Served at dinner party, note from memory. Appearance: Clear, medium yellow-gold. Nose: Clean, medium+ intensity with developed aromas of musty earth, brackish water, lemon zest, almond, and mushroom - kind of off-putting initially but grew on me over time. Palate: Dry, medium acid, medium body, medium+ intensity, 12.5% abv with developed flavors of melon rind, lemon tart, marmalade and saline with a medium+ finish. Clearly showing development but feels like there are years of favorable drinking window ahead yet.

At Jim and Michelene’s 40th anniversary dinner and served with Chef Don Saunders’ Scallops w/ Fall Vegetables. The lightest of golds that would have had you guess a 3 year old Chablis vs. a 13 year old one. This blossomed in the glass after 15 or so minutes. Citrus, minerals, iodine and smoke on a medium-bodied frame. This was super beautiful. My last bottle and I couldn’t think of a more appropriate event for it.

DIAM cork. Drank alongside the 2010 Clos. Wow both of these are insanely youthful. So wonderful to drink 13 year old white burgundy and have them fresh as a daisy. Floral, salty, crisp citrus and loads of energy and minerality. These can easily go another 20 years at this rate. Outstanding. 93+

Merely full straw in color; surprisingly youthful with profusely floral, honeysuckle and crushed gravel notes; fresh and zippy palate with serious concentration and underlying extract. I’ve enjoyed and scored the ‘10 Les Clos similarly and found that wine heading past peak. This Preuses came in just barely short of my experiences drinking their ‘10 Vaudesir but both weren’t nearly as evolved as the Clos. This bottle was fresh as a daisy and seemingly “barely ready”. Impressive showing!

Typically refined nose of GC Chablis (just a tad more restrained than many its counterparts) with grapefruit, white flowers, and iodine notes. Much more expressive (and more distinctively balanced, once again compared to its counterparts) on the palate: excellent inner-mouth tension, sustained throughout, and delicate weight, with a seamless harmony between the core of ripe when not outright exotic fruits (on this occasion I found apricot to be unusually present) and the mineral, saline, sometimes soothingly bitter notes always keeping it in check. A beautiful, contemplative wine that is ready to drink now. 94-95

I was really, really impressed with this. Often overlooked verses the bigger names of Raveneau and Dauvissat, but this was equal to, if not better, than many of the recent wines I’ve tried from either. For 13 years, this was incredibly fresh. Quite a reductive nose from the bottle and lots of fresh fruit. Very lively with great acidity and this got better as it warmed up to room temperature, always a sign of a good wine. Am I being harsh with a 95? possibly.
Mouton dinner (La Chaumiere in Georgetown): Beautiful light color which is a relief. Expressive nose displaying generous yellow citrus fruit, flint, white flowers, sesame, pine needle, saline and crushed rocks. Excellent concentration, nicely layered yellow citrus fruit, excellent precision and balance, bright acidity, incredibly mineral, and a long yellow citrus fruit driven finish with pine needle at the end. This is a classic mineral driven Chablis that is showing beautifully.
Oh my, rarely give out a score of 95 points but this was an epic bottle of Chablis... right up there with my old raveneau and dauvissat... super bright (which surprised me as 2010 was a "pleasing" vintage in its youth)... anyway, sad that I had drunk thirty btls I bought for $70 all in the early / mid 2010's, this bottle of course cost 2.5 that and well worth it... bright, with citrus and minerals galore and simply elegent but with energy... went out and bought the last 10 bottles I could find in the USA... well well well worth the tariff (assuming the new bottles are similar to this)... again WOW, and I'm betting I give a score of 95 maybe once in 100 btls... [UPDATE -- I looked it up, have given 7 scores of 95 or above, this out of a total score count of 3500+ reviews]... big praise for this wine fo sho

Once again, just PNP'd and drank relatively quickly. Was holding back a lot- started to soften and open up after 30-45 minutes. Note to self: definitely need to decant my last bottle of this and let it breathe a bit. Only a 92 today but that is likely unfair given the conditions.

