P'Aquí P'Allá; 10/7/2022-10/17/2022 (Alicante y Madrid - España): Apricots bathed in honey with floating flowers. Bitter finish, jasmine and orange blossom aftertaste. On the palate initial glyceric attack with a firm texture. Retains acidity and not topped sweet. Undoubtedly the best wine of the day. Old but still occupying a place of privilege. The photo says everything about how the bottle has been preserved. I caught the maitre recorking bottles before offering me. Shameful.
Albaricoques bañados en miel con flores flotando. Final amargo, retrogusto a jazmin y a azahar. Al paladar ataque inicial glicérico con una firme textura. Conserva acidez y no rematadamente dulce. Sin dudas el mejor vino del día. Vetusto pero todavia ocupando un lugar de privilegio. La foto lo dice todo de cómo ha sido conservada la botella. Pillé al maitre recorchando botellas antes de ofrecérmelas. Vergonzoso.

Champagne Brunch (@Terkel): Great and classic wine. No real notes taken but it was very lovely and had a lovely depth and acidity with a decent amount of botrytis.

De Fargues vertical + Nopa (Sense, Nopa): From a 750 - just opened (no decant). Slightly closed in comparison to the 3-day slow-ox’ed 375. Mushroomy reduction. Curry. Less fruit. Slight grapefruit pith. Slow ox for a couple days is definitely the way to go for this wine, at this stage.

De Fargues vertical + Nopa (Sense, Nopa): From a half-bottle that Ashish slow ox'ed 3 days ago. (drink a few ounces to increase the surface area, re-cork, leave at room temp).
Very open nose of apricot, ethyl acetate, bristling with saffron. Savory baguette tones. The palate is classic - Medium plus acid (about average for Sauternes, though I want more) - Elevated alcohol - Very slight almond bitterness. Fresh peach. Primary fruit. Ripe peach. Ripe grapefruit. Very slight bitter almond. This is classic Sauternes.
From what I remember of the 2011 d’Yquem, the ’11 fargues has slightly more acid but less extraction than the d’Yquem.
