Disgorged in 2020, the brilliance behind this bottle was the youthfulness it possessed. Immediately greeted by a highly aromatic nose of citrus fruits, florality and distinct nuttiness. The palette, though, blew me away. With racing acidity, I found myself loving the youthful balance of green apple and lemon with notes of toasted brioche, stone fruit and minerality that accompanied. Lighter in body, this bottle has a long life ahead of it, but in its youth, it’s definitely one of the most exciting bottles of vintage Champagne I've opened recently.

Easily becoming a favorite producer of mine, I'm always amazed at the balance these have between the oxidative and reductive style. Toe, no one really straddles that line quite like Billecart. Cuvee Nicholas is a champers I would own three dozen of, and maybe if I win that 1.55 billion dollar lottery I would probably be able to do that 😂. Yellow fruit, minerality, stone ground white peaches and pears. Just delicious. This 2007 is a youngster and really probably needs a few years. I'd drink the 2002s if I were you. But they are ALL delicious from entry level to rhe top bottling!

Nose is crisp with lemons, lemon zest, and yeast. Beautiful acidity, minerally charged, succulent and fresh with lots of fermented lemons, lemon pie, toast. The ending is oaky but not heavy, and quite long. A great Champagne, very complex but fresh and with a fine mousse - certainly still young.

More balanced than the '06 from about 8 months ago, which showed quite lean; this had more biscuit and toastiness, but not the depth of the '07 Taittinger CdC, which I love. Drinking well now, but I think these have plenty of time in front of them.

Based on very high praise from palates similar to mine, I had expected to like this more. Perhaps a funny phase or a funny bottle (total wine), but this didn’t show the depth or grandeur to me that it seems to have shown others. Still, the fresh pear and almond notes, accented by a little lemon zest, are quite tasty. Lightish bodied with zippy acid.
Initial note is very toasty and lemony. On the palate, very high acidity. Tartness is noticeable. After sometimes in the glass, it is more manageable. Has potential but not nearly as nice as champagne in the same price point.

Light gold color. Drank a couple glasses over 90 minutes. Very nice and consistent with my note from last Fall. This is just a lovely bottle of CNFB. It has all the elegence and finesse you want. Just the right amount of toast and nuttiness, brine, sea air, a mix of orchard fruit and citrus notes, that same crystalline limestone as before and a bright floral aspect as well. Maybe a tad better than the previous bottle. 94+ to 95pts.

Medium gold. Lovely mousse. Initially this is quite acidic and driven by citrus. Then it softens and expands to show excellent depth and mouth feel. Not as complex as the 2002 and perhaps a bit awkward at this point, but very nice nevertheless. Will age for a long time.

Super fun wine. Explosions of citrus, lemon, orange, and some grapefruit flesh. Lots and lots of acidity at the front end, tapering off to bready body and some nice minerality to round out the palette. A noticeable aged character hiding behind it all, too. Beautifully structured with pleasant and lush mousse. Enjoyed in both flutes and universal glasses. Some of the luster wore off about 2 hours after opening as the mousse faded, but worth the purchase.

Gyllen på farge, klar og ren og med livlig delikat mousse med lette fine bobler. Rund munnfølelse, flott smakskurve som ender i en elegant lang lengde. Aromaer som epler, marsipan, nøtter, aprikos og kaffe. En champagne som er ekspressiv med flott dybde, balanse og syrestruktur (medium pluss) og i et fantastisk vindu. A Little Bit of France at Spoon (Spoon & Stable, Mpls, MN): Light gold color. Drank a glass plus over 90 minutes. This was our first foray into the '07 CNFB. I thought this showed well with sea breezes and yeast up front, quince, rising bread dough, pear cream, briny minerality and acacia flowers. The palate comes off as well delineated, with white apple, lemon, lemon chiffon, bread, green apple and crystalline limestone. This has good complexity and plenty of lift on the both the nose and palate. I think this bodes well for the future. 94(+)pts.

