Was the star on Xmas, paired with tenderloin and following 2018 Realm BTK. This was on point tonite and in a perfect place. I wish I had more. The corks should be popping on these babies
Nothing wrong here. Should hold for a few more years if desired but doubt it will get much better. Better back end than the front, which if I had to choose only one would be so. Lingers on the pallet for a good 2 minutes, mixing perfectly with the bleu cheese and crackers I’m noshing on alongside it.

Big wine that struggles to hide the alcohol. Great with very big dishes, like pasta with tomato sauces and the like. I truly wish the bottle didn't weight 50% more than the wine itself.....I measured the empty bottle and it weighed 2 pounds, 10.9 ounces, compared to a Dunn Napa that I had to compare it with which weighed 1 pound 3.8 ounces.....That's more than DOUBLE the WEIGHT! Think about this, if you are paying to have this shipped (which most of us are, one way or another)...that is an additional 17 pounds/case of 12. This will be the last I buy from this winery.

1 hour decant on a 750 we cellared from its birth. This 15 year old is still drinking very nicely with plenty of acidity and mountain tannins. Lovely, somewhat floral bouquet leads to a nicely blended red tasting with just enough pizzazz to wow - but still balanced enough to accompany a good meal. Bravo.

Quite good. Coming from someone who lost interest in cabs and Bordeaux blends a few years ago, that is significant praise. Pahlmeyer stands out among Bdx blends and cabs. The blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec works very well — excellent balance of cab s. with the softer varietals. At an excellent age now, 15 years.

Packed this in my suitcase for a trip to Southeast Florida and made reservations at Max’s Grill in Boca Raton with a reasonable $25 corkage fee. They didn’t have a decanter available but we slowly drank this over a two hour dinner and it showed the subtle power of a top flight Napa Cab blend. I don’t like to use a lot of descriptors in my tasting notes but those of us who have had the pleasure of drinking aged Cabernet from Napa and especially the 2007 vintage know exactly how this wine tastes.

Decanted for one hour. Rich, enveloping, layered flavors of black currant, raspberry, mocha, cedar and herbs. The wine is full bodied, concentrated and long. It is pretty full throttle and almost comes off asa bit overdone but overall I think it delivers. Will continue to age for a long time.

Slow ox for one hour. This wine disappointed me a bit and I almost wondered if it was an off bottle. Black currant, herbs, smoke, a little wood. Full bodied, taut, big a little ungiving and not showing much complexity. Should I have decanted it more?

Just perfect at this 12th year in bottle. Nose muted after few hours open, the fruit is there, rustic feel, then acids, tannins, all in balance and all know their place. More austere than the same year Merlot had the other night.

This was just lovely with a double decant. back in the bottle for 3 hours. I must admit, without formal notes on prior bottles, I don't think was as good from a fruit standpoint as it was a few years ago, but it was very, very enjoyable. What was evident however was that the empty bottle weighed more than most full bottles of Bordeaux. They have a lot of money in the bottle.

For Once I actually agree with the "EXPERTS" as this was absolutely outstanding last night. Subtle nose of earthy tones, minerals, as it pours to a deep ruby color. As it opened flowers and berries take over and from the 1st taste a deep explosion of bright fruits of blueberry and blackberry. Surprisingly sweet tannins not the deep chunk I like were actually perfect for the finish and as the hour wore on, it got even better as it opened. Can easily store for a few more years Outrageously good!

First sip was a little thin and underwhelming. I was afraid I picked the wrong week to open it as I've read the 2007's are still very temperamental. But after a good 2 hour decant it was what I had hoped, and it improved further in the glass. Very well-balanced fruit and secondary flavors developing. If you've stored yours properly there's no rush to drink up, but if you do in the short term, give it some air first.

Wow. What a difference a year or a bottle makes. Popped and drank over couple of hours. Dark chocolate blast upon opening, rich dark fruits, wonderfully integrated oak, long clean finish. Beautiful wine. Not sure why my last note was so uNflattering but tonight....pahlmeyer was banging. Zero heat which I always appreciate at 15.2%. Sad I only have one more.

Nose: Upon opening, before decant, still very tight in the nose. Initially, alcohol on the nose followed by dark fruit: Cherry, raspberry with some cedar-box, pepper and cocoa. Needs to open… way to “hot”.
Decanted for 3 hours… Color: Deep purple-ish red with a slight clear edge.
Nose: Totally softened, relaxed, and chilled out! Not the alcohol high from right out of the bottle. Cherries, raspberries, blackberries, a fresh fruit stand with lots of cocoa, earth, leather with a softened pecan woodiness to round out everything.
Taste: Wow!! Right out of the box, there’s a distinct mint and eucalyptus flavor that’s fantastic with subtle dried dark fruit, leather notes, pepper notes and some earthy notes. Soft, but still ballsy tannins with an abrupt solid, dry ending. Drink now my friends, this is beginning to lose its fruitiness!

