Beauty! Tamarind on the nose. Dark color, nearly opaque, belies its age. Plenty of fruit with balancing acidity on the palate. Substantial wine. Still youthful, could develop over next 5 years and hold for at least another 5 beyond. Exceptional wine!

I agree with all prior comments, which are right on. Just PnP so far, and a bit oaky on first impression, but suspect that will blow off, and it will open up.
An hour later and this is much improved. Rich, full-bodied and juicy. Lovely stuff.

Deep color at 17 years old. Blackberries and licorice in the nose with hints of chocolate, floral and minerals. Flavor very much like the nose with concentrated black fruits. Well balanced and a smooth long lingering finish.

This is stunning. I agree with most on this. Iron, raw meat, black olive but with a savory, mouth watering quality that is just hard to resist going back to again and again. There is no way this is past its prime. What a great wine. So glad I have one left. A dead ringer for N. Rhone. Bought on release direct and perfectly cellared.

Not muchthere first night. Left 1/3 of the bottle for tonight. ALot more white pepper showed up and the wine acted like it was at the end of being a bigger brawny wine. Not sure where some of this was yesterday, but it was a better vibrant wine today.

Held this one too long. Still good but past it’s prime. Violet nose. Tar, black olives, herbs, leather, burnt toast and bacon up front with blueberry jam and cassis underneath. Still a tinge of acid to balance but flatter and shorter finish than it had a couple years ago, when this was a 90+ wine. Drink em if you got em. Edit: drank the last part of the bottle tonight - two days after opening my last bottle, hand pumped air. It was better. Waaay better. Wtf? Less blueberry jam (good), no heat (very good), burnt toast gone (excellent), currants up front and all the bacon olives herbs etc still there with but acid shining through. Excellent aged Syrah. This wine just wont die. Wish I had more!

I'll be honest I came to this with limited expectation and while it wasn't great it was really a solid bottle of Syrah. It seemed northern Rhone-ish though a bit bigger, but not out of balance; a solid effort with several years of upward development.

Decanted for 30 minutes before service. In the glass, looks quite young - saturated purplish-red, darkening to near black at the core. On the nose, a burst of barnyard funk and crushed berries; so strong on the funk that I would have guessed CdP blind. On the palate, nice complexity, with black fruits, tapenade, fresh ground pepper, and savory herbs making appearances. A pleasant surprise!

Good but not great Pax wine. Drank over two days. Not much of a difference between. This probably would have been better two years ago so please drink these now. Nose of iron and garigue with some other herbs in there. Some bacon, earth and dark plumby fruit on the palate. I love this style of wine.

This was quite nice. Typical gamy bloody Syrah. Tiny touch heat even though only 14.4% etoh. Ive got to say that I'm absolutely hate wax coating. Just irritates me. Otherwise, wine was steady over an hour or so. Saved half bottle for tmrw.

It was like a Prussian wine: blood and iron. Very dark, almost black in color. Blood, iron and dark berries vie for predominance, with savory herbs rounding out the flavors. The texture was almost gritty (but very little sediment), with a strong tannic backbone. There was nothing pretty about this wild and forceful wine, but it was quite interesting to drink.

Last tasted a little over 2 years ago. The harshness of the tannin has subsided and the wine is a lot softer now; the tannin however is still slightly noticeable. Like the last tasting: " a fragrant and complex nose of blackberry, black currant, raspberry, game meat, leather, smoke, some black pepper." Intense, rich and somewhat viscous in the mouth. A better balance this time. A long, spicy finish. I'm going to give the next bottle another 2 years; maybe.

Inky purple, definitely a teeth stainer. This put on a little bit of weight/tannins over time, but the palate didn't change much over a couple hours of consumption. However, upon opening I thought it a dead ringer for an Australian shriaz but over time it seemed more northern Rhone-like. Distinct aromas of kalamata olives and a touch of meat. Flavors of dark dried fruit, bramble, and spice on the palate. A lingering finish with smooth yet dusty tannins.

Drinking absolutely great right now. The cork seemed a bit soft, but the wine was pristine - it really showed well in a Riedel pinot glass. Tasty fruit with a big smoky nose. Couldn't stop topping off my glass. Reminded my of Cayuse, for a fraction of the price.

I preferred the opening profile, which was at a cool cellar temp. Graphite, tar and dark cherries. It became less elegant, gaining considerable heat and a little tannic structure. The wife says "it became more integrated. Early it was wood, then fruit, now they hit you at the same time." I did like the late leather notes. This wine is certainly not near the end of it's days. I'd hold my last until 2016 or later.

