Have had the 07 Pajana from various cases over the years, and this one, interestingly from a wooden case, was the best showing so far. Has none of the oxidization I was getting with bottles from cardboard cases earlier. Showing very dark fruit and tar notes, but also good acidity and freshness, this is a good Barolo if not my preferred style. Medium tannins are still there, not very polished but also not intrusive at this point in time. Short to medium finish.

Compared to the Corino Giachini, this is more red fruited, with intense cherries, and menthol. More structured and floral as well. Ann preferred the Corino, and didn’t love this, but both were good in different styles. No need to rush with this one, where I feel like the Corino is at peak and will start a slow decline. I was sorry to see this bottle emptied. Both had a lot of sediment.

beautiful wine; esp with the waygu strip steak we had with it! the tannins softened with the steak and it was in a great spot - rose infused dark cherry, earth/tar notes, good acidity, strong tannins. perfume is pretty but on the more muted side. didnt decant but did open the bottle about 45 to 60 minutes before we started to pour and drink from it. def not past its peak but probably will see the fruit diminish more each year so a good time to drink now.

Excellent richer, darker (new world-ish?) style Barolo; Lovely darker dried rose petals, orange pith, black cassis/blackberry, coffee grounds/cacao. Rich, smooth, tannins leveling out, long. At Forma L's bday. Actually quite good with tangy, peppery cacio e pepe, but best with braised short ribs.

In my cellar since release. Decanted about 2 hours before tasting over an additional 4 hours. Slightly translucent medium to dark garnet color. Nose is clearly oak influenced but mostly integrated with vanilla, tobacco, truffle, cherry and dark berries and perhaps a whiff of eucalyptus. Palate is modestly tannic but really shows fairly well balanced with nice bright acidity and a surprisingly soft texture (at about 2-3 hours open, then gets a bit sharper edged toward the end of the evening. There is much the same on the palate as the nose but there is a distinct charcoal element that was fine with grilled steaks and a lightly spicy (Asian) finish. No sign of bricking nor any oxidation to speak of so I would think this has many years of enjoyment left.

Ok, this was very nice and all, but probably the most modernist Barolo I've had in a long time. Dark ruby, deep concentration of color; whiff of oak on the nose, rich berry fruit, hardly any earth tones or medicinal notes I love in Barolo; on the palate, slick and soft, usual big tannins but these are long-chain caressing tannins alla Napa Valley. Ripe almost sweet black berry and cassis fruit as opposed to red fruits and rose petal, licorice, etc. Nice wine, but not really in character. Stunningly good however with lamb tamales! W/Ang. 91-92 Not quite sure how to square this with my previous notes.

The palate has lots of intensity with red cherry and redcurrant flavours, the savoury umami of mushroom and truffle come into play too and some damp forest floor. Tannins are still present but not obtrusive but this is after a four hour decant...

Vinous London dinner, January 2020 (La Trompette): Really enjoyed this, although some were of the view it was too modern. Nose was enticing and not too oaky. Fresh on the palate and with decent body and length, but perhaps a touch of over-extraction apparent on the finish.

nose-plum, gassy, mouth - nicely complex but a bit all over the place with fruit, tannin, and even some mild VA. evocative of a hypothetical mix one part napa, one part etna, one part barolo. Per daniele one of the few monforte tasted to actually show well the following day. Hold (or decant).

As others have mentioned, color is pretty dark for a nebbiolo. It's got an equally dark fruit profile, too. Still mostly primary at this point with the ripe fruit taking the center stage, though there is also some florals, licorice, and oak spices present. Tannins are beginning to soften but will still need a few years to round out fully. Not sure what I would have pegged this for in a blind tasting - maybe an aglianico or a particularly aggressive young Burg.

young. could use another 3-5 years in the bottle. tar, dark red fruit on the nose. plenty of acidity in the mouthful and finish. very grippy tannins that arent as soft as i would like. but when those tannins soften, the finish will be long. has the stuffing to age.

nose - baking spice, smoke, menthol, shoe polish mouth - lovely cornucopia of red and dark fruits while being lithe and restrained. I can see the analogy with a nice Burgundy, with the main difference that the tannins here are slightly more astringent that I'd expect for the later. A long complex and somewhat tannic finish of very pure cherry fruit, orange peel, and spice. excellent showing. drinks lovely now but has life.

cherry, black licorice, higher acidity that i find in all italian reds and grippy tannins. a yummy wine that is terrific with red meat - in this case a grilled rib eye. i decanted it but only for 15 minutes and enjoyed it as it opened.

The nose was dark and imposing with its ripe black fruits, spice orange and licorice, which were complemented by lifting notes of pine, menthol and minerals. On the palate, I found dense textures offset by brighter red berry bruit than expected, as the ‘07 Pajana came across as primary and still a bit disjointed. Youthful tannin saturated the senses through the finish with hints of minerals and spice lingering on.

