Wine Flock Champagne Gala (Park Ridge CC): A time capsule in the glass. This is delicious and so much better than the younger Insignia bottles from the late 90s/early 00s. Full of wet cedar, dried tobacco, cigar ash and oodles of bell pepper. Mature plum fruit. Nice long finish.

I bought this a couple of years past release so it sat on a shelf at 72 or so in Baton Rouge before I stored it at 57 for the last 20+ years. The fill was good but the cork, came out in two pieces. Cedar and forest floor and not much fruit on the nose. It is still ruby garnet in color with only the slightest orange on the rim. Palate of very ripe red fruit and soft tannin. Good acidity and very nice spicy finish. I remember this wine was thrilling in the early 90s but now it is a wonderful old wine that is comforting and worth enjoying with the beef barley soup we had tonight. It has aged gracefully.

At first I thought this was a bust, but after 60 minutes, it really started to open up. Still, it needs to be drunk now if you have it.

Still drinking nicely. Good fruit and excellent nose. Decanted for about 30-40 min and it opened up nicely.

Still had nice life and modest tannin. Very enjoyable. Nice nose and smooth taste with a surprisingly long finish.