4 years in between bottles. I have drank a lot of syrah since that time, my tastes have also changed so I appreciate revisiting a bottle as this one, especially this vintage of Pax, which I still believe is the best he made. I opened this wine about 90 mins ago, no additional decanting. Classic whole cluster nose of smoke, herbal and florals--really quite distinctive. Texturally, this has some weight but it's balanced by the iron, cherry, tar, menthol, soy and blackberry notes that add a softness to the palate. The acidity feels about right to me now, with this level of aging, and it freshens the fruit and brightens the finish, which shows a gamey/savory note, much like some of the leaner Wind Gap syrahs like the Armagh vineyard that Pax is making today. There is some residual tannin here but I'd say it's mostly integrated at this point and seems like the wine is in the optimum window. Finshed through dinner, where olive and dried flower became more prominent, too. The drink window for me would be now through say 2016. Like the 2005 Castelli-Knight (which is drinking fantastic and is more youthful then this Keltie) and the 2005 Alder Springs Terraces I drank last week (which is doing great), these 2005 Pax wines are just super.

Initial taste during decant, this wine seemed austere and dominated by acidity. Returned the decanter to the cellar for a couple hours. With the benefit of air, and with food (spaghetti and meatballs) this wine really comes to life, still very savory with smoked meat and spice notes, but very complex and enjoyable.

Inky dark garnet; completely opaque; the rim is still purple. A fragrant and complex nose of blackberry, black currant, raspberry, game meat, leather, smoke, some black pepper. It's hard to get a grip on all of the flavors due to the abundant tannin and acidity, but the fruit seems rich and fairly concentrated. Again the tannins are not resolved and cause a noticeable acidic sting on the tongue. Kind of creamy and viscous in the mouth. Lots of acid, possibly too much. A long, spicy finish that is slightly hot. Hopefully, this wine is in an infant stage and will get better! Probably needs a few years to evolve. Food, in my case pork roast, seems to abate the acidity of the wine. NOTE, 24 HOURS LATER: the wine has opened up quite a bit. The flavors are now somewhat discernible: blackberry, black currant, raspberry, cocoa, graphite and lots of spices. Big, rich and full bodied in the mouth. Still a little acidic on the tongue though. Score revised from 91 to 92. Should get better down the road.

Decanted three hours before service, and it needed all of that. In the glass, dark saturated red fading to black at the center. On the nose, a mix of crushed blackberries and a bit of salt water. On the palate, very one-dimensional blackberry liqueur initially, but over the next hour, there were hints of violet, strawberries, and smoky wood. The tannins are not yet fully resolved, but neither are they a serious impediment to enjoying the wine. The bigger problem is that I'm not sure there is enough stuffing for this to get past the one-dimensional flavor profile.

Nose of smoked meat, red raspberries and cherries. Palate shows creamy textured red fruited wine with tremendous verve and attack. Hints of blueberries, framboise and sarsaparilla. After 3 hours open it really starts opening up and showing itself; fragrant, juicy and really just a nice drink. It gets a bit darker and some blue fruits start popping. Hint of tartness start being evident, but this does not detract, it just adds interest. I also get some pretty floral notes, leather and tea. I almost want to say this is fully resolved, but the way this has now become tells me there is no rush to consume these. Finish goes long and true. Pretty decent Saturday if you ask me.

Way different that my last tasting experience. Alluring nose of graphite, smoked meats, and resin but on the palate it was just a wound up acid monster that just wasn't enjoyable. I saved a glass for day two and it was even worse - whatever fruit was there to begin with was simply overwhelmed by that searing acidity.

From a magnum. Double decanted 4 hours ahead and drank over the next 2. Deep dark blue/purple. Nose of cedar, violet and smoke. Initial taste was restrained up front but it blossomed in the glass showing off blueberry, dark raspberry and meaty richness. Very juicy on the palate with a nice acidic lift on the finish, with some still chalky tannins, that went on and on. Real nice bottle that could still go a few more years easy.

1.5. Nearly P&P. Dark, inky purple. Drank at Italian Rest in AZ for Alex's graduation night. This is drinking great right now. No great notes, just good stuff, thick, juicy, meaty flavors, long rough and tumble finish. Chocolate, black fruits, tannins are there and weight, no oak, just good good stuff. Not as much acid as wines I have been drinking lately and I think more to my current flavor profile. Have 2 more of these and bunch of Pax. Great to know I can start cracking the wax.

This was the fifth wine of th EONY DineAround. Now, this kicked it up a notch. Another great example of Pax/Donelan when they rocked! Stood upright for a few hours in a cool cellar. Popped but not decanted for an hour. Inky dark purple. Nose of triple berry pancake syrup from Perkins and those dry oil cured black olives. In the mouth... Wow, quite a chewy wine! Dark berry juice and olive paste on the front with a tannic and acidic finish. Served on its own, it was interesting but took a little work to enjoy. Served with a marbled ribeye, the acid became less harsh and the impressive tannins helped cut through the fattiness.
Save your bottles. Plenty of stuffing. Needs cellar time but has a ton of potential. 88 now, but I could easily see this in the 90s with some cellar time.