2010 Fevre and Dauvissat Grand Cru Chablis (Oceanaire, Mpls, MN): Pale gold color. PNP, drank a glass plus over 2 hours. Flighted the '14 and '10 together. Much like my note on a bottle four years ago. Fantastic nose again; explosive, crystalline and powerful, beautiful orchard fruits, more fruit complexity, swampy Fevre earthiness galore, saline, ocean, tons of lift, floral notes and zestiness. The palate is intense and concentrated, richer, powerful, zippy minerality, swampy crustacean infused earth, green fruit and citrus zest, with a sweet little nutty thing in the background. Damn, great acid, fruit and minerality; just a complete wine. The '10 is working its magic, and the '14 will needs some time to get here.

William Fevre Chablis Les Presuses 2010 Nose: Citrus, lemon, sesame Palate: medium bodied, relatively dry, relatively strong minerality Rating: 89 pts Drink: 2025-2038 Tasted together with the 2007. This paried excellent with Japanese oyster. Very creamy and sweet. The 2010 certainly works better with food. Still relatively young and I would anticipate this to taste better in a few years time.

A tasting of three grand crus (clos, preuses, vaudesir 2010) and two 1er crus (montee de tonnere and vaulorent 2012). This is still too young. Marked by a reductive note of flint and matchsticks when opened. Closed on the nose. only giving some chalky tone, even after several hours in the glass. Full bodied attack, extreme tones of chalk and minerals, then lemon an green apples kicks in. Extremely concentrated, but also extremely tight and unwelcoming. Very long, but linear aftertaste, just giving citrus and green apples. Almost tannic finish. Seems ten years too young. Is this correct? Will these wines ever be pleasant to drink?

PnP'ed (blinded) towards end of dinner. Just like the last bottle more than a year ago, this was in pristine condition... In fact, this showed even younger than the previous bottle. Pale-yellow, this would seemed like an entry-level wine that would be equally pale/light on the palate. On the contrary, it was anything/everything but... Light lemon-oil, white peaches, green-apples, white-chalk scents emerged with some time/air in the glass, this was very harmonious & pure on the palate too, with a light touch of that lemon-oil texture, but plenty of weight/extract showed. Gained intensity as it got more air... Long finish. A very nice wine that should get even better with more cellar age!

{Bought on release; have had 2-3 before; perfect fill; Diam cork)> Lost my detailed notes but vivid memory next day. Preuses fruit, full of an haunting grace; very complex, waves of fruit and amazing mid-palate textures. Best 4 hours after opening.
Grand Cru Chablis can rival Rhone whites for power and as a match with foods like cheese at the end of a meal. Was great with mussels, and later with cheese.

I’m not a big fan of Chablis but bottles like this could change my mind. The pale yellow hue lets you know immediately it’s perfectly sound. So airy, so clean yet no lack of power or energy. Beautiful balance, not overly acidic. Holds well, deepens a bit. Different from Côte de Beaune yet no less compelling.

Agree with many of the positive notes below. Very fresh, and in fact quite tight upon opening. Flinty minerality and lemon notes were both dominant, with acidity and salinity. I probably drank this too fast to see how it opens up with air, so I look forward to decanting and giving it some time next time. For tonight, it paired great with linguine with Nantucket Bay scallops and lemon.

Drank blind next to the 2016 Fevre Les Preuses. DIAM 10. Outstanding nose, crisp, salty, mouth watering lemon acidity with white floral notes hiding behind. Plenty of stuffing on the palate, but balanced well with with tart lemon zest and a punch of acid on the finish. Focused and tight while barely showing it's age. I'm so happy Fevre has switched to DIAM, these can finally be cellared with confidence. Plenty more to come for those who are patient. Delicious

"Red/White Burgs vs. New-world Pinots & Chards" theme'd session.
Decanted for ~3-hrs prior to serving. Blinded (in a pair) alongside the '17 Yattarna. In pristine condition and tasted young (guesses hovered around '14-'17). Floral spectrum ranged from ripe citrus/lemons to peach to cheese (after time/air in the glass). It also had discernable oak (not protruding though) that got more & more integrated as the evening drew on. There was gain in body/intensity too, with significant (dry) extract becoming more apparent with more air. Finished long. A wine befitting of its GC status! Interestingly, guesses were split rather equally whether this was a Burg or New-world Chard...

