Opened at Caprice in HK for the Four Hands Dinner. Slow-oxed for 45 mins before serving, and enjoyed for a long time over dinner.
The classic Roumier x Chambolle nose of red fruits and floral notes was there from the first sniff - but this was accompanied by a hint of reduction as well. Thankfully, this blew off after another hour in the glass, and really started to sing.
This is a gorgeous village Chambolle, and Roumier always delivers. Importantly, there is a lot of backbone and structure to this wine - don't let the appellation fool you. Stood up extremely well to an amazing line-up of La Tache, Soldera and La Landonne, and was an excellent way of opening the dinner.
I would revisit this wine in 3+ years, I feel like there may be some upside. It will certainly smooth out, and will keep for a very long time.

So good even though it's insanely too early to drink this. Nose has so much floral and red fruits, certain lightness but with density if that makes sense. Soooo much structure. Probably opening next bottle in 5-10 years.

Évidemment, la surprise de la soirée: ce fut le vin le moins apprécié du groupe. Besoin de temps sans doute, car le domaine a prouvé depuis longtemps que son Chambolle Villages est bien meilleur que ça.