Decanted, poured first glass immediately. Garnet/purple color. Delicious nose of black fruit, coffee, chocolate. herbs. I'm not vibing the notes that say "low complexity." I'm finding this to be a robust, interesting complex wine. Black fruit, toffee, milk chocolate, cedar, secondary hints of anise, pencil lead, earth. I also wouldn't describe the mouthfeel as "velvety." It's luxurious and wonderful, but to me, more full-bodied and "Left Bank" than the velvety "Right Bank" experience. We've been big fans of the Pahlmeyer PR for years. This is the first '07 we've opened in a while, and I was very impressed, drinking extremely well.

Probably one of the best wine I tasted, and I tasted a lot!!! It has everything we love about Left Bank Bordeaux PLUS the best of what we love about Napa. Structure, body and complexity from Bordeaux, aromas and flavors from Napa. Very good mouthfeel and finish. The only criticism is that it is a bit high in alcohol otherwise it is a very enjoyable and impressive wine. It is perfect now and can easily last for 10 plus more years!!!

Just letting you know that on 4/4/20 this wine is still a 93 pointer. I was surprised that this wine was a good as it is. Just a wonderful balanced and Cab fruit wine. My only complaint is the bottle is so heavy. I am not a big fan of tall and heavy bottles. Even SE is a regular bottle. Anyway I feel privileged to drink this wine. Ever since Pahlmeyer sold I have distanced myself from the winery, just a personal decision. I got drawn in when Parker compared their Merlot to Petrus. That is a distant memory.

Decanted three hours. Full in the nose with aromas of blackberry, wild flower and tobacco. This wine is very well made in a modern style with concentrated, somewhat hedonistic flavors of cassis, blackberries, matchstick, and herbs. Full bodied, somewhat open knit, with silky tannins and a long finish. Has at least 10-15 years ahead.

The nose is rich with dark fruit and mocha. On the palate, fruit dominates, with dark berry and a lush texture balanced with mild tannins and acidity. But earthy notes arise as well, with subtle mushroom, cigar, and eucalyptus flavors. This wine is complex, balanced, and beautiful. Drinking very smoothly now -- any unpleasant heat is gone. Earthen fruits, resolved tannins. While it will cellar longer, it likely won't evolve further. Decant for 90 minutes and enjoy.

Brought this one to Coco Pazzo in Chicago, dinner with John M. Had the somm decant it for about 30 minutes prior to drinking...first bottle from a batch bought at release.
Deep garnet/purple color, no signs of separation. Fragrant nose showing dark cherries, cinnamon/spice, violets. Full bodied, expressive palate showing dark berries, blueberry, fruits, cassis, tobacco, savory notes, and smoke...a lot going on, expressive through the mid palate. Opulent texture, tannins fined but still present. Full body and long finish.
Clealy a lot going on here. Pahlmeyer is consistently well made (IMO), you have to like the style. Rich, fruit forward, expressive Napa fruit...no overdone (again - IMO..) Drinks beautifully now, should continue to age well if wanting to cellar. The short decant made a difference with this bottle. Would give it more air time if venue allows. 96+

Excellent Cab in a less blockbuster vein. Good nose with some black currant but also with lots of earthy and stony notes. A very good palate with some fruit, mostly resolved tannins and excellent acidity and some alcohol still noticeable on the finish make this wine very good to excellent in a more restrained style. It went very well with steak.

Second wine at Chops Grill aboard the Harmony of the Seas. Deep and dark ruby red with lighter edges. Given a four hour decant. Dark nose that was a bit tight to start. Beautiful nose of crushed berries and a whiff of alcohol and vanilla invites you in. Robust and full wine at this point, showing plenty of depth, big blackberry fruit and a bold, mouthwatering finish. Decanted two hours and showed even better over the next couple of hours. Opaque purple color turning violet at the rim with a reflective edge. The nose is deep, dense and elegantly perfumed with dark fruits, licorice, nuanced with mushrooms, wet garage, and shoe box. The palate is bold, powerful and ripe with a velvety texture. Flavors of blueberries, blackberry, hoisin, iodine, black tea, and mocha form the core. This is a big wine and needed the lengthy decant, we decanted for around four hours. Dark ruby red with garnet edges. Dark and thick nose with spices, smooth dark fruits, plums, cinnamon and purple flowers. Heavy sweet tannins (7.5/10) and full bodied. Powerful and intense on the palate with layers of cherry liquor, dark berries, anise, woody, dark cocoa and dark cherries. Long and lingering finish. Long life left ahead of this baby. Back to my old school tasting notes, my first in likely a year or so, this was an excellent a tasty wine, but had all the hallmarks as to why Cali reds had a poor reputation amongst connoisseurs as bombastic and over the top - Black, full bodied with a nose of black fruit, plum, cherry, cedar and heat on the nose, can't argue that it's tasty as hell, but very port-like and unlike my wife, could not get past the 15+ alc., as it overpowered my steak, and did not compliment the food in my opinion, definitely tasty, and hedonistic, but not my cup of tea overall (89 Points).

