Bold flavours upon opening, left it to slow ox for 6 hours and decanted half to see if it changes before serving. It's more Bordeaux or aged old world style Californian cab from the 90's. Nice! First glass after decant was an umami bomb, smokey and meaty. It's giving notes of plum and blackberry on top of leather and smoke with beef stock. Kept changing over the course of the three hours it was drank. Wine of the year with Overnoy Poulsard 1990 drank with Pierre Overnoy at his house.

A most wonderful wine. It is very rare that a wine can remain superlative over a period of 4 hours but this was a rare exception.
Wendouree requires a long decanting time, normally 4 hours before consuming, I decided that I would only decant 90 minutes before consuming to see its evolution in a glass. Upon opening, it was a medium body wine, quite feminine, soft and supple. Full of menthol and eucalyptus. The colour was still one of a fresh shiraz with minimal browning.
As the wine evolved, it became quite muscular but without ever becoming a brute. The soft nose was replaced by beautiful dark fruits, plums, earthiness, white pepper and cedar. The body revealed a most delightful freshness but one with quite a linear backbone, bordering on being dried. A most elegant finish of spice and floral notes.
I am very blessed to have experienced some of the world's great Shirazes and this is up there. This is a wine that will appeal to the brain and the palate.
Drink now or 8+ years.

Dinner at S.K.Y. (S.K.Y. restaurant, Pilsen, Chicago IL): This is what it's all about! Shiraz showing it's elegant side and I'm completely here for it. The nose is sumptuous and layered with mint, dark red cherries, cranberries, currants, raspberries, licorice, tobacco, and some spice notes. There is so much depth and balance here that it's just a joy to smell. The Full bodied feel shows off a refined sense to its heavyweight nature with medium acidity and resolved, medium tannins. This is just wonderful and I'm happy to have experienced it.

Holdens: Mint and eucalyptus, dark berries, spice, earth, soy. Complexities are all woven into an evenly balanced, elegant wine with fine tannins good length.

Black berries, violet, tobacco, earth, eucalyptus. Complex. Medium bodied, quite settled and tannins almost fully resolved. Good balance. Decent length. Drink or hold.
