Decanted 1 hour with moderate sediment. Very nice, complex Aussie cab, rich and concentrated, full of dark fruit, smoky, cedar nose, some lovely tartness to the fruit adding to the complexity, has the structure as well as the track record to hold and possibly improve for several years. Paired nicely with cask iron seared filets!

NobleRottersSydney - even year Cabernet (360 Bar & Dining, Sydney): [Gordon] {cork, 13.5%} Once they used to tell you the contributing regions on the label of 707; not any more. Certainly the (relatively) youngest of the reds here tonight, it parades the classic red meaty and black fruit nose which screams Penfolds. This is King Wenceslas in a bottle; deep and crisp and even. Black currant and plum fruits, softened vanilla/coconut oak, all nicely integrated. Big but balanced; medium/full-bodied, with medium powdery tannins, and a medium/long dry but rich finish. The only older wine tonight I’d confidently cellar for another decade.

2 weeks in Australia with a stopover in Singapore; 6/14/2019-7/1/2019 (Singapore, Sydney, Adelaide, McLaren Vale, Barossa Valley, Adelaide Hills): Tasted at the winery. Multi region - raised in American Oak. Nose of dark fruit. On the palate more red fruited, cranberry, well balanced, smooth rounded mouth feel, long finish, layered spice/earth/leather/tobacco/forest floor. Delicious!