This is a yeast-beast that leads with a raw dough note on the initial hit, but what might appear to start out as an autolytic invariant, finds a fast flow into more preserved lemon, Rainier cherry, red apple, and ginger notes. Quality is high, though I'll say I prefer the 2002 to this 2007, mostly for the 2002s ability to bring succulent fruit to the table without relying on the leesy characteristics to make it any more captivating. That is to say, the 2007's breadth comes from its more bready posture. The 2002 gets its girth from the fabulous fruit expression.
I didn't get the acidic drive or striking minerality as others have described. It was more about bread and olive oil than super tension and formidable frame in my opinion. Nevertheless, this 2007 is a fine Champagne indeed, especially for the vintage. Built for for those who like the big house chewy style.

60% Pinot noir, 40% chardonnay. 10 years on lees. Dosage: 6 g/L Per the somm, from a tough 2007 that rewarded pinot noir in the blend. Regardless, this champagne bursts with aromas of flowers and lemon cream with some ripe apple and pear on the back end. Electric attack with vibrant yellow orchard-fruited body and zipping acid. A plush creamy line heralds a long fanned out finish marked by a fine mousse, rippling acid, a dollop of cream, and that golden apple and pear.

So far the '07 bubbles seem to show so well young. This was no exception. Very aromatic, bursting with ginger, caramel, peach pit, marly earth notes, orange peel; on the palate it was elegant, almost evaporated, but still very dense and flavorful leaving a strong residue of flavor behind. Fine bubbles, long finish, powerful yet super elegant, this '07 seems to have it all and is superb right now. Best with big, richer meatier and briney-funky oysters. Light delicate or tamer oysters just get buried by this wine. Can't wait to try the '08. This kind of torched the Laherte BdB Brut Nature, which was a complete opposite of a wine, but really nice juxtaposition. Watergrill w/T

A Fantastic Thai Meal with Some Cracking Wines (San Francisco): First time I've had this. Fine bead, frothy. Medium bodied, just off dry to my taste. Excellent minerality and bitter citrus. Penetrating, long, and lively. I much preferred this to the Clos Lanson from the same vintage.

Very good and proper super cuvee status here and with a decent level of star factor. Round and rich, good use of oak too , light brioche and toast but with a full apple feel across and a rich long palate presence. Fine wine for sure and pretty good now. We felt the only negative of this was that it didn't inspire that this could age from here and thus we suggest one has this sooner than later. 92-93

Blind. I really thought this would be a grower champagne from one of the leaders in the style. And that's a compliment. There's a light brioche note on the nose with medium plus acidity driven by a citrus profile. I assumed this was blanc de Blanc, I'd be wrong but that's how it tasted. Special notice goes to the solid chalky foundation. Excellent one

Billecart-Salmon Cuvée Nicolas Francois 2007, 40% chardonnay og 60% pinot noir, degorgert: 07/19, dosage: 6,1 g/l, anbefalt av Terje, thx! Ved åpning finner vi aromaer som våt stein, våt ull og rekeskall. Etter kort tid er det meste av dette borte og vinen er noe sky på nesen med gule epler og mineralske toner. Etterhvert dukker det opp lette nøtte-aromaer. Men den holder mer enn den lover, for på smak kommer det et vell av søte steinfrukt som aprikos og nektarin, litt jordbær, samt syrlig limezest i tillegg til en lang utgang med modne, grillede sitroner. Etterhvert så dukker det også opp lette kaffetoner, og da jeg indikerte sånn fruktig etiopisk, vettu, så mente min bedre halvdel at han kunne kjenne at bonden hadde hatt seg to dager før innhøstning… ok, point tanken😋 Moussen er fluffy og delikat og munnfølelsen er uhyre fin og fruktig. Man kan neste kjenne frukten på tennene lenge etterpå.
Dette var elegant og delikat champagne og alt annet som er godt. Syren er der, ikke knivskarp, men medium pluss og dette er da en vin man bør følge over tid, evt dekantere, for den har mye å by på! Flott til fin-mysing.