Decanted for 2hrs. Lovely nose of precise blackberry, potpourri, incense, damp rocky soil, seasoned wood, game and a touch of mocha. Precise and bright in the mouth with the flavors echoing the nose with the addition of a green olive, stemmy note. A racy, floral finish displaying red stone fruit, some pleasing soil notes. Needs a few more years but very promising. The one downside - a sense of manipulation. Overt acidification?

Joe Donelan told me this was his favorite of 2005. Sure paired well with our spicy Crab Cioppino. Decanted 3 hours before guests arrived then put back in the bottle and left on the table until dinner 2 hours later. Over that span it blossomed into a beautifully smooth unctuous wine. With only 5 red wine drinkers at the table this magnum sure emptied quickly. Best Cali Syrah blend I've ever had.

Popped and poured. Nose was immediately intriguing with bacon fat and olive tapenade. Blackberries, chalk and pepper were present on the palate. Kept some for day 2, and though still pretty enjoyable on its own, this was even more amazing with chicken parmesan and marinara. Overall, this wine channels the Rhone in a very good way.

Opened for 2 hours then decanted and consumed over 2 more hours. Deep black coloring, backwards and chalky prior to the decanting. Interesting aromas with black tea and clove; clove continues in the flavor profile, with rich dark fruits, slight spice and young leather. Approachable but still young and a few years from peaking; again, its good to see a Pax in a drinking stage where so many have been too tight to drink.

This stuff is seriously delicious. Better this time in a blind tasting than with dinner, though. This drinks well on its own. Blackberries, leather, tobacco, stone. The fruit has the muscle to stand up to the earthy flavors in this bottle. Will definitely buy more.

Hanging With Stevie N and The OC Gang, Doing It Blind (Antanello's In Costa Mesa (Orange County)): Had a bit of what I call a "rubber" or tire smell on the nose. I don't like this kind of aromatic signature and I found it there, although not dominant. Deep olive, blackberry, menthol, some green notes, chalk and chocolate. Some really liked this wine, but for me, it needs time again to let the whole cluster setttle in. Full weight and big wine, for sure.

Jesús Barquín brings Equipo Navazos to Queens (Fernando's House): Deep ruby color. Knockout, voluptuous nose of toast and tar with masses of sweet black and red fruits, black tea as well. Boysenberry essence on the palate with notes of sweet chocolate. This is an over-the-top wine, however the palate drops out into the finish. It may need time to come together, or may not be quite firing on all cylinders.

The nose had loads of blackberry mixed with flowers, plus hints of tea, chocolate, and game. The palate was thick and rich, and had lots of dark fruit, some licorice and pencil lead, and finished with some dirt and spice.

Yes, yes, too young to open but it's sometimes nice to see a wine before it blooms. Very young and showing a whole bunch of stemmy cluster--both on the nose, as well as on the palate through that menthol feel. Some olive and blackberry and shows promise but by god, give this wine 2-3 more years.

Wonderful - a real powerhouse so young. Very smoky. I suspect it will go for quite a while, and continue to improve for much of that time. My first Pax, and I'm looking forward to trying the Terraces, and then letting the rest sit for several years.

Pax Wine Cellars Spring 2007 Open House (Santa Rosa, CA): Barrel sample. Stemmy veg aromas, dark fruit, licorice, very earthy with dense, chewy tannins. Really impressive structure. For me the most interesting syrah in the lineup today, although i missed the Griffin's Lair.

Nose of iron and garigue with some other herbs in there. Some bacon, earth and dark plumby fruit on the palate. I love this style of wine.

It was like a Prussian wine: blood and iron. Very dark, almost black in color. Blood, iron and dark berries vie for predominance, with savory herbs rounding out the flavors. The texture was almost gritty (but very little sediment), with a strong tannic backbone. There was nothing pretty about this wild and forceful wine, but it was quite interesting to drink.

Last tasted a little over 2 years ago. The harshness of the tannin has subsided and the wine is a lot softer now; the tannin however is still slightly noticeable. Like the last tasting: " a fragrant and complex nose of blackberry, black currant, raspberry, game meat, leather, smoke, some black pepper." Intense, rich and somewhat viscous in the mouth. A better balance this time. A long, spicy finish. I'm going to give the next bottle another 2 years; maybe.

Inky purple, definitely a teeth stainer.
This put on a little bit of weight/tannins over time, but the palate didn't change much over a couple hours of consumption. However, upon opening I thought it a dead ringer for an Australian shriaz but over time it seemed more northern Rhone-like.
Distinct aromas of kalamata olives and a touch of meat.
Flavors of dark dried fruit, bramble, and spice on the palate.
A lingering finish with smooth yet dusty tannins.