PnP. Very long and dense cork. Light greenish gold - no sign of pre-mox. Subtle nose of sea air and citrus, especially lemon. Goes down like water impression on the palate, then the finish slowly builds with limestone, sea-salt flavors along with more citrus. Subtle and spherical in presentation; not as flamboyant as Bouguerots but lovely. Should be great with Dungeness crab, shrimp, and mussel linguine. This gets broader in flavor with more air; could be better tomorrow.

Ten years has done wonders for this wine which shows rich greenish fruit in a taut package with good acids and a refined texture. Plenty of chalky minerals kick in on the full, crisp finish with additional notes of oyster shells and mint. This has come around very nicely with plenty more in the tank.

This is a wine which really blossoms with food. The nose is almost floral but is cut through with limestone and lemon. On the palate it is a top notch Chablis showing with clean citrus flavours and exquisitely balanced. Similarly the finish is lengthy and in total harmony . This is drinking fabulously now with food, but will continue to improve. Highly recommend.95+

This has mellowed since my last try two years ago. Less stealy intensity and a bit more rounded out with subtle fruity notes peaking through. Lime stone citrus tension are all there but has definitely moved into a secondary phase which I find to be much better.

Had this on release and remember it being a beast of Chablis with very aggressive acidity and some tannin to resolve. Still, you could sense the complexity and potential it had, so I was happy to be able to revisit another bottle eight years later. It’s now fully secondary, having shed its excess acidity and structure, and while maybe not quite as complex and tense as in its youth it still holds a solid measure of nervosity, and now the balance is more in favor of the fruit which has plenty of appeal, from fresh ripe lemon to white peach (when served at a cooler temperature). While it’s fine for drinking a glass or so on its own, it also has an appropriate, savory brininess to it that adds some interest and asks to be paired with food. Drinking very well now and I’d expect over the next few years at least. Diam 10 closure.

Popped, poured, consumed over three evenings. At cellar temperature, this had some rather exotic melon notes and seemed to be exhibiting the influence of very toasty oak. Put it in the refrigerator overnight, tried it at 40 degrees and it was actually way better and more like Grand Cru Chablis. I usually believe people drink white wine too cold and prefer it at cellar temperature so this was unusual. It's been 10 years -- I hope that toasty oak integrates!

The years have been kind to this wine (and note the downgrade vs my last TN a few years back doesn't mean the wine didn't live up to its promise or hasn't developed well it's merely a reflection of how spoiled I seem to be getting and there is a slight deflation of scoring overall for me). Oystershell, very saline and salty, some slight reduction, very concentrated and meaty. Very good and drinking really well right now but can age for another decade.

I have become more and more sceptical to the wines from this domaine, they seem just too dry and tart and does not seem to evolve at all. This one may make me adjust my opoinion slightly. Very young colour. almost greenish. Classic nose dominated by chalk, oysters, some etheric oils (shellack?), but also green apples, some peach and a hint of candied fruit. Medium bodied in the first attack in the mouth, then the wine expands to the finish and aftertaste. While the mid palate is dominated by citrus and tart apples, the finish is dominared by peach, vanilla (?), dried green fruits. The aftertaste is so mineral it almost hurts; chalk, oysters, salt water. Long, extremely fresh with an almost tannic tone. This is not a wine for the novice, and it still seems too young. I am a bit unsure where this wine is going; will the tartness dominate more, or will the fruit emerge more clearly? For those in the position to do so; keep for five more years before the next bottle.
The Vikings sucked, but the wines were good!; 1/15/2020-1/16/2020 (John's house): Drank 1/4th of the bottle over maybe 1.5 hours. The main attraction of this wine is the minerality, shellfish and high acidity. There is also apples, baking spice, a touch of oak (very integrated) and the frame is medium to light-bodied. Amazing balance, with flavors that come and go with each sip or sniff. 94-95, my expectation was high and this bottle exceeded my expectation slightly.

Vikings were Bad but the Wines were Good!: Great showing. Love seeing the synthetic cork closure. Minerals, shells, lemon and spice. Polarizing acidity and medium plus finish. This wine should age for another 5 years however it is excellent now so unless you have several bottles left drink on the shorter end of that time frame. Wow my note from 15 said too young and revisit in 4 years. Well five close enough.