Fantastic wine that still had a youthful profile somewhat but was was shedding some tannins and strutting its stuff. Enjoyed over three hours and got better as time went. Big fruit and sweetness and a good finish of chocolate and earthiness

Decant for one hour. Don't bother before that. After that mark, the wine began to open up beautifully over the course of our steak dinner. Wonderful cassis and dark berry flavors with secondary and tertiary flavors. So damn good...I don't have all the adjectives. A napa wine worthy of contemplation and analysis.

In a word this is extraordinary. Soft tannins, a nose that's heavy on wonderful dark fruit, a beautiful deep purple color. After an hour of decanting the flavor just explodes. This wine is still improving but is drinking so well now it will be difficult to hold.

Drank last night after the 2006 Rudd. Maybe it's the 2007 vintage vs 2006 plus the wine making styles between the two. But this is such a fruit forward yet balanced wine. Just perfect balance and flavor profile. Not as concentrated as some of the best Napa cabs but it's very easy to drink and the fruit is right there to taste with very subtle tannin. Lovely wine.

This Cabernet blend has a bold nose of currants and vanilla. The dark fruits a fully developed and perfectly balanced. There is a fantastic density and sweetness to the fruit. The finish is long, lush and soft. A truly great effort.

Four hour Vinturi decant; rebottle for transit to restaurant and 30 minute slow-ox at table. Beautiful dark purple juice, fantastic nose of dark red fruit-berry. The puppy-fat has evaporated. This nose is reminiscent of a classic Bordeaux. Dark plums, olives and barrel smoke prepare you for what is to come. On the palette, the wine is well balanced. Light on it's feet. The typical mocha notes are not evident at this point. A touch of licorice and dark cherries persist.
It's sweet and multi-layered. Excellent now.

2014 Fall Wine Dinner - Chicago (Chicago): Decanted for 4 hours. The wine was the most lush out of the 3 served but it had enough structure that is should continue to age well. It showed very well served against a 2005 Blankiet Estate and 2006 Staglin Estate and it was an even split between voters as to which was the favorite.

Wanted to open one of the big guns from the cellar and scanning the list of bottles this seemed like a good choice a well known Napa wine from the outstanding 2007 vintage. I had two so figured it was okay to open one now and get a sense as to how this is aging. Decanted for 1+ hours before consuming this was a massive wine. The viscosity reminded me of an Aussie Shiraz with that thick mouth-coating feel. I rated this a 92 because it just was not in that range of taste and nose that strike a chord with me as I tend to prefer old world earthy elements in my wines. The Mrs. rarely scores wines but loudly gave this a 96 and she really liked the smooth tannins and dark fruits. I will hold bottle number two as it seems this wine is built for the long haul and I hope some secondary notes appear.

Enjoyed this wine with friends and Italian food! The wine held it's own and complimented the food nicely. It is not a big wine. It looks Crimson colored. With medium body and legs, this wine exhibited a deftness of a well crafted claret. Mild aromas of blackberry. Taste blackberry, and Raspberry. The wine had a silky texture and finished Short.

This is huge, awesome and supple at the same time. Huge berry perfume nose that just fills the glass, incredibly smooth mouthfeel with a tannic backbone that will mellow and likely improve this even more. Very long finish. Kudos to what Jayson has going.

Decanted for 3 hours releasing a fragrant bouquet of menthol, currants, and black licorice. Very young with constrained yet dense flavors of blackberry, espresso grounds, sweet raspberries, and oak. Will be excellent in 5 years as the tannins begin to mellow.

A good wine no doubt, but I think perhaps a bit overrated. Uncorked and sampled. Tobacco leaf and some blackberry was present, and was quickly returned to the cellar. In about 30 minutes, there was a lot of blackberry, blueberry, and mocha with a hint of vanilla on the finish. A seasoned Pahlmeyer drinker in the group informed me that when the vanilla showed, the wine was good to go. That occurred about 90 minutes post decanting. This wine was fruity, but was smooth, reserved. Fruit was there, but didn't knock me on my butt. There was no obnoxious alcohol in the front, mid, or finish. First taste was heavily tannic - after 90 minutes the tannin died off quite a bit but was still expressive, much softer. This is a good wine, but honestly for the price that was paid for this bottle (thank goodness it wasn't me), there are several wines much cheaper that will crush it (07 Beringer Private Reserve Cab, Sbragia 06 Monte Rosso, the 09 Ghost Block, and just about any Howell Mountain Cab with exception to maybe LaJota). Overall this wine was good, but the QPR is TERRIBLE. If you have a lot of these, hold them because they may be going through a down phase right now. It certainly wasn't much to write home about this afternoon.

12 months since first bottle. Several hours opened. This was a great meal, dry aged steak and the wine just seemed to play along. it was not a distraction and not a deterrent. Just a beautiful piece of the meal, fully integrated fruit, balance beyond imagination, drinks beautifully now and seemingness ageless. The wine was so delicious, balanced the fatty Delmonico w precision. This is a flawless wine so much so that you lose respect for how easily it performs. Just awesome.

