Mostly Older Cabernet Franc Tasting (New Jersey, USA): One of 8 Cab Franc’s tasted at my “Mostly Older Cab Franc Tasting”… Double decanted at 12:30pm and tasted from 4-8pm. Nearly opaque dark garnet color. Nose has some new oak influence, lightly herbal, re and black berry fruit. Palate is quite richly textured with spice, boysenberry, black cherry, blackberry and Pomegranate. Soft, well integrated tannin, Medium acid. Long finish. Lovely wine, great with Elk and BBQ Beef Brisket. Consistently one of the top 3 wines for everyone.

I had opened the first of my three bottles of this some years ago and worried that I had held these too long. Now comes this bottle to allay those fears entirely. This was stunner, silky, smoky and nuanced despite its power, with concentrated dark cherry notes, some mocha and saddle leather. Wonderful juice.

Opened at 8AM, decanted at 12 and then served at 5pm... air really helped here. Aromas of red peppers abound. Can't go wrong, very typical cab franc taste. Pencil shavings and black ink. Very long aftertaste. Lots of fruit still. Love Paleo.