What a wine! It pours bright white gold in the glass showing just a touch of age in its slightly deep shade. I could spend hours attesting the nose for its depth and charm; it shows very detailed and gentle aromas of classic oyster water, ripe citrus lemon, some dried white flower, green and golden apples, light stonefruit white peach, a touch of nutty rosted hazelnut with a smokey flinty hint, a bit of bright white tea and just the faintest hint of oak vanilla that is barely perceptible but kindly helps to round up the very fresh and minerally driven nose. The layers on the smell just keeps on giving as it seems that this could age for few extra years but it just sings now without that potential excessive nuttiness that, with time, it might cover up its bight and fresh mantle. The palate kickstart with that oyster juice that recall the nose and then it changes gear into a fairly full character that suggest the memorable vintage that 2010 was. It follows up with ripe lemon again, sweet william pears, white peaches and ripe apricots all flowing through quite seamlessly finishing into a pleasant nutty tone. The texture is impressive for a Chabils and it only lacks of a touch of acidity that would have helped the wine to be just a bit springier on the finish. It ends on a soft note of walnuts backed by a merged flavour of light honey and lemon. I would recommend to drink this fairly soon as there is not much drive trough the back palate. Still none the less delicious! I wish there was more Chardonnay like this around!

Same btl as R&Rler & Brad E. I love this Chablis tonight! Captivating and a head turner. Just terrific. I really have my doubts that Raveneau Clos could top this wine. Fevre might be the best producer in Chablis. They tend to show more intensity, energy and focus then Dauvissat and, I like that. This was exceptional and I always want to be at any table where these 2010 Fevres are opened :).

Big Guns: Burgs and Bordeaux at Bellecour (Bellecour, Mpls, MN): Light greenish color. PNP, drank 1+ glass over 90 minutes. Oh my, what 3 years can do. I knew this was going to be great, but this was even better than I imagined. Flat out stunning, this has an explosive nose, amazing energy and depth, powerful, poised, classic Chablis character with gorgeous green fruits, crystalline minerality, saline and an ocean of minerality, signature Fevre, earth and so lifted, this goes on and on. It doesn't get much better than this. I'm totally enamored by the 2010 vintage in general is it really captures the trifecta of fruit, minerality, and acidity in such a compelling way. At some point we need to get a flight of '10 Fevre Grand Crus together for a direct comparison. 96+ to 97pts.

From Magnum. Deep but bright gold, vastly more advanced than the 2012 Bougros poured alongside it. Perfect current drinking, wonderfully floral nose and some ripe tropical notes too. Palate full and fleshy with great depth of flavour and ripe refreshing acidity. Delicious current drinking, on this showing drink up to catch in full bloom.

Dinner at Tim's (Chicago, IL): Bottled under DIAM -- it's good to see Fevre doing something about premox (of which there is none here, I might add). The nose shows only slightly reductively, and there's a hint of white fruit here. The palate is quite consistent, and there's good minerality and acidity here. It's not as complex or electric as I remember it being though (that was 3.5 years ago). It seems to have mellowed out a little, and I've never been too much of a fan of aged chardonnay. This is still a solid wine, but for my own taste, I'm not holding my other bottle any longer.

Purchased from domaine in 2015 and shipped back. Clean, pale color. Superb nose, with a hint of matchstick reduction, iodine, saline, and bright citrus. Drinks precise and balanced between intense lemony acidity and a slight finishing sweetness. Held up well for day 2. For those who care - DIAM10 cork that looked to be about 1cm longer than most.