Nothing jumped out at me on the opening. Subtle nose of currant and dark chocolate. Decanted for two hours and fruit - blackberries and blueberries emerging. Very smooth drinking wine with great mouth feel and a lingering slide down the throat. It did continue to emerge but with four of us drinking it I am sure we didn't allow it reach its peak.

nose is a bit restrained but this is a glorious wine in every other way. Dark chocolate aroma on opening but great cedar, mineral, flavors with complexity an nuances. An awesome wine but it in needs a full decant now. Even after 3 hours decanting it still required awhile in the glass to really shine. As good as it is now I'd recommend holding for a few years at least, although you'd enjoy it today with a long decant.

Drank a few nights ago and forgot to record. I was expecting it to be too intense or too tannic since it is a little young. But it actually started a little simple but really nice. Over the subsequent 2 hours it progressed into a very nice wine. I was getting juicy blackberries with maybe something like graphite or gravelly taste with soft tannins if memory serves. We really enjoyed it. I've got 6 more so I'll look forward to seeing how it progresses even though it is drinking very nicely now.

Dark Purple, highly integrated tannins, very soft and approachable. A very big wine that should improve with age but is very drinkable today. Blackberry, Blueberry, some crushed rock and Dark Chocolate with a aroma of forest floor. Good minerality and Chocolate finish. Magnificent but very primary. The 2007 Pahlmeyer is an amazingly good effort. Jason Pahlmeyer has moved from providing "100 percent of everything" to "90 percent of everything". This has indeed improved his wines over the last five years. The 2007 Pahlmeyer expressed tons of pure fruit, granite and a lovely but not at all subtle tone of exquisite cedar wood. The palate is full bodied, but in an elegant way. Acidity and tannins are nicely integrated. I guess this wine will sing in 5-6 years and according to experience last 20-25 years.

Drank at restaurant - Decanted and let sit in glasses for at least 30 minutes before drinking. Strong flavors, paired very well with highly savory dishes, like steak and osso buco. Also excellent with a dark chocolate dessert.One of the best wines I've had, also I agree with other reviewers that the wine could still use some cellar time. The decanting and aeration helped, but I can certainly taste that it will mellow over the next few years. Definitely a must add to the cellar.

P&P. Dark. A very serious wine. Dark rich ripe in the blackest way. Is this 2007 Napa? Liquid licorice, cassis, minty, floral nose. Dark blue fruit. Already posses some weight, depth of fruit, layers there. This needs some time in th glass. Tannins coming on slowly, building. Some leather, dry oak, tight. Tannins dig deeper, this is young. Fruit fights back. This is gonna age beautifully. 95 when it does.
Day II - Dark in a glass staining kinda way. Same nose as last night, add some dark espresso, tar, dark licorice. Get some of that 15.2 on the whiff. My one glass grab last night and vacum pump did not let this breath enough. It needs several hours in the decanter. The whole mouthfeel feels strange. The nose just becomes the mouth, then the tight blue and black fruit, acid and tannins take over, some black tea on the finish. While this is really young, it is fun to play with. Best with some big boy food. This is well made. Not an extracted NW wine making, but using the deep ripe fruit of the year and restraining that and keeping it from becoming fat with the structure behind it. Lingering for a very long time. Nice finish.
Day III. OK last update. Sat overnight, just a cork. Smells like a wine left overnight, just a bit funky. Has a nicer mouthfeel, still maintaing balance, weight is really saying hello, I will be here in 5 years. So impressive as this last night I forgot to vacum the bottle, and it is regaining so much composure on night 3. Darn impressive. Still a great and impressive balanced finish, fruit is taking over more, heavy, almost like a baby port. Such contract to previous nights, yet remains balanced indicating it has decades to go. Glad I have too much.

All American Tasting (Binny's on Grand): Lovely wine. In the style of Pahlmeyer - juicy, rich, creamy, lush, chocolatey, vanilla and a fair dose of well balanced oak. Glorious aromatics. Yummy factor is rocking here. Great palate. Smooth and creamy. Massively structured finish with great backbone and stunning acidity for a wine with this silkiness.

Yeah, I know...crazy young to open, but I wanted to get an initial sense of where this wine started. Inky purple flowing from the bottle pooled nearly black in decanter, where it aired for 3 hours. Sweet, jammy notes wafted from the decanter; touch of blueberry? Oriental spice and sage...two descriptors that I rarely use are bound by a mineral and oak wrapper. This is one that will be huge fun to taste over the next decade or two. Wonderful

Stereotypical napa cab from a great year. Lots of fruit. Heat is well masked. Easy to drink and clearly a wonderful wine with teh acid, tannins, and fruit to last a while. I'm guessing 5-10 years will be peaking as secondary flavors will add to the licorice and baking spice that are just starting to show.

