive, mineral, rich, yet totally transparent palette. This is just off-the-charts great Chablis.

Greenish in color. Very expressive on the nose. Hay, smoky minerality, and altogether this is a very mineral wine. It has great citrus fruits to balance the minerality. It does have some green apple, but it is still fresh, and therefore I found that it complimented the wine, and did not disturb. Pretty good finish, and the acidity is still vibrant.

Fabulous Chablis. Still on the young side of course, but everything is in place here. Lots of pears and a few lemons. Heaps of dry extract. Wonderful before, to and after oysters and lobsters.

Bit sulpheric in the nose crisp smelling rosewater and mineral. Nice palate feel but pretty tough to judge concentration of fruit. Overall seems pretty nice.

Another stunning '08 Fevre GC. Textbook Chablis with well-defined minerals and citrus, but also with a bit of Raveneau-style opulence that takes this over the top. Absolutely stealing for the $50 I paid for it.

The Verticals at La Paulee de San Francisco (Westin St. Francis - San Francisco CA): Aromas and flavors of both green apple, lemon and lemon peel. Moderate floral touch. Palate also shows hints of mint and ginger, and are elongated by very energizing acidity and minerality. A small step up from the wonderful 2007 vintage . Hold to 2014 or later.

2011's Top 10 (Wine Route Savion): Straw light bright color. At the beginning – excellent aromas of citrus and minerality, surprisingly sharp end fresh (even though it went through malolactic and was in oak for one year). As it developed in the glass – we got more honey and tropic fruits. Excellent acidity. A complex, excellent wine (82$)

Chablis and Champagne 19-22.09.2011; 9/19/2011-9/22/2011: 80% barrel fermentation. Generous bouquet with a saline edge, still some SO2 getting in the way. Ripe, rich entry, "un-Chablis-like", (greengage-lemon-mirabelle?) - I would never have guessed this as a Chablis blind, perhaps Chassagne-Montrachet? Dense texture, may even become pleasantly oily with age; the richness in perfect balance with brilliant lemon acidity. 4-5 years to perfection? €43,40 au chai. 93P(+)

Rich, fruity yet fresh on the nose with yellow fruit and light earthiness. Med+ body, rich, tasty, balanced. Lemon, grapefruit, mineral background. Very long, rather ripe, but fresh. Quite a rich style.

Drank four of the 2008 Fevre GC's. The unanimous ranking was Les Clos, Bougros Cote de Bouguerots, Vaudesir, Valmur. All were very restrained, unlike the last few vintages which I felt were easier to drink at a very early age. The Clos is the class act. Valmur had a very expressive nose, but didn't follow through as much. The Vaudesir had a fair amount going on on the palate. All in all, a hold not a drink at this point. Drink the 04/05/06 or 07's at this point before these.

At the Domaine: Didier says this is the best example of this in 12 years. This is very different than the 2009 - high acidity (like the '07) but with more body. Great wine for aging as it has lots of material and beautiful minerality.

Compared to the C. Moreau 2008 Les Clos, a thoroughly enjoyable flinty, mineral, lemony, top flight Chablis, I wrote "more complex nose, more fruit, more rock, more soil... dense." Chewy and delicious, utterly fabulous, 94++, I may have to buy another of this admittedly luxury-priced gem.

Bouchard / Fèvre / Henriot Tasting (The Wine Cellar Club - Irvine, CA): This starts off quite closed with elegant fruit, stones, and mint. The palate starts off soft but the heady fruit quickly builds with gobs of stone, citrus, pineapple, and melon. The density of the fruit and minerality is quite special in this wine. More reticent and closed than the premier crus but you can feel the power and complexity in the mouth. I can only imagine what this wine has in reserve. 94+

Mature Chablis at its best. Cheese rind, blue cheese, straw, a touch of wool, slightly peppery, with lots of ripe lemon, pear and apples. Heavy minerals with granite, flint, smoke and chalk. Perhaps lacking a little bit of elegance, but still very, very good. Very good length as well.

This bottle, while drinkable and giving some enjoyment, is clearly prematurely advanced. Straw yellow, the nose gives some bruised apples, ripe lemon and oystershells. On the palate still high acidity but lacking complexity and fruit. Nice salinity and some chalk. Medium lenght. If I were to score it, it would fall in the range 88-89 points, wich is quite alright but not what you would expect from this wine, especially since past bottles have been much better.