Very enjoyable. 2 hour decant helped. Nice balance, limestone minerality, sour apple, long finish, great acid backbone. Feel this is just starting to enter its drinking window and will go for a while. No rush on these, will wait another few years to tackle remaining 10 or so bottles

Tasted over 3 hrs -translucent pale yellow-grey-green -restrained matchstick subtle lemon curd wet stone sea breeze no oxidative notes -med acidity, med weight soft graceful and pretty tightly coiled elegant builds to a bit of a crescendo with a soft saline-inflected moderately long finish -still very young elegant and graceful with lurking complexity, needs some time to unfurl

some mixed experiences with these three bottles, first one tasted premox'd out of the bottle, but tightened up a bit with some air... all in all not good wine, even after air, next two bottles were showing their age but fine to drink (and for some Cali chard drinkers they liked the level of richness), for me this wine two years ago had good body, more viscosity than I would expect (and more than I would typically enjoy in Chablis) but tons of acidity and tension to balance... at that point I bought a ton of these, unfortunately they all now seem to be aging way too quickly... I will try to drink my 20 or so btls in the next 6-=12 months, and won't be surprised if some are totally premox'd... sad

Sometimes the lack of punch on the nose just tells me good things are coming and this didn't disappoint. Light citrus with some reduction still present. No signs of premox in taste or color but I keep mine at 51 degrees. Lemon lime, fantastic mid palate bite, enough acid, bread yeast notes, tongue curling a bit. Others may say thin, but this has it all for me. Drinking well now with years to go. Oustanding, refreshing.

so good, nonetheless a little worrisome given it was brighter and better on night one vs night two (and in the context of several premox'd '08 bottles recently), on night one this was literally mouthwatering with citrus and acidity but also balanced by fresh fruit, hints of sweetness, touch of rind... stunning right out of the bottle, just a touch of caramel / roundness that my premox paranoid self noticed immediately on night two... drink them now (I have about 20 bottles so we need to chug)

Nose was musty/toasty, with hints of marzipan, herbs, flint and lemons. The palate was very different; it was crisp with lemon, stone fruit, unripe nectarines, and an exotic smokiness I haven't tasted before. Pretty acidic. Medium length finish, that hinted at seashells and salty tones.

Light straw in color. Flowery and saline on the nose, light mouth feel. Green apple, Gala apple, and mineral in the mouth. Long mineral finish with a touch of sweetness as well. Tasted single blind with 3 other white burgs and one other Chablis; did not pick this out as a GC level wine at all.

Classic, unmistakably Chablis. Green apple, honeysuckle - but also a butteriness, chalkiness. This is a really great Chablis! Lovely serious , seriously lovely. You can drink this today, but it will certainly age well and should reward further bottle age. Better then the great 2010 Fevre 1er cru Montee de Tonnerre and miles better then the 2010 Fevre Grand Cru Bougros.

La Paulée de San Francisco - The Verticals (The Fairmont - San Francisco CA): Tasting, brief note. Dense, darker and chewier than the 2011 or 2012, I just don't think this is quite ready yet. Powerful and firm array of fruit aromas and flavors range from pineapple to lemon peel with classic textural Chablis finish. Good now, but great 94+ point potential if it retains freshness.

The Verticals Tasting at La Paulée 2016 (The Fairmont, San Francisco): Slightly deeper color than the younger wines. Riper citrus aromatics and orange fruit on the palate. Nice combination of some creamy intensity and airiness. Acidic finish which sticks out. Could be much better if/when it integrates, but today, behind the '11.

Clean mineral tones. Limes and sweet tarts on the nose Creamy mid palate and a touch of bitterness on the back end. Pretty consistent with other bottles. Quite nice drinking, but I don't get what all the raves I hear about this.

I drank a glass over a couple hours. Honeydew melon, lime, some rather distinctive fruit and a nice purity of fruit. Aside from that, not that enjoyable at this stage, and completely outclassed tonight by the other chardonnay. I would hold these for a while. Score reserved, I would score it 89 tonight.

Worldwide World Class Chards (Edina, MN): Light gold color. Drank 1 glass over 3 hours. There is a very nice minerality to this, oyster shells, ocean breezes, etc, very subtle brioche, lemon emerges later. The palate has lemon, good purity, fine minerality, lime, elegant, and it develops depth and length as it evolves in glass over an hour plus. Seems young, and probably shut down at this point. As is, about 92pts , with expectation for much more down the road.