Nothing wrong here. Should hold for a few more years if desired but doubt it will get much better. Better back end than the front, which if I had to choose only one would be so. Lingers on the pallet for a good 2 minutes, mixing perfectly with the bleu cheese and crackers I’m noshing on alongside it.

1 hour decant on a 750 we cellared from its birth.
This 15 year old is still drinking very nicely with plenty of acidity and mountain tannins. Lovely, somewhat floral bouquet leads to a nicely blended red tasting with just enough pizzazz to wow - but still balanced enough to accompany a good meal. Bravo.

Quite good. Coming from someone who lost interest in cabs and Bordeaux blends a few years ago, that is significant praise. Pahlmeyer stands out among Bdx blends and cabs. The blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec works very well — excellent balance of cab s. with the softer varietals. At an excellent age now, 15 years.

Packed this in my suitcase for a trip to Southeast Florida and made reservations at Max’s Grill in Boca Raton with a reasonable $25 corkage fee. They didn’t have a decanter available but we slowly drank this over a two hour dinner and it showed the subtle power of a top flight Napa Cab blend.
I don’t like to use a lot of descriptors in my tasting notes but those of us who have had the pleasure of drinking aged Cabernet from Napa and especially the 2007 vintage know exactly how this wine tastes.

For Once I actually agree with the "EXPERTS" as this was absolutely outstanding last night. Subtle nose of earthy tones, minerals, as it pours to a deep ruby color. As it opened flowers and berries take over and from the 1st taste a deep explosion of bright fruits of blueberry and blackberry. Surprisingly sweet tannins not the deep chunk I like were actually perfect for the finish and as the hour wore on, it got even better as it opened. Can easily store for a few more years Outrageously good!

Tannins have been tamed and this is a silky, sleek glass of BDX blend. Clearly Napa in origin but has some classic BDX minerality and layers.
Mouthfeel is where this wine really shines. Silky and suave. No rough edges. Rich blackberry flavors and nice lift.
I think this will be open for business for another seven or eight years.
Reminded me of the 1996 Pahlmeyer, which I really liked.

First sip was a little thin and underwhelming. I was afraid I picked the wrong week to open it as I've read the 2007's are still very temperamental. But after a good 2 hour decant it was what I had hoped, and it improved further in the glass. Very well-balanced fruit and secondary flavors developing. If you've stored yours properly there's no rush to drink up, but if you do in the short term, give it some air first.

This unexpectedly showcased signs of its age. It was noticeably less profound. It was enjoyed a week after we tried the 14. Exceptional blend, but not in the same ballpark as the 14. Dark fruit behind dusty oak.

Happy 22nd Anniversary to Us!!!
Upon opening at 2:00 pm, cork looked great!
Nose: Upon opening, before decant, still very tight in the nose. Initially, alcohol on the nose followed by dark fruit: Cherry, raspberry with some cedar-box, pepper and cocoa. Needs to open… way to “hot”.
Decanted for 3 hours…
Color: Deep purple-ish red with a slight clear edge.
Nose: Totally softened, relaxed, and chilled out! Not the alcohol high from right out of the bottle. Cherries, raspberries, blackberries, a fresh fruit stand with lots of cocoa, earth, leather with a softened pecan woodiness to round out everything.
Taste: Wow!! Right out of the box, there’s a distinct mint and eucalyptus flavor that’s fantastic with subtle dried dark fruit, leather notes, pepper notes and some earthy notes. Soft, but still ballsy tannins with an abrupt solid, dry ending. Drink now my friends, this is beginning to lose its fruitiness!

Decanted, poured first glass immediately. Garnet/purple color. Delicious nose of black fruit, coffee, chocolate. herbs. I'm not vibing the notes that say "low complexity." I'm finding this to be a robust, interesting complex wine. Black fruit, toffee, milk chocolate, cedar, secondary hints of anise, pencil lead, earth. I also wouldn't describe the mouthfeel as "velvety." It's luxurious and wonderful, but to me, more full-bodied and "Left Bank" than the velvety "Right Bank" experience. We've been big fans of the Pahlmeyer PR for years. This is the first '07 we've opened in a while, and I was very impressed, drinking extremely well.

Probably one of the best wine I tasted, and I tasted a lot!!! It has everything we love about Left Bank Bordeaux PLUS the best of what we love about Napa. Structure, body and complexity from Bordeaux, aromas and flavors from Napa. Very good mouthfeel and finish. The only criticism is that it is a bit high in alcohol otherwise it is a very enjoyable and impressive wine. It is perfect now and can easily last for 10 plus more years!!!

Just letting you know that on 4/4/20 this wine is still a 93 pointer. I was surprised that this wine was a good as it is. Just a wonderful balanced and Cab fruit wine. My only complaint is the bottle is so heavy. I am not a big fan of tall and heavy bottles. Even SE is a regular bottle. Anyway I feel privileged to drink this wine. Ever since Pahlmeyer sold I have distanced myself from the winery, just a personal decision. I got drawn in when Parker compared their Merlot to Petrus. That is a distant memory.

