Domaine Jean-Louis Chave Dinner with Erin Chave (RPM Steak - Chicago IL): Popped-and-poured. Honeycomb with tropical fruit coming across as nicely mature and slightly caramelized. Expressive aromas, even more enjoyable flavors. Best when first poured, this was getting slightly tired when finished 30+ minutes later.

Clearly a mature wine, and probably past it's prime by 5-10 years - this was nevertheless fascinating - with petrol and dried flower aromas. mango and peach notes - all flavors were lean and faded.

This actually is a pretty interesting white for me. It started with a veggie flavor, soon switched to a Sauternes kind of nose (the honey and peachy type of aroma). The palate is alright and the typical hermitage blanc sweetness can be found in the aftertaste. I liked this wine. Drink now.

Excellent, mature. Rich and broad, peach, bottle age and floral. Mouthfilling and long. This is intense and an outstanding example of a mature Chave. Probably better a few years ago, but still a wine of distinction.

Popped and poured and drank alongside the 2000. Pristine bottle. Almost Chenin like with nutty and mineral notes. However this vintage lacked the spine of the 2000 and felt a bit flat by comparison. My guess is that this one is on the decline. Still a good wine but past its peak. Drink up.