On the nose, faint lime and pineapple citrus. On the palate, pear and white peach, with notes of lime, pineapple, and iodine leading into a medium to long finish, with good acidity. Excellent; I only wish it were $40 instead of $65.

fantastic bottle we had alongside my brother's '57 Mouton Rothschild, tiffany raved more than i have seen her in the past about this bottle, and surprised me when she said she liked it better than the 2012 we have had a few times, great acidity and tension but also plenty of material underlying (minerals, fruit, sweet fruit and salty all at the same time)… plenty of life ahead, happy i bought two cases of this stuff, is and will be magic for a long time, couple points of upside here with time

Dinner at Sun Wah (Sun Wah BBQ - Chicago, IL): Everything was in the right place with this wine and it was fantastic. The nose was airy, salty, citrusy...The palate had great cut with big, cool fruit throughout. Pears, lemons, limes...think "fresh fruit". Really nice salty/mineral tones too gave it a real sense of place. A powerful Preuses!

Dinner at Sun Wah (Chicago, IL): This is quite ripe on the nose, with mostly a flinty character. The palate is just incredible though. Lots of freshness combined with gunflint. Lots of density combined with an almost Roulot-like ability to float above the clouds. Like a green laser, this is powerful and precise. Excellent Chablis, or chardonnay for that matter. Of course, the real challenge is to hold these for 10+ years and not have them pox (but props to using Diam and trying at least something!). But drinking these now is pleasure enough.

Gorgeous, complex and oh so understated! More backwards than the Cote Bougerots at Siggy's earlier in the summer. Pale, white gold color. Super complex palate with tons of geologic matter plus seashore, iodine, flint and lillies. Elegant, round and full bodied palate with white peach and juicy tangerine. Intense palate, good acidity and totally in balance. Very classy!

Excellent wine. Highly enjoyable now, and destined to be great in 10 years. Straw colored with a green tinge, lemon peel peaches and lanolin on the nose, peach citrus and slate on the palate. Intense, harmonious, and great density. Wonderful finish, long and dry with tons of minerals and some salinity. Even more seamless on day two.

Superb! Wow, undeniably Chablis. Decanted over 2 hours. Pure and balanced with outstanding intensity that saturates the palate. Piercingly dry that leaves the mouth vibrating. Very long finish. But this is so painfully too young at this stage.

Open for two hours. The aromas are very precise but slightly reticent and include just-ripe pear and crisp red apple. On the palate it is all about purity. Immensely clean, fresh, and sharp, the star of the show is the texture and persistence - after the flavors give way a tangy minerality and acidity linger on the palate for easily a minute. Chablis doesn't get much better than this for me, and even now is showing superb stuff.

Started off very tight, but after an hour or so, notes of minerals, peach and anise shone through. It was never very expressive, but that meant we had to think deeper about the wine. Alongside a 1998 Kistler Chard, this showed greater elegance and restraint.

Preuses always seems to take it to the next level. This bottle really was singing by the second day. Also, I love Preuses for the many multifaceted mineral and earth and soil tones, and this bottle had them and more. This Chablis is dry, piercingly dry, with mineral, silica, and brown earth soil impressions. It is also lemony, with oyster shell and lime stone impressions. It is full bodied but light and nimble. This could use a little more time but it is really a nice wine.

This wine is spectacularly good. Incredible density and minerality, slight smoky reduction. Like citrus juice filtered through crushed rock. Great intensity, long finish with an interesting grassy/herbal component.
The S02 addition might have been a bit high, as it's noticeable on the aromatics and the finish - so best to let it rest for a couple of years before revisiting.

Bottle was presumably potentially fine; environment was flawed. What a waste, in the Cantonese seafood restaurant's tiny narrow-mouthed glasses (why'd I believe a random web page promising excellent stems?), little air and no attention to temperature. Showed almost nothing and its rich texture was a liability, hiding any energy, precision, acidity, or minerality - it just seemed kinda flabby.

Visiting Domaine William Fèvre (Chablis, Burgundy, France): First thing to note is the charming wall of aromas, ripe orchard fruits and an array of spices and minerality, I found myself just swirling and nosing this for a while, simply for enjoyment. On the palate this is well structured and balanced, but somehow manages to feel surprisingly ready already (especially when compared to Les Clos). If you wish to try one of Fevres 2010 GC's right now, I'd recommend Preuses. It's in a beautiful stage and it's probably not very suitable for long-term cellaring.