This was the most interesting, complex and pleasing Pahlmeyer I have tasted. Floral nose with tart cherry, anise, cedar, mushroom and forest floor on the palate. Medium long finish. Glad I have a couple more bottles.

Decanted three hours. Full in the nose with aromas of blackberry, wild flower and tobacco. This wine is very well made in a modern style with concentrated, somewhat hedonistic flavors of cassis, blackberries, matchstick, and herbs. Full bodied, somewhat open knit, with silky tannins and a long finish. Has at least 10-15 years ahead.

The nose is rich with dark fruit and mocha. On the palate, fruit dominates, with dark berry and a lush texture balanced with mild tannins and acidity. But earthy notes arise as well, with subtle mushroom, cigar, and eucalyptus flavors. This wine is complex, balanced, and beautiful. It’s just entering its peak drinking window and will continue to deepen and evolve for some time.

Drinking very smoothly now -- any unpleasant heat is gone. Earthen fruits, resolved tannins. While it will cellar longer, it likely won't evolve further. Decant for 90 minutes and enjoy.

Brought this one to Coco Pazzo in Chicago, dinner with John M. Had the somm decant it for about 30 minutes prior to drinking...first bottle from a batch bought at release.
Deep garnet/purple color, no signs of separation. Fragrant nose showing dark cherries, cinnamon/spice, violets. Full bodied, expressive palate showing dark berries, blueberry, fruits, cassis, tobacco, savory notes, and smoke...a lot going on, expressive through the mid palate. Opulent texture, tannins fined but still present. Full body and long finish.
Clealy a lot going on here. Pahlmeyer is consistently well made (IMO), you have to like the style. Rich, fruit forward, expressive Napa fruit...no overdone (again - IMO..) Drinks beautifully now, should continue to age well if wanting to cellar. The short decant made a difference with this bottle. Would give it more air time if venue allows. 96+

Excellent Cab in a less blockbuster vein. Good nose with some black currant but also with lots of earthy and stony notes. A very good palate with some fruit, mostly resolved tannins and excellent acidity and some alcohol still noticeable on the finish make this wine very good to excellent in a more restrained style. It went very well with steak.

Second wine at Chops Grill aboard the Harmony of the Seas. Deep and dark ruby red with lighter edges. Given a four hour decant. Dark nose that was a bit tight to start. Some notes of dark berries, plums, cinnamon, anise and a little floral. Heavy tannins (7.5/10) and full bodied. Still tastes so young but well integrated with notes of oak, dark cherries and spices. This is a big wine and needed the lengthy decant, we decanted for around four hours. Dark ruby red with garnet edges. Dark and thick nose with spices, smooth dark fruits, plums, cinnamon and purple flowers. Heavy sweet tannins (7.5/10) and full bodied. Powerful and intense on the palate with layers of cherry liquor, dark berries, anise, woody, dark cocoa and dark cherries. Long and lingering finish. Long life left ahead of this baby. Drink till 2032.

If you want a complement to bring out the flavors of your food, maybe choose a different bottle...but if you want a night where the wine is center stage, the star of the night, this is your bottle. Oh, and we began drinking right away over the course of 3 hours. Maybe could have used a decant, but Friday after a long work week we were ready to get down to business.

Decanted for 90 minutes. Aromas of blackberry, cherry, leather, mocha and dusty berry. Flavors of blackberry, current, licorice, wild cherry and touch of iron. Ends with a blackberry infused finish of at least 35 seconds. Really intensified once we started drinking it. Tannins were very smooth.

Back to my old school tasting notes, my first in likely a year or so, this was an excellent a tasty wine, but had all the hallmarks as to why Cali reds had a poor reputation amongst connoisseurs as bombastic and over the top - Black, full bodied with a nose of black fruit, plum, cherry, cedar and heat on the nose, can't argue that it's tasty as hell, but very port-like and unlike my wife, could not get past the 15+ alc., as it overpowered my steak, and did not compliment the food in my opinion, definitely tasty, and hedonistic, but not my cup of tea overall (89 Points).

Fantastic wine that still had a youthful profile somewhat but was was shedding some tannins and strutting its stuff. Enjoyed over three hours and got better as time went. Big fruit and sweetness and a good finish of chocolate and earthiness

Decant for one hour. Don't bother before that. After that mark, the wine began to open up beautifully over the course of our steak dinner. Wonderful cassis and dark berry flavors with secondary and tertiary flavors. So damn good...I don't have all the adjectives. A napa wine worthy of contemplation and analysis.

PnP'd. In a really good place: savory and lush, balanced, with deep cassis flavors, faint truffles, an earthy aspect and a touch of toasted oak. Impressive minerality, and fully integrated tannins. Drink or hold.

