Champagne Tasting $120+ (Bin 75 Alpharetta, GA): Deeper salmon color; medicinal cherry, blood orange, yeast and showing some good power and drive but this was really young and needed the food to tone it down enough to enjoy a little more; this bottle was really youthful so I'd suggest another 5 years or more before this starts to soften.

nice bottle. not a wow by any stretch. after an hour open it smoothed out as was a tad bit aciditic. well made and probably could use more bottle age to further development albeit nothing wrong w drinking now.
first glass maybe 91 pts. 93 based on last glass which was kinda nice and much smoother.
regardless, was hoping for a bit more complexity. won't rebuy but also won't say no if it comes my way again in any get togethers. just that with so so so so so so many champagnes out there, and for this price, I'd much prefer to go for another option. IE the Henri Giraud NV rose I had last month was infinitely better.

Pale salmon pink/orange, vibrant. Strawberry, onion skin on the nose, lifted and delicate. Palate shows strawberry, white fruits. Beautifully fresh, intense, super long finish, but refreshing and light. Very good, has developed really well. Not sure if this will get better, but not likely to fall over given the balance and fresh acid finish.

This has the succulence and intensity of the great '08 vintage combined with the classic reserved and layered Billecart style. One of the best bottles of champagne I've had in a long while. Copper/salmon colored coupled with young effervescence. High-toned strawberry and raspberry notes present, and a very fine mousse of bubbles. Great acidity and minerality - it's hitting on all cylinders right now, and has a lot of time ahead of it. This is a young wine at 15 and should be good 5-10 years from now. But you won't be disappointed having it now.

What a classy bottle of champagne! You don't initially appreciate the volume here due to the charm and balancing acidity. Fresh, with strawberry, red apple, and marmalade on a warm croissant. This was really outstanding, but young. It's one of those 2008's that need a lot of time. I need to hide my remaining bottles for a few years.

Our Christmas Morning wine for 2022 this is as fine a Rose Champagne as I've had with a classical cherry colour and a nose that follows with red cherries, wild strawberry, blood orange, Christmas spice and brioche. The palate follows that nose with ever changing flavours, fine zesty bead and a strong dose of 2008 distinction to balance the richness. A thoroughly celebratory bottle !

I did decant this wine just before serving. Deep salmon robe with orange reflections. Elegant nose lead by blood orange, wild strawberry with layers of honey, almonds and strawberry cake. Mouth is graceful and beautiful. Acidity is there but it’s surprisingly contained in a smooth and round texture. Everything is perfectly balanced with a sharp accuracy. More small red fruit and blackberry notes melted with vanilla and caramel. This will only get better with age. Medium+ finish. wow!

One of the finest rose champagne bottles I have tasted. Full-bodied, intense, balanced, and complex. Each sip revealed a different taste: apricot, candied orange, petals, berries, and even Coca-Cola. Fine bubbles, excellent mid-palate and long dry finish.

(Disgorged in July 2019, 55% Pinot Noir and 45% Chardonnay including 9% still red wine, dosage 7 gr/L) Lovely pale orange coloured with fine streams of bubbles showing in the glass. Delicious on the nose showing wild strawberries, freshly baked bread and minerals and opens up with candied lemon citrus and a touch of vanilla oakiness as well. Nice and pleasant palate showing an acidity combined with strawberries and with a citrus zesty and cherry stone bitterness on the finish. Leaving this lovely minerals saltiness on the lips that is so delicious. So intense and so vibrant and so lovely already, but will give so much more with more cellar time! (Best 2023-2038)
Excellent. Layers of wild strawberry, Meyers lemon, custard, brioche, orange peel. Beautiful in the mouth, with freshness accompanied by great mid-palate weight, awesome fruit concentration, lingering minerality. A touch vinous, but in a good way, with very refined mousse. Much more integrated on day 2, this bottle will surely get even better over the next 5-10 years.

Halloween in the Vice Versa Cave: This bottle is a bit more spun-up than the one I had back in July. The lemon pith is more prominent, blocking some of the strawberry and sweet orange peel notes trying to jockey position. This is a spritely little monkey with a serious side, especially on the taut finish. Notable energy and verve outshine any perception of sweet fruit or cloying markers that might stand to slow down the delivery here. The frame and darting tempo speak to a Rosé that could use either a short decant or ideally more time in-bottle. Hold for another 5+ years. 92-94+ points.
Epic Bordeaux for an Epic Birthday!; 9/1/2021-9/12/2021 (Paris & Bordeaux): From a magnum as an aperitif. This is light and fresh and a bit fruity. I wouldn’t say closed down, but it’s very primary in nature. Suspect you would get a lot more if you’d laid it down for 20 years but this was bought to ensure we had sufficient champagne for the trip because who wants to start a meal without champagne?
Champagne & Sparklers (Calistoga): Lovely tension and acid with youthful nervy energy, this is a Rosé Champagne with bouncy personality and all sorts of zippy zing. I found a great deal of pleasure with this bubbly. Orange peel, lemon juice and pith, strawberry and raspberry water, and wet travertine flavors ping-pong in the mouth and enliven the senses. A fun ride. Drink or hold. 93-95 points.

Like a lot of 08s (especially the grandes marques) still feels closed (and I didn't spend the time to let it open up so I don't know if that would have helped or if it needs more age)

Initially this had a shy nose with some medicinal, amarena cherry notes, and the palate was wound-up with CO2 and SO2. With time some really pretty, fresh juicy red fruits emerged reminding me a bit of some of my favorite roses. While it was very closed today I was intrigued. But then there was no real improvement over days 2 and 3, and I began to lose hope. Finally on day 4, the nose opens up with lovely blood orange and assorted botanicals. The palate is simply brilliant, fresh and precise. This will be lovely in time, but is a strong hold for me currently.

peach color, lychee and strawberries on the inviting nose, on the palate citrus fruits with a lovely blackberry note, very firm structure and acids throughout to keep it restrained, lime notes on the very good finish, with time some tropical notes emerge- yet the structure maintains a classic balance.

Discrete, almost muted nose with hints of raspberry, some green apple, oak spice. The palate is crisp and sharp, some bitter almond with nice dry extract, finishes sappy. Feels very closed still, nice palate but not much aromatic complexity at the moment, difficult to judge. 90-94 from today's showing. Best after 2028?

Very pretty pale copper/pink colour. This is very fresh and bright with good acidity still - it reminds me of a good English pink fizz. Coates & Seeley? No discernable oak influence and the whole thing is spritly and refreshing with some real underlying tension. But that's about it. Perfectly respectable fizz but I don't think it comes close to either the Comtes 2007 Rose or Pol Roger's 2012 which are both several notches higher.

The colour was an interesting blend of pink, orange and copper - slightly deeper and more multi dimensional than the classic BS Rose. Neat tight beading. The wine introduced itself like a kaleidoscopic of candy cane beautifully evaporating into a dry elegant fizz. The structure artistically reflected the bottle age with a lovely hint of broader smooth maturity. After a little time the flavour became more clearly peach, red berries and perhaps elderberry flavour but always with a lovely classically Billecart dry finish. Next came a slightly closed phased where it was pure elegance. Overall a great experience.

Rich and deep with a nice zippy acidity, but still a bit closed down. I’m not one to decant champagne, but this almost needs it..