Bouchard Pere et Fils Cellar Visit and Tasting (Beaune Burgundy): Starts with apple and pear aromas, plenty of spice, then some lemon coming through near end. Palate has plenty of big fruit, both orchard and citrus. Lots of power on finish. Cellar for at least a few years, when I 'd really expect this to perform like a rock star.

Served at dinner party, note from memory. Appearance: Clear, medium yellow-gold. Nose: Clean, medium+ intensity with developed aromas of musty earth, brackish water, lemon zest, almond, and mushroom - kind of off-putting initially but grew on me over time. Palate: Dry, medium acid, medium body, medium+ intensity, 12.5% abv with developed flavors of melon rind, lemon tart, marmalade and saline with a medium+ finish. Clearly showing development but feels like there are years of favorable drinking window ahead yet.

At Jim and Michelene’s 40th anniversary dinner and served with Chef Don Saunders’ Scallops w/ Fall Vegetables. The lightest of golds that would have had you guess a 3 year old Chablis vs. a 13 year old one. This blossomed in the glass after 15 or so minutes. Citrus, minerals, iodine and smoke on a medium-bodied frame. This was super beautiful. My last bottle and I couldn’t think of a more appropriate event for it.

Merely full straw in color; surprisingly youthful with profusely floral, honeysuckle and crushed gravel notes; fresh and zippy palate with serious concentration and underlying extract. I’ve enjoyed and scored the ‘10 Les Clos similarly and found that wine heading past peak. This Preuses came in just barely short of my experiences drinking their ‘10 Vaudesir but both weren’t nearly as evolved as the Clos. This bottle was fresh as a daisy and seemingly “barely ready”. Impressive showing!

I was really, really impressed with this. Often overlooked verses the bigger names of Raveneau and Dauvissat, but this was equal to, if not better, than many of the recent wines I’ve tried from either. For 13 years, this was incredibly fresh. Quite a reductive nose from the bottle and lots of fresh fruit. Very lively with great acidity and this got better as it warmed up to room temperature, always a sign of a good wine. Am I being harsh with a 95? possibly.

Once again, just PNP'd and drank relatively quickly. Was holding back a lot- started to soften and open up after 30-45 minutes. Note to self: definitely need to decant my last bottle of this and let it breathe a bit. Only a 92 today but that is likely unfair given the conditions.

PnP'ed (blinded) towards end of dinner. Just like the last bottle more than a year ago, this was in pristine condition... In fact, this showed even younger than the previous bottle. Pale-yellow, this would seemed like an entry-level wine that would be equally pale/light on the palate. On the contrary, it was anything/everything but... Light lemon-oil, white peaches, green-apples, white-chalk scents emerged with some time/air in the glass, this was very harmonious & pure on the palate too, with a light touch of that lemon-oil texture, but plenty of weight/extract showed. Gained intensity as it got more air... Long finish. A very nice wine that should get even better with more cellar age!

{Bought on release; have had 2-3 before; perfect fill; Diam cork)> Lost my detailed notes but vivid memory next day. Preuses fruit, full of an haunting grace; very complex, waves of fruit and amazing mid-palate textures. Best 4 hours after opening.
Grand Cru Chablis can rival Rhone whites for power and as a match with foods like cheese at the end of a meal. Was great with mussels, and later with cheese.

I’m not a big fan of Chablis but bottles like this could change my mind. The pale yellow hue lets you know immediately it’s perfectly sound. So airy, so clean yet no lack of power or energy. Beautiful balance, not overly acidic. Holds well, deepens a bit. Different from Côte de Beaune yet no less compelling.

Agree with many of the positive notes below. Very fresh, and in fact quite tight upon opening. Flinty minerality and lemon notes were both dominant, with acidity and salinity. I probably drank this too fast to see how it opens up with air, so I look forward to decanting and giving it some time next time. For tonight, it paired great with linguine with Nantucket Bay scallops and lemon.

