Chevillon is probably one of the most underated producer in Burgundy, all the wines from the village level age marvelously and Les Vaucrains, les Cailles, and Les St Georges are very impressive in their own styles. As usual with young Les Cailles, blue fruits and plums scents burst from the glass, the mouthfeel is quite tight, with fiery tannins and active limestone chalkiness, lots of energy here ending in a persistent finish. This wine will need 15 years to see its full potential.