In a word this is extraordinary. Soft tannins, a nose that's heavy on wonderful dark fruit, a beautiful deep purple color. After an hour of decanting the flavor just explodes. This wine is still improving but is drinking so well now it will be difficult to hold.

Drank last night after the 2006 Rudd. Maybe it's the 2007 vintage vs 2006 plus the wine making styles between the two. But this is such a fruit forward yet balanced wine. Just perfect balance and flavor profile. Not as concentrated as some of the best Napa cabs but it's very easy to drink and the fruit is right there to taste with very subtle tannin. Lovely wine.

Decanted about an hour and consumed over the next 24. Closed off during initial tastings, but really opened up after 24. Outstanding fruit flavors, touch of eucalyptus, tannins integrated nicely, but could probably age quite a bit longer. Last bottle, I wish I had more.

This Cabernet blend has a bold nose of currants and vanilla. The dark fruits a fully developed and perfectly balanced. There is a fantastic density and sweetness to the fruit. The finish is long, lush and soft. A truly great effort.

In it's drinking window right now.
The puppy-fat has evaporated. This nose is reminiscent of a classic Bordeaux. Dark plums, olives and barrel smoke prepare you for what is to come. On the palette, the wine is well balanced. Light on it's feet. The typical mocha notes are not evident at this point. A touch of licorice and dark cherries persist.
It's sweet and multi-layered. Excellent now.

Maybe drinking a little early but still a full and lush wine. Tasted with a Cab lineup and this was the softest of the bunch. Dark fruit with coffee and menthol notes; the wine was complex and a pleasure to drink and sniff.

Wow...and it's going to get better in the next few years. Agree that a few hours of air and this wine evolves into a complex flavor pallet starting with great fruit and finishing with some nice terroir flavors. I'd put this in the mix with great left bank Bordeaux any day.

2014 Fall Wine Dinner - Chicago (Chicago): Decanted for 4 hours. The wine was the most lush out of the 3 served but it had enough structure that is should continue to age well. It showed very well served against a 2005 Blankiet Estate and 2006 Staglin Estate and it was an even split between voters as to which was the favorite.

Added to the mix of massive big boy wines (Pegau, Scarecrow, Spottswoode, etc.) this had the most bright cherry and sweet spice. Young and still coming together, has amazing elements swirling beneath the surface that should come out in a few years.

This night I felt we opened too young or were too impatient as we PNP and the fruitiness was over the top at the beginning, and it was an hour before things settled down. We decided to try because the 05 drank so well recently, and certainly other 07 napa have been good for a while. The rest can rest.

Wanted to open one of the big guns from the cellar and scanning the list of bottles this seemed like a good choice a well known Napa wine from the outstanding 2007 vintage. I had two so figured it was okay to open one now and get a sense as to how this is aging. Decanted for 1+ hours before consuming this was a massive wine. The viscosity reminded me of an Aussie Shiraz with that thick mouth-coating feel.
I rated this a 92 because it just was not in that range of taste and nose that strike a chord with me as I tend to prefer old world earthy elements in my wines. The Mrs. rarely scores wines but loudly gave this a 96 and she really liked the smooth tannins and dark fruits. I will hold bottle number two as it seems this wine is built for the long haul and I hope some secondary notes appear.

Enjoyed this wine with friends and Italian food! The wine held it's own and complimented the food nicely. It is not a big wine. It looks Crimson colored. With medium body and legs, this wine exhibited a deftness of a well crafted claret. Mild aromas of blackberry. Taste blackberry, and Raspberry. The wine had a silky texture and finished Short.

This is huge, awesome and supple at the same time. Huge berry perfume nose that just fills the glass, incredibly smooth mouthfeel with a tannic backbone that will mellow and likely improve this even more. Very long finish. Kudos to what Jayson has going.

Far-too-brief decant at restaurant; should have aired this at home before we left, but it just wasn't possible. Still great, but we finished the bottle prior to it hitting its peak, for sure. Dark berries, cocoa and cassis; very elegant and well-structured, nice finish.

A good wine no doubt, but I think perhaps a bit overrated. Uncorked and sampled. Tobacco leaf and some blackberry was present, and was quickly returned to the cellar. In about 30 minutes, there was a lot of blackberry, blueberry, and mocha with a hint of vanilla on the finish. A seasoned Pahlmeyer drinker in the group informed me that when the vanilla showed, the wine was good to go. That occurred about 90 minutes post decanting. This wine was fruity, but was smooth, reserved. Fruit was there, but didn't knock me on my butt. There was no obnoxious alcohol in the front, mid, or finish. First taste was heavily tannic - after 90 minutes the tannin died off quite a bit but was still expressive, much softer. This is a good wine, but honestly for the price that was paid for this bottle (thank goodness it wasn't me), there are several wines much cheaper that will crush it (07 Beringer Private Reserve Cab, Sbragia 06 Monte Rosso, the 09 Ghost Block, and just about any Howell Mountain Cab with exception to maybe LaJota). Overall this wine was good, but the QPR is TERRIBLE. If you have a lot of these, hold them because they may be going through a down phase right now. It certainly wasn't much to write home about this afternoon.

