A stubborn monkey here, with a strict and linear delivery. The bead of lemon juice and pith is not astringent nor off-putting, but it is certainly sitting square in its own lane with little interest in budging in terms of flavor expansion. You feel it just wanting to pop and give up the goods, but it remains stern in posture. The speed is fantastic, but the mid palate drop is superficial. A lot of promise here, but patience is the key. The 2019 is more approachable at this stage than the 2020. Sealed with DIAM. A bit of a hard read. Try again in 7+ years.

Really bitter minerals and fruits. This might be a good definition of austere: very bitter and stern and not giving with the fruit. With time, the air helps this only a little with fruits being a bit more showy and slightly better integration.
Decant long and hard, or just wait 6-8 years to revisit. Oh, definitely killed a baby here.

Slightly exotic nose...spicy (vanilla from the oak still evident on the nose palate) and stone fruit. Satiny texture on the palate, succulent with just enough acidity to balance the ripe fruit. Very fine today, should become even more complex and interesting as the oak further integrates and the wine otherwise evolves.

Friday Burgundy Cellar Visits - Paul Pernot and Amiot-Servelle (Cote d'Or): Tasting at the domaine. Bottled July 2021. Apple and lemon on nose and palate with intense Grand Cru density. Noteworthy bright ness throughout with a long finish that is stony and minerally. Very impressive already, impressive 92-94 point potential, 2025 forward.
