30032022 - Private dinner by Chef W. This was paired with a 45 days dry aged Aussie Angus grilled over open fire with bichotan. Ruby Purple core with purplish hued edges. Fruit forward with plum, blackberries, aniseed, leather and oak. Full bodied with high to med acidity. Tannins is slightly grippy and angular. Finish is med long with peppery, smoky notes and oak. Definitely needs more time in the cellar to be more refined

65% tertiary, 35% primary fruit. Ripe and dried Bing cherry, black plum, woody herbs, tobacco, pumpkin muffin, vanilla, char, and a little dark chocolate. M+ ripe dusty tannin. High acid keeps it lively. M+ intensity. Pronounced concentration. M+ finish. M+ ruby, edging toward garnet color. Very Good, nearly Outstanding.