Robe jaune paille, limpide.
Au nez, un soupçon d'oxydation, rancio, sirop d'érable (Madame a dit médicament...), vase, puis miel, citron mûr. En bouche, vif et assez tranchant, acidité marquée, belle longueur.
Après 48 heures au frigo, la couleur n'avait pas bougé, les arômes de miel, de poires et de foin ont pris le dessus, l'acidité est toujours présente bien que plus modérée. La finale est longue sur de beaux amers.
J'ai beaucoup aimé et Madame pas du tout... du coup, j'en ai eu plus!

This was my second bottle. Both were very good, with tons of acidity and white floral notes. I do think that it is time to drink this now and not wait longer. From 75cl, perfect cork, double decanted 45 minutes, which it needed, best after 2 hours. Initially disjointed and bitingly acidic, finally a bottle which wasn't ruined by premox. Hallelujah. That means this bottle effectively cost me 123,69 EUR at cellar door in 2011. Who ever said that Chablis was underpriced? Brilliant super-ripe lemon, hint of iodine, saline; expansive structured mid-palate, still smaller-scaled than Fèvre's 2008 Preuses and Les Clos, but nonetheless a fine, generous wine. If you're very lucky, and have intact bottles in the cellar, then no hurry at all, this will only improve over the next decade. If not, and in my experience there is a 66,66% likelihood of premox, then you can always pour it down the drain. 93P

After a pre-mox 08 Valmur opened this with some trepidation. Light greenish gold! Classic Chablis nose of sea air and chalk; lovely silky mid-palate with good acidity on the finish. Interesting that had no pre-mox with these but Valmur may be more problematic. This is probably at peak as the fruit and balance are still excellent. On to the 2010s.

This wine drives me nuts. I bought a case on release and of the 6 I’ve had, 3 were pre-moxed to the max and 2 were very good but not great. I forgot about it but saw it at the back of a bin in the vault, so I decided to try again and pray I’d get a good example of the wine at 12. Out of the bottle, the color was a pale yellow and my spirits brightened. The nose was as fresh as a recent Fevre 2014 so I got really excited. The pay off was brilliant grand cru Chablis that we all seek but too often eludes us. Oyster shells & iodine; finish that lasts forever without even a hint of heat despite the 13% alcohol. Every bit as good as Raveneau or Dauvissat. Sad that you probably have to buy a case to get a couple of these (I hope) but my goodness, thiss is really great wine.

3rd Annual Gentlemens Dinner (Villa Ekenhov): Had two bottles of this and one had more than a streak of premox but the other delivered well on par with expectations. A bit closed at first but opened up with lovely white flowers, peach, lemon, apples and just hints of butterscotch. Intense minerality combines with zippy acids for a very fresh and energetic feeling. Underneath good substance, detail and complexity. Long finish with intense, almost sparkling minerals, lemon and lime. Masterclass chablis!

A good bottle based on recent reviews. Looking very young for its age.....especially against many other Burgundies of the same vintage. Very lean and long. Excellent choice for a chicken confit - cutting through etc. Will hold for a few more years and may improve if properly cellared. Good value compared to Burgundy.

This wine continues to evolve in the glass. In my opinion, my favorite fevre Chablis. Flavor is complex and has a bit of Everything on the pallet. Could have used a decant for 1 hour before drinking but was so delicious and refreshing it was gone far too soon.

Pretty green-golden color. Wine is clear and bright.
Oyster shell and golden delicious apples on the nose. Underneath is lemon and pie. Lemon chiffon pie? Touch of butter on nose. Hint of oxidation.
Medium-low acid. Long, clean finish. Citrus, passionfruit, minerality. For whatever reason, though, this wine feels a little disjointed to me. To my palate it needs more acid and fruit. Has it gone dumb? Some kind of subtle flaw, like what Burgundy_Al described about a year ago?
I like this but to my palate it is by no means a “wow” wine. But a) I like my wines young, especially Chablis; and b) I really don’t know the provenance or condition of this bottle so I can’t really tell if it’s at its peak. I certainly wouldn’t wait any longer.