Lovely classic Barolo with the tar and roses thing going on, dried pot-pouri, rose petals, cherry skin, licorice/anise, minerally rocks-slight medicinal thing, very savory; silky but great structure with full but not drying tannins, rather big as this is a '07, but really nice with rich red pasta sauce and sausage with spaghetti. Drinking well now, but still could use 5-8 years and more. 92-93

Pnp, plenty of licorice, menthol nose almost like a CdP. Tannic and grippy on palate, almost like chewing thick dark grape skins, lightly bitter too, More oak than any fruit here, after 5 hrs in BT with cork, it tasted like Burgundy's Nuit St George's wines, earthy, rustic and firm tannin persisted. But luckily, this is my last BT, LOL.

Nose: Lavishly aromatic. Dark watermelon aromas and sporty male perfume towards Aqua di Gio. Decidedly fragrant and refined, however rather unusual from the wine POV. Wet cement and licorice as well.
Superbly balanced with M-body, laser-sharp +++ tannins, licorice galore and still very young. There are a lot of unrealized potentials just waiting to come out. Has enough umpa-umpa to develop for at least ten more years and live long after that.
After 5 hrs decant, the aromatics refined themselves towards dried leaves, some smoked meat and away with the perfume. Palate stayed tight (Som hos flickan från Gränna) throughout the evening and married all foods.
Two more btls to go, next one ~2025.
At overperforming Restaurant Tani.

Tasted blind. Minty and menthol, red cherry nose. The palate has a smooth entry of sour red cherry, black pepper and big, drying tannins. Very good wine that needs a long decant and more time to unfurl those big tannins.

Dark and concentrated on the eye for a Barolo. Floral and elegant nose which gives way to red berry fruit and black liquorice. Very concentrated, intense red currant and berry flavours, tannins and acidity still pronounced but bearable and certainly works with food. Nice long finish. This is excellent and will improve as those tannins and acidity calm down. In the meantime decant an hour prior to tucking in.

This was something else - on opening it was wildly aromatic with bright cranberry and menthol with a strong floral component. In the mouth it was tart and vibrant for just a few seconds and then the acids and tannins completely blew up, dominating everything. Five hours passed before dinner and by then the wine calmed down. The flavors became darker but the fine-grained tannins much tighter. The aromatics were more calm but just as compelling. Late in the day, open 10 hours by then, the wine stayed tight. Not sure what that means for aging - perhaps that there is a long future ahead. In any event, while not a brilliant wine it was certainly memorable.

Decanted and allowed to breath for half an hour before the first taste. Medium-bodied, and light-medium ruby red color in the glass. First thought was this is reminiscent of an elegant Burgundy. Not highly fruit-driven albeit somewhat shut down at this stage. Nose is lightly floral yet somewhat withdrawn. Needs more bottle-aging. Smooth tannins (I didn’t get anything really intense or harsh) and good acidity levels. Long acidic finish.
After 2 hours, the floral aromas are more pronounced although as yet not too complex. It had bodied up in the decanter and had a smoother, more velvety finish. Good accompaniment for roast lamb.
Enjoyable now, but definitely needs a few more years of cellaring before I try the next bottle. 90 for now. Potential to be a point or two higher in a few years.

This wine wins it on all points compared to the 2007 Ciabot Mentin Ginestra; better fruit juice, more exclusive oak. Also earthy and rustic and a mouth full of good wine. Wait for another 5+ years is probably a wise thing to do.

Not sure what I would have pegged this for in a blind tasting - maybe an aglianico or a particularly aggressive young Burg.

young. could use another 3-5 years in the bottle. tar, dark red fruit on the nose. plenty of acidity in the mouthful and finish. very grippy tannins that arent as soft as i would like. but when those tannins soften, the finish will be long. has the stuffing to age.

mouth - lovely cornucopia of red and dark fruits while being lithe and restrained. I can see the analogy with a nice Burgundy, with the main difference that the tannins here are slightly more astringent that I'd expect for the later. A long complex and somewhat tannic finish of very pure cherry fruit, orange peel, and spice. excellent showing. drinks lovely now but has life.

Delicious. Pretty young, would have benefited from a few hours of decant. Still, very tasty, great fruit with some strong tannins that will mello with age or decant. I’d give it 8-10 years.

Two bitter old gentlemen become gentle (Restaurant TANI, Tokyo): Upon opening.

Blind Italian Reds at the Ballingtons' (Great Falls, VA): tasted blind; had not been decanted and clearly needed it - but it was quite smooth with intense drying tannins. A little caramel appearing on the front palate. Would have loved to have had this with more air to see where it could go.