Drinking absolutely great right now. The cork seemed a bit soft, but the wine was pristine - it really showed well in a Riedel pinot glass. Tasty fruit with a big smoky nose. Couldn't stop topping off my glass. Reminded my of Cayuse, for a fraction of the price.

I preferred the opening profile, which was at a cool cellar temp. Graphite, tar and dark cherries. It became less elegant, gaining considerable heat and a little tannic structure. The wife says "it became more integrated. Early it was wood, then fruit, now they hit you at the same time." I did like the late leather notes. This wine is certainly not near the end of it's days. I'd hold my last until 2016 or later.

I have drank a lot of syrah since that time, my tastes have also changed so I appreciate revisiting a bottle as this one, especially this vintage of Pax, which I still believe is the best he made. I opened this wine about 90 mins ago, no additional decanting. Classic whole cluster nose of smoke, herbal and florals--really quite distinctive. Texturally, this has some weight but it's balanced by the iron, cherry, tar, menthol, soy and blackberry notes that add a softness to the palate. The acidity feels about right to me now, with this level of aging, and it freshens the fruit and brightens the finish, which shows a gamey/savory note, much like some of the leaner Wind Gap syrahs like the Armagh vineyard that Pax is making today. There is some residual tannin here but I'd say it's mostly integrated at this point and seems like the wine is in the optimum window. Finshed through dinner, where olive and dried flower became more prominent, too. The drink window for me would be now through say 2016. Like the 2005 Castelli-Knight (which is drinking fantastic and is more youthful then this Keltie) and the 2005 Alder Springs Terraces I drank last week (which is doing great), these 2005 Pax wines are just super.

Initial taste during decant, this wine seemed austere and dominated by acidity. Returned the decanter to the cellar for a couple hours. With the benefit of air, and with food (spaghetti and meatballs) this wine really comes to life, still very savory with smoked meat and spice notes, but very complex and enjoyable.

It's hard to get a grip on all of the flavors due to the abundant tannin and acidity, but the fruit seems rich and fairly concentrated. Again the tannins are not resolved and cause a noticeable acidic sting on the tongue. Kind of creamy and viscous in the mouth. Lots of acid, possibly too much. A long, spicy finish that is slightly hot. Hopefully, this wine is in an infant stage and will get better! Probably needs a few years to evolve. Food, in my case pork roast, seems to abate the acidity of the wine. NOTE, 24 HOURS LATER: the wine has opened up quite a bit. The flavors are now somewhat discernible: blackberry, black currant, raspberry, cocoa, graphite and lots of spices. Big, rich and full bodied in the mouth. Still a little acidic on the tongue though. Score revised from 91 to 92. Should get better down the road.

Decanted three hours before service, and it needed all of that. In the glass, dark saturated red fading to black at the center. On the nose, a mix of crushed blackberries and a bit of salt water. On the palate, very one-dimensional blackberry liqueur initially, but over the next hour, there were hints of violet, strawberries, and smoky wood. The tannins are not yet fully resolved, but neither are they a serious impediment to enjoying the wine. I almost want to say this is fully resolved, but the way this has now become tells me there is no rush to consume these. Finish goes long and true. Pretty decent Saturday if you ask me.

Initial taste was restrained up front but it blossomed in the glass showing off blueberry, dark raspberry and meaty richness. In the mouth... Wow, quite a chewy wine! Dark berry juice and olive paste on the front with a tannic and acidic finish. Served on its own, it was interesting but took a little work to enjoy. Served with a marbled ribeye, the acid became less harsh and the impressive tannins helped cut through the fattiness.
Save your bottles. Plenty of stuffing. Needs cellar time but has a ton of potential. 88 now, but I could easily see this in the 90s with some cellar time.

Joe Donelan told me this was his favorite of 2005. Sure paired well with our spicy Crab Cioppino. Decanted 3 hours before guests arrived then put back in the bottle and left on the table until dinner 2 hours later. Over that span it blossomed into a beautifully smooth unctuous wine. With only 5 red wine drinkers at the table this magnum sure emptied quickly. Best Cali Syrah blend I've ever had.

Interesting aromas with black tea and clove; clove continues in the flavor profile, with rich dark fruits, slight spice and young leather. Wonderful - a real powerhouse so young. Very smoky. I suspect it will go for quite a while, and continue to improve for much of that time. My first Pax, and I'm looking forward to trying the Terraces, and then letting the rest sit for several years.

Pax Wine Cellars Spring 2007 Open House (Santa Rosa, CA): Barrel sample. Stemmy veg aromas, dark fruit, licorice, very earthy with dense, chewy tannins. Really impressive structure. For me the most interesting syrah in the lineup today, although i missed the Griffin's Lair.