An elegant nose that offers pear and yellow fruits. There is a richness to the fruit that balances the minerality and acidity and the finish is very long. At peak drinking for my palate.

I drank this with trepidation. My wines of the same cuvee of 2007 had all be pre-moxed. This had just a tad of it, but so little it blew off. Leaving a great wine with stone, grapefruit flavors and a full mouth feel. I would drink up thought. I think this could also oxidize soon.

wow, drank this after opening a few bottles of 2008 Wm Fevre Les Clos and finding them badly premoxed, this bottle on the other hand was drunk over three nights and was really nice on all, early it was all acid / citrus / mineral, which I love, over the next two nights it had same base but rounded out a bit with less tension / grip and gained just the right amount of richness... if I had more I would decant for three hours in the AM and then take to dinner... suspect that will create an awesome white burg experience

This was nice... very nice. I actually preferred this to a Coche (village) Meursault that we had on Thu evening. Distinct notes of honey, nectarines, white-flowers and chalk on the nose. Very good palate weight too, with yellow fruits and a good douse of minerality plus a slight touch of salinity, culminating in a long finish. Very good!

Les Clos has been my favourite Fevre Chablis in the past but this bottle put up a good challenge. Bright mid yellow suggest some age. The nose is inviting with chalk and mineral notes and yellow apple and lime, quite exotic. The palate then put its over the top; intense, quite viscous, and long. It’s like biting on a oyster shell soaked in lime juice. There is fruit sweetness that balances the acidity beautifully.

With air it develops a silky quality on the mid-palate and the acidity recedes somewhat. Still a baby and more classic than some other vintages of this bottling which sometimes has a more exotic character. This went beautifully with some grilled local halibut.

PnP at a restaurant in a decent but not ideal stem. Eloquent exposition of minerals and fruit with a medium-long finish. Has lost some of its flinty, crystalline youthfulness for better or worse, most noticeably on the flatter than expected nose. The breadth and depth on the palate were impressive nonetheless. Kind of a tweener, no longer doing the limestone and lemon juice thing but not quite ready to fully spread its wings of maturity.

My first experience with the "Côte Bouguerots" part of the Bougros vineyard. Pale gold color. Diverse nose of seashells, freshly-cut grass, pear and cinnamon. Palate echoes the pear flavor, with solid underlying minerality. The acidity on this one is fairly moderate, but should keep this wine on its feet for another three to five years. Nice wine (and better I think than Fevre's Bougros Grand Cru), but still a far cry from my one true love, Les Clos.

Terroir-istes International - Chablis Grand Cru & one 1er Cru (Rodwell House): Light+ yellow with baked fruit, mineral and wet pebbles. Lovely poise in the front end with petrichor (rain on stone), crushed rocks, thundercloud, etc bracing acidity with a lovely fine boned linearity to the wine. There is a richness but all is punctuated by shards of mineral that taste better than it sounds!

Tart, lots of minerality, like drinking rocks. I found it wonderful with many notes, though clearly very, very young and in need of serious bottle age. Score inevitably will reach 95+ on this one with time. Just damn good.

Greenish in color.
Very expressive on the nose. Hay, smoky minerality, and altogether this is a very mineral wine. It has great citrus fruits to balance the minerality.
It does have some green apple, but it is still fresh, and therefore I found that it complimented the wine, and did not disturb.
Pretty good finish, and the acidity is still vibrant.

Valmur had a very expressive nose, but didn't follow through as much. The Vaudesir had a fair amount going on on the palate. All in all, a hold not a drink at this point. Drink the 04/05/06 or 07's at this point before these.

At the Domaine: Didier says this is the best example of this in 12 years. This is very different than the 2009 - high acidity (like the '07) but with more body. Great wine for aging as it has lots of material and beautiful minerality.

Bouchard / Fèvre / Henriot Tasting (The Wine Cellar Club - Irvine, CA): This starts off quite closed with elegant fruit, stones, and mint. The palate starts off soft but the heady fruit quickly builds with gobs of stone, citrus, pineapple, and melon. The density of the fruit and minerality is quite special in this wine. More reticent and closed than the premier crus but you can feel the power and complexity in the mouth. I can only imagine what this wine has in reserve. 94+
