Seemed slightly oxidized at first PnP. Threw into a decanter and that basically blew off and balanced out nicely as it opened up over the next hour or so.

Gorgeous wine, well balanced and smooth as silk. It still has some fruit left while the tannins are super polished and acidity is well balanced. It’s like a mature good Bordeaux with a little more fruit present. It drinks very well and will probably last for a good 5 more years. But why wait?

Dark ruby/purple color, big nose of dark fruit and flowers, the wine is still pretty massive with ripe fruit, smooth tannins and a long delicious finish. Great wine that is drinking at peak right now, but likely another 5-6 years before it even starts to fade.

Decanted for two hours. The wine opened up tight, but evolved very nicely. On pouring it has this distinct garnet color that shows it graceful age. The nose is very floral and enticing. Medium bodied structure and the tannins faded nicely to create a velvety feeling on the tongue. I tasted dried fruits, and vanilla, with hints of tobacco. It gets better with every taste and every pour. Lovely bottle.

I pulled a small amount out with the coravin. Big and hot! Did I mention it was hot! Raisins on the nose and flavor profile. If you told me this was 20% alcohol I would believe you. This comes out and punches you right in the face. This seems like it would need all day to breath and settle down.

Purple color with a tinge of brown in the rim. Bouquet and flavor of bell pepper and cassis in almost equal proportion. Tannins soft. Flavor rather muted, not making for much depth or nuance and a rather feeble finish. Not the equal of the previous bottle. Opened after the 2,000 Calon Segur proved so disappointing. So two disappointments. Probably over the hill. Drunk on the eve of Christmas eve, if I can extend the holiday a bit, with a lovey pork loin with roasted sweet potatoes and Brussel sprouts, and a very tasty cheese and bacon soup.

Purple color with a bouquet of cassis and eucalyptus, joined by tobacco after airing a bit longer. Similar flavor with the addition of some chocolate. Wonderful intensity, nuance, and depth with a very long finish. The only negative feature was a bit of harshness as the tobacco notes came to the fore, but still a remarkable wine. Drunk on the eve of Thanksgiving at Café Lynn with filet mignon topped with a lovely peppercorn sauce.

Popped and allowed to breathe in glass over cocktails. Opened up quickly to reveal a nose of cassis and hay. Lush and ripe on the palate. The high proportion of Cab Franc gives it that pureed-fruit mouthfeel. Plenty of acid and youthful tannins on the finish. This may be at peak or it may have decades ahead of it...I don't have the expertise to know, but given the classic Bordeaux blend reminiscent of Graves and the winemaker's reputation, I wouldn't be surprised. Certainly enjoyable right now.

PNP Cassis, sea salt, clay nose Tannins are still tight. Cassis, strawberry, blackberry, dry still, but very tasty. Let half a bottle sit overnight, and it completely opened up. One of my all-time favorite. Smooth, elegant taste as if it were 10 plus years older with much more fruit. Low acid low tannins just how I love it. One of my top five only following the 2003 Dominus, Lakoya, martha's Vineyard Heintz and of course my favorite first growth. Wish I had two more cases.

Deep ruby color with no bricking on this 10 year old California Cabernet. Nose reveals blackberry, dark chocolate and a little camphor. Medium full body envelopes palate with completely round flavors of dark fruit, some chocolate, a bit of tobacco adds complexity and nuance. Finish lasts almost a minute. I enjoyed this much more than I expected. This has really improved with bottle age. Excellent effort for the vintage.

Drinking well -good mix of berry, leather and a little chocolate, nice finish, was still a good value at that point- have to note that at current pricing I hesitate each year before clicking submit but then I recall our visit to what is one of northern California's most beautiful wineries and the Chardonnays we love and I take our allocation in full.

Dinner with friends (Courtright's Restaurant, Willow Springs, IL): Decanted shortly after we were seated for dinner. Aromas of lavender, vilets, cassis and black fruit. Big structured, bold, fruit bomb of a wine. Open in the bottle about six hours. Dark cassis, plums, ripe fruit. Milky chocolate, lots of oak. Very masculine and brooding. Palate confirms cassis, and black fruit. More darker chocolate. Really over the top, but some nice acidity. This should last for at least another ten to fifteen years. The warm vintage is showing with some heat on the back end.

Sweet red fruit on the nose. A bit of that "lovely" nail polish again which I noticed in many of the 11 vintages tasted. Warm lovely fruit with a great length. If 2002 was disappointing this was the other way around. I would never expect a 2003 behave this good. Lovely wine. One of my favourite Les Pavots.

Gorgeous wine that screams Peter Michael in styling - actually it is brimming with tell tale signs of Les Pavots. Creamy feminine styling with a youthful cherry, vanilla, cotton candy and white and pink flower personality. Very nice scents of smoked meat and game. Long ripe finish with a mouth coating viscosity and sweet well resolved tannins.

2003 California Cabernet Horizontal (Adour @ The St. Regis, Washington D.C.): Decanted 1 hour, muted nose, opened up after about another hour in the glass. Tannins still evident, mid-palate fruit was a little short with a slightly hot finish. Not overly oaky, but seems to need more time in the cellar to resolve the surprisingly evident tannins.

Youthful appearance, with a dark blackish-purple core, turning towards purple at the rim. Aromas of cassis, licorice, and leather; medium to full bodied, with an opulent texture, ripe tannins, good structure, and impressive depth; a long and well delineated finish, with good intensity and liveliness. A thoroughly impressive wine!

Opened and let breath for an hour but that probably wasn't enough to air this one. Nice dark color and a decent nose, the oak overpowered the fruit at this point. I still enjoyed it but I probably should have held on to it longer or required a decanter at the restaurant.

The fill was into the neck and the cork was sound. An opaque purple core, turning to ruby at the rim. A forward and overt boquet, offering up notes of very ripe black fruits, aged beef, anise, cedar and earth. Full bodied on the palate, with a lush texture, off the charts concentration, and a long, long finish. Missing that extra layer of velvet on the mid-palate to be a truly great CA cab, but this was a fantastic mouthful of wine. Nicole absolutely adored it!

Nice evolution, still big and full of fruit, good body, strong tannin and stood up well to a massive steak

Dinner with friends (Courtright's Restaurant, Willow Springs, IL): Decanted shortly after we were seated for dinner. Aromas of lavender, vilets, cassis and black fruit. Full-bodied, with loads of black fruit, vanilla, florals and mineral on the palate. Tannins are firm, but very fine. Long finish. 92-93 pts.

Soft tannins, creamy, and long finish. Enjoyed with braised beef short ribs, cheddar polenta, and garlic brussels sprouts.

Closer to perfect than the last bottle in 2007. Integrated. Seamless. Elegant. Tons of fresh fruit. Tannins extremely soft. Decanted for two hours. Ate with prime ribeye. Drink now.

Fantastic after about 45 minutes in the glass. We drank through three bottles of this in the space of a summer - may have gotten more complex with time but was certainly dense, beautiful and worthwhile this year. Sorry to see the last bottle go.

Dark purple that stains the glass. Tannins very present even well into the night, had with a huge slab of T-Bone, very fruity, but needs 3-5 more years to shed the tannins and develop a little. Huge potential here