Nothing jumped out at me on the opening. Subtle nose of currant and dark chocolate. Decanted for two hours and fruit - blackberries and blueberries emerging. Very smooth drinking wine with great mouth feel and a lingering slide down the throat. It did continue to emerge but with four of us drinking it I am sure we didn't allow it reach its peak.

nose is a bit restrained but this is a glorious wine in every other way. Dark chocolate aroma on opening but great cedar, mineral, flavors with complexity an nuances. An awesome wine but it in needs a full decant now. Even after 3 hours decanting it still required awhile in the glass to really shine. As good as it is now I'd recommend holding for a few years at least, although you'd enjoy it today with a long decant.

Drank a few nights ago and forgot to record. I was expecting it to be too intense or too tannic since it is a little young. But it actually started a little simple but really nice. Over the subsequent 2 hours it progressed into a very nice wine. I was getting juicy blackberries with maybe something like graphite or gravelly taste with soft tannins if memory serves. We really enjoyed it. I've got 6 more so I'll look forward to seeing how it progresses even though it is drinking very nicely now.

Magnificent but very primary. The 2007 Pahlmeyer is an amazingly good effort. Jason Pahlmeyer has moved from providing "100 percent of everything" to "90 percent of everything". This has indeed improved his wines over the last five years. The 2007 Pahlmeyer expressed tons of pure fruit, granite and a lovely but not at all subtle tone of exquisite cedar wood. The palate is full bodied, but in an elegant way. Acidity and tannins are nicely integrated. I guess this wine will sing in 5-6 years and according to experience last 20-25 years.

Very good wine , decanted for 1 hr and served with steak, lots of blackberries and blueberries very sweet tannins overall very good wine, will wait a couple of years to open my next one, as it seems a little young yet, probably should have decanted it for two plus hours.

Drank at restaurant - Decanted and let sit in glasses for at least 30 minutes before drinking. Strong flavors, paired very well with highly savory dishes, like steak and osso buco. Also excellent with a dark chocolate dessert.One of the best wines I've had, also I agree with other reviewers that the wine could still use some cellar time. The decanting and aeration helped, but I can certainly taste that it will mellow over the next few years. Definitely a must add to the cellar.

Already posses some weight, depth of fruit, layers there. This needs some time in th glass. Tannins coming on slowly, building. Some leather, dry oak, tight. Tannins dig deeper, this is young. Fruit fights back. This is gonna age beautifully. 95 when it does.
Day II - Dark in a glass staining kinda way. Same nose as last night, add some dark espresso, tar, dark licorice. Get some of that 15.2 on the whiff. My one glass grab last night and vacum pump did not let this breath enough. It needs several hours in the decanter. The whole mouthfeel feels strange. The nose just becomes the mouth, then the tight blue and black fruit, acid and tannins take over, some black tea on the finish. While this is really young, it is fun to play with. Best with some big boy food. This is well made. Not an extracted NW wine making, but using the deep ripe fruit of the year and restraining that and keeping it from becoming fat with the structure behind it. Lingering for a very long time. Nice finish.
Day III. OK last update. Sat overnight, just a cork. Smells like a wine left overnight, just a bit funky. Has a nicer mouthfeel, still maintaing balance, weight is really saying hello, I will be here in 5 years. So impressive as this last night I forgot to vacum the bottle, and it is regaining so much composure on night 3. Darn impressive. Still a great and impressive balanced finish, fruit is taking over more, heavy, almost like a baby port. Such contract to previous nights, yet remains balanced indicating it has decades to go. Glad I have too much.

All American Tasting (Binny's on Grand): Lovely wine. In the style of Pahlmeyer - juicy, rich, creamy, lush, chocolatey, vanilla and a fair dose of well balanced oak.
Glorious aromatics. Yummy factor is rocking here.
Great palate. Smooth and creamy. Massively structured finish with great backbone and stunning acidity for a wine with this silkiness.

Yeah, I know...crazy young to open, but I wanted to get an initial sense of where this wine started. Inky purple flowing from the bottle pooled nearly black in decanter, where it aired for 3 hours. Sweet, jammy notes wafted from the decanter; touch of blueberry? Oriental spice and sage...two descriptors that I rarely use are bound by a mineral and oak wrapper. This is one that will be huge fun to taste over the next decade or two. Wonderful

Vivid color, lots of fruit, spice and wood, not very tannic and surprisingly taste in mouth more satisfying then finish. Still, a big wine that certainly does not disappoint. Had with smoked salmon on cucumbers and Saint Andre on crisps. Fine with both but equally fine by itself.

Stereotypical napa cab from a great year. Lots of fruit. Heat is well masked. Easy to drink and clearly a wonderful wine with teh acid, tannins, and fruit to last a while. I'm guessing 5-10 years will be peaking as secondary flavors will add to the licorice and baking spice that are just starting to show.
