Domaine de Chevalier Tasting (Blacksalt): Round but sharp. Lovely floral qualities with lime and touches of honeycomb from the semillion. Cutting minerality. The oak still shows but it has integrated wonderfully.

Domaine de Chevalier Wine Lunch (Blacksalt): Incredibly youthful color that was more characteristic of a newly released wine, not a 30 year old one! Nose had smokey minerals, white flowers, a hint of diesel, and oak. For me, the palate was dominated by oak flavors. Along with the toasty oak, there was some brisk citrus flavors, and a distinct minerality that was very nice. Hard for me to get past the oak on this wine...I wonder if it needs more time???

The fabulous nose was a testament to what this wine once was...a complex and heady aroma of lemon and caramel. The tasting was an unsurprising disappointment, thought for a brief time, several hours after opening it the wine showed promise, but that soon dimmed. It had a nice lime finish. I should have found it several years ago.

With cheese, it was very good. Since I always write down my notes on the day after, I had little recollection of this wine, to be honest, except the fact that a) it was very good and b) I took a mental note to investigate white dry Bdx more from now on. No idea what it tasted like, but I was obviously seduced...
