Colour: medium straw Nose: strawberry, raspberry; beurre bosc pear, apricot, lemon. Waxy, honeyed, nougat. Pineapple? Palate: strawberry, raspberry; beurre bosc pear, lemon, pineapple. Russet apples. Waxy, honeyed, nougat. Quite rich, but with linear, brisk acidity. Crunchy and fresh, but with some richness. Quite oxidative, I guess. Lots of persistent bead, overflowing when first opened. Maybe not as complex as some (bearing in mind that I'm an infrequent drinker of sparkling wines), but very nice. 12% alcohol. Seal: cork capsule. DAY 2: left open overnight (& not properly sealed), now at (winter) room temperature (ie about 15°C). Still has some bead left, just. Rich, oxidative flavours are accentuated, eg mandarin, lemon marmalade, fleshy lemon, pineapple, russet apples, lemon curd. Still very nice, actually. Lovely, rich, oxidative style, run through with a lithe, persistent acidity.

Very simple and straightforward but not without charm, on the nose this offers fresh and clean aromas of green apple, lemon, white cherry, chervil, bread dough and toast. On the palate this is medium bodied with medium to medium+ acidity and a noticeable but not obtrusive dosage driving richer fruit flavors of yellow plum and toast. Tasty enough.

I don’t remember buying this or if it was a gift. However, I have ignored it for sometime. Hazards of loving Champange...especially, Rosé.
This is not really our style as it falls into more oxidation than we like. But, still enjoyable.
The nose reveals, bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon, white citrus blend, bread dough, baguette crust, nougat, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers.
The body & mouthfeel are nice. Bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon & poppy cake, cream, butter notes, white citrus blend, bread dough, warm toast, nougat with nuts, brown sugar spice w/ a little palate heat, vanillin notes, touch of butterscotch & caramel, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers. The acidity is good just not as lively as I like. The finish is rich, polished, well balanced and quite nice, just not outstanding.
Producer notes; In 1840, Jean Febvre, a barrel cooper from Montbard, founded the winery that is now Maison Simonnet-Febvre. It was exclusively specialized in the making of sparkling wines using the so-called “Traditional Method”.
Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru “Mont de Milieu” and Chablis Grand Cru “Les Preuses”. It produces and vinifies a large range of different wines from the diverse “terroirs” of the Chablis region.
Maison Simonnet-Febvre was purchased by Maison Louis Latour in 2003.

Still family owned, they produce from all regions of Burgundy. 60% chardonnay and 40% Pinot noir. The only producing Crement in Chablis. Part domaine and part negociant. Crisp and fruity and easy going, with some RS on the back ground. Grapes sourced only from Chablis.

Maison Louis Latour Tasting with Louis-Fabrice Latour (Capital Grille, NYC): Nose of toast and golden apple. Bubbles are quite fine and not very assertive. Revisiting this Cremant de Bourgogne from Simonnet-Febvre that is based in Chablis and belongs to Louis Latour. Very approachable at €12 price tag. Medium nose of stewed apples. Palate with noticeable bitterness of citrus zest with slight minerality. Dosage 7g/l, but for my taste it is not very well integrated due to medium acidity. Young 20 yrs old vines. Traditional method. Ageing 24 months on lees. Increased my previous rating by 1 point.

This would be a nice wine for a summer picnic or during sunbathing at the swimming pool. It is not any serious companion for food or an alternative for Champagne, though. The structure of the wine is firm, and the bubbles are lively. The taste is fruity, but a bit too sweet, though, and it is lacking depth and distinction of flavors.

A honest sparkler, not very fragrant though it opens up after some time showing a delicate yeasty character. Stony-like minerality, lime, green apple aromas are also there. Good bubbles, not too aggressive, crisy acidity with medium body. Not incredibly complex, but can be pleasant especially if well chilled.

The nose here is dominated by mineral notes with a little citrus fruit, apple and pear playing second fiddle. On the palate i is crisp and clean with the chalkiness coming through. Talk about a nice alternative to over-priced and under-quality champagne. This wine was about $15, and can go head to head with many more expensive "real" champagnes. Small bubbles, creamy and biscuity mouth-feel, and a nice finish. I am not a huge fan of sparkling wines in general (there's just something about fizz...what can I say?) so something with a quality level this high for the price more then meets my champagne-like needs. Someone else can keep the $50 and up fizzes.

A great sparkler to have on hand to share and mix with. Not a serious wine, but a fine party wine. Would buy again for it's good QPR. Second bottle - noted some toasted nuts, toffee and coffee on the nose after it warmed a little, must have been too cold when I drank the first one.

This is pure, chalky, textbook Chablis with the soft effervescence of the crémant style. The Simonnet-Febvre Crémant just bursts with lemony chalk and flinty oyster shell notes. Full and creamy on the palate, the wine offers razor sharp acidity, brisk lemony notes and an intense lashing of flinty, dissolved limestone minerality. The finish is clean, crisp and simply begs you to take another sip. Talk about a nice alternative to over-priced and under-quality champagne. This wine was about $15, and can go head to head with many more expensive "real" champagnes. Small bubbles, creamy and biscuity mouth-feel, and a nice finish. I am not a huge fan of sparkling wines in general (there's just something about fizz...what can I say?) so something with a quality level this high for the price more then meets my champagne-like needs. Someone else can keep the $50 and up fizzes.

A great sparkler to have on hand to share and mix with. Not a serious wine, but a fine party wine. Would buy again for it's good QPR. Second bottle - noted some toasted nuts, toffee and coffee on the nose after it warmed a little, must have been too cold when I drank the first one.

Pretty good Cremant de Bourgogne from Simonnet-Febvre. Some dough, apple and caramel flavors - but nothing special.
Perhaps I didnt enjoy it as much since most of the bubbles were lost when the cage flew off with the cork when I unwound it.
