Way ups! Really in a good place- I opened out of the cellar and it rewarded with expressive aromas of lemon curd and sweet orchard florals. Vaillons is so friendly, that it was actually quite supple on the palate and utterly delicious. A long finish and a real sense of balance that becomes a bit indescribable.

Yellow with a green glint. All Chablis all the time on the nose-tide pool and citrus. Elegant medium weight, beautiful acid/sugar/fruit balance. Orange peel, lemon, and saline followed by lingering stone dust on the finish. The citrus pith just went on and on at the end. Refreshing, brisk, and completely satisfying. Wonderful bottle at its peak.
Just as good the next night. This one has some staying power, particularly for a Christian Moreau wine of this age.

Tasted over 2 hrs -translucent light-med gold -fairly muted typical Chablis with a faint tropical note -barely med acidity kicks in late, med weight with faded citrus fruit a faint burst of fresh sweet pineapple and a hint of lanolin maturity, finishes with a whisper of butterscotch -OK

Full yellow with a telltale greenish tint. Real Chablis aromas-dank algal tones and fresh cut lemon. Light to medium weight, again with iodine and bitter citrus followed by excellent minerality to finish. While I've had more than my share of oxidized Moreau bottles, there was no such problem here. In fact, if anything, this freshened with air. Gratifying to have this turn out as well as a tasting 6 years ago predicted.
Monthly Tasting Group: Blind Pinots Worldwide (The Kenwood, Mpls, MN): Small pour. Very solid. This had some nice earth, saline, good depth and some weight here, citrus, lemon peel, the acid seems to sneak up on you after a bit. Initially didn't have that grip, but got a bit more over time. Still a bit surprised this is a '10 - the fruit's there, but not that engaging acidtiy.

Tasted over 2 hrs -translucent med gold -reduction quickly blows off, exotic somewhat tropical fruit sharp lemon -med+ acidity, light/med- weight mostly lemon with mildly tropical profile with some nice saline and mineral elements and a touch of spice becoming more prominent with air, good length -leaning towards overly ripe tropical fruit yet retaining exquisite focus balance and gracefulness, drinking near top form now and should be fine for several more years

Blind taste: pure yellow with gray hue, med+ visc. Nose was somewhat restrained due to the temp I believe, but revealed ripe yellow pear and lemon pith, some wax. Flavors confirmed nose, and also fresh tart lemon, some oxidative nuttiness, big malo fresh creamery butter. Lots of bitter phenolics indicative of oak treatment and a dry, long, chalky finish led me right to Burgundy, but I thought for sure it was a meursualt. Moderate acid, moderate to mod+ alcohol.

Popped and poured, pale yellow-gold. Shouts "Chablis" on the nose, with lemon blossom, grapefruit zest, brine/sea spray, subtle herbaceous funk and an impression of minerals. Moderate-light body. Citrus-infused flavors are accompanied by green apple, hints of under-ripened stone fruits and more minerals on the palate. Moderate acidity, moderate close, no discernible oak. Uncomplicated, prototypical 1er Cru Chablis that's drinking perfectly right now and should keep humming along over the next few years.

This is drinking well tonight with about an hour of air, displaying cool green fruit, minerality, nori, baking spice and reasonable depth for its level. Quite nice.

This is quite nice tonight with cool flavors of green fruit, oyster shell, a hint of nutmeg and petrol and a penetrating minerality at its core. Not as acidic as some of Moreau's lineup, but the finish is long and satisfying. Very good and drinking well tonight with just a 1/2 hour or so of air.

Grapemates Christmas Party (Atelier, Sydney): Popcorn and nutty aromas with some lemon butter as well. Fairly rich palate, has a nice mouthfeel with the fruit expanding across the palate but never feeling too broad, even with the richness I found the balance to be very good.

Note on night 2. This had a bit of oak which got people thinking it was a puligny or chassagne when tasted blind. A bit of almond and sea salt on the nose. Lots of citrus on the palate with a long full-bodied finish. Nice wine.

The nose on this wine is quite expressive with aromas of tropical and green fruit, citrus, some floral notes and flinty undertones. On the palate, there's very nice depth and complexity to the crisp fruit and lemon curd flavors, all supported by a firm, mineral laden spine. This is a delightful bottle of wine thats drinking well today

2010 White Burgundy from North to South (Beltramo's, Menlo Park): Immediately riper nose than the Servin with herbs and lime. Medium weight, excellent sense of glycerine and similar citrus fruit, but a rush of acidity and stone that goes to the back of the palate and tightens the finishing impression. A wine showing both the generosity of Vaillons and the structure of the vintage. I'm really glad I own a few bottles of this; they should be (in fact, are) attractive young but then hold well for another 6 to 8 years.

Har ikke drukket mye 1 cru Chablis, men er ikke superimponert over denne. Gir lite på nesen, noe sitrus, blomster, og gress? Høy syre og litt skrall frukt. 2 sekunders lenge. Kommer seg noe med luft, men ikke mye. For fersk?( Fått høre i ettertid at dette er "la ligge!")