Lightly chilled and then decanted just before dinner. Lively on first pour but the decant really knocked the bubbles out when it came into the glass. The nose is instantly alive, with green apples, a dash of citrus and some nougat. Round body but not overly rich, with bright fruit married with light toffee. Definitely dry and great with food. Much more enjoyable than the 2006 but without the stuffing of the 2002. This will improve but is drinking really nicely now.

Very subtle on the nose, a little tight, some nutty development yet very fresh at the same time; bright entry, nice fruit, quite a dry style, dry biscuity character. Delicate. You need to contemplate this one, a slow burner.

Very saline, citrusy, was well received. Drank alongside the 02, which I preferred for its more classic notes of brioche and smoke notes. But this was also good.

Very good and proper super cuvee status here and with a decent level of star factor.
Round and rich, good use of oak too , light brioche and toast but with a full apple feel across and a rich long palate presence. Fine wine for sure and pretty good now. We felt the only negative of this was that it didn't inspire that this could age from here and thus we suggest one has this sooner than later. 92-93

magnificent bubbles fine like floating on a cloud. wild berries, fig, bright with some apple tart pie, butter! A very well aged wine!! full of layers and depth!

Third time with this in the last 12 months. Its one of those champagnes in the middle of the road that does not say anything, yet it doesn't taste bad enough to hate. Then you move on to other wines in the evening and you forget that you even had this. Another 150 down the drain....DRINK

Yeast nose with nice apple and pear notes. The mouthfeel is gorgeous, with a nice mousse, apples, lemon blossom, some melon, and then nice notes of vanilla and oak on the perfectly-measured length. A stunner.

Nice enough but easily overpriced and drinks closer to the $75-100 range. Fairly lean with yellow fruit, green apple, honey, oak and a little must. Good but likely needs time as it’s not overly exciting now.

Ved åpning finner vi aromaer som våt stein, våt ull og rekeskall. Etter kort tid er det meste av dette borte og vinen er noe sky på nesen med gule epler og mineralske toner. Etterhvert dukker det opp lette nøtte-aromaer.
Men den holder mer enn den lover, for på smak kommer det et vell av søte steinfrukt som aprikos og nektarin, litt jordbær, samt syrlig limezest i tillegg til en lang utgang med modne, grillede sitroner. Etterhvert så dukker det også opp lette kaffetoner, og da jeg indikerte sånn fruktig etiopisk, vettu, så mente min bedre halvdel at han kunne kjenne at bonden hadde hatt seg to dager før innhøstning… ok, point tanken😋
Moussen er fluffy og delikat og munnfølelsen er uhyre fin og fruktig. Man kan neste kjenne frukten på tennene lenge etterpå.
Dette var elegant og delikat champagne og alt annet som er godt. Syren er der, ikke knivskarp, men medium pluss og dette er da en vin man bør følge over tid, evt dekantere, for den har mye å by på! Flott til fin-mysing.

Lightly chilled and then decanted just before dinner. Lively on first pour but the decant really knocked the bubbles out when it came into the glass. The nose is instantly alive, with green apples, a dash of citrus and some nougat. Round body but not overly rich, with bright fruit married with light toffee. Definitely dry and great with food. Much more enjoyable than the 2006 but without the stuffing of the 2002. This will improve but is drinking really nicely now.

Very dry, vertical with good depth. A wee bit closed right now, needs time, a very serious champagne with a personal touch and a stringent acidity; not a night club champagne, quite the opposite, actually.

Drank to celebrate Kristen’s birthday. Pretty lemon , bone dry, for me all about elegance and subtlety. Neither big nor showy but well balanced and put together.

Very subtle on the nose, a little tight, some nutty development yet very fresh at the same time; bright entry, nice fruit, quite a dry style, dry biscuity character. Delicate. You need to contemplate this one, a slow burner.