Decanted for ~3-hrs prior to serving. Blinded (in a pair) alongside the '17 Yattarna. In pristine condition and tasted young (guesses hovered around '14-'17). Floral spectrum ranged from ripe citrus/lemons to peach to cheese (after time/air in the glass). It also had discernable oak (not protruding though) that got more & more integrated as the evening drew on. There was gain in body/intensity too, with significant (dry) extract becoming more apparent with more air. Finished long. A wine befitting of its GC status! Interestingly, guesses were split rather equally whether this was a Burg or New-world Chard...

Very clean and typical Chablis nose with sea and chalk dominating over some citrus aromas.
Good acidity and excellent length, a very balanced impression where you can "taste the aromas"

Ten years has done wonders for this wine which shows rich greenish fruit in a taut package with good acids and a refined texture. Plenty of chalky minerals kick in on the full, crisp finish with additional notes of oyster shells and mint. This has come around very nicely with plenty more in the tank.

This is a wine which really blossoms with food. The nose is almost floral but is cut through with limestone and lemon. On the palate it is a top notch Chablis showing with clean citrus flavours and exquisitely balanced. Similarly the finish is lengthy and in total harmony . This is drinking fabulously now with food, but will continue to improve. Highly recommend.95+

This has mellowed since my last try two years ago. Less stealy intensity and a bit more rounded out with subtle fruity notes peaking through. Lime stone citrus tension are all there but has definitely moved into a secondary phase which I find to be much better.

Had this on release and remember it being a beast of Chablis with very aggressive acidity and some tannin to resolve. Still, you could sense the complexity and potential it had, so I was happy to be able to revisit another bottle eight years later. It’s now fully secondary, having shed its excess acidity and structure, and while maybe not quite as complex and tense as in its youth it still holds a solid measure of nervosity, and now the balance is more in favor of the fruit which has plenty of appeal, from fresh ripe lemon to white peach (when served at a cooler temperature). While it’s fine for drinking a glass or so on its own, it also has an appropriate, savory brininess to it that adds some interest and asks to be paired with food. Drinking very well now and I’d expect over the next few years at least. Diam 10 closure.

Popped, poured, consumed over three evenings. At cellar temperature, this had some rather exotic melon notes and seemed to be exhibiting the influence of very toasty oak. Put it in the refrigerator overnight, tried it at 40 degrees and it was actually way better and more like Grand Cru Chablis. I usually believe people drink white wine too cold and prefer it at cellar temperature so this was unusual. It's been 10 years -- I hope that toasty oak integrates!

The years have been kind to this wine (and note the downgrade vs my last TN a few years back doesn't mean the wine didn't live up to its promise or hasn't developed well it's merely a reflection of how spoiled I seem to be getting and there is a slight deflation of scoring overall for me). Oystershell, very saline and salty, some slight reduction, very concentrated and meaty. Very good and drinking really well right now but can age for another decade.

I have become more and more sceptical to the wines from this domaine, they seem just too dry and tart and does not seem to evolve at all. This one may make me adjust my opoinion slightly. Very young colour. almost greenish. Classic nose dominated by chalk, oysters, some etheric oils (shellack?), but also green apples, some peach and a hint of candied fruit. Medium bodied in the first attack in the mouth, then the wine expands to the finish and aftertaste. While the mid palate is dominated by citrus and tart apples, the finish is dominared by peach, vanilla (?), dried green fruits. The aftertaste is so mineral it almost hurts; chalk, oysters, salt water. Long, extremely fresh with an almost tannic tone. This is not a wine for the novice, and it still seems too young. I am a bit unsure where this wine is going; will the tartness dominate more, or will the fruit emerge more clearly? For those in the position to do so; keep for five more years before the next bottle.

The main attraction of this wine is the minerality, shellfish and high acidity. There is also apples, baking spice, a touch of oak (very integrated) and the frame is medium to light-bodied. Amazing balance, with flavors that come and go with each sip or sniff. 94-95, my expectation was high and this bottle exceeded my expectation slightly.

This wine should age for another 5 years however it is excellent now so unless you have several bottles left drink on the shorter end of that time frame. What a wine! It pours bright white gold in the glass showing just a touch of age in its slightly deep shade. I could spend hours attesting the nose for its depth and charm; it shows very detailed and gentle aromas of classic oyster water, ripe citrus lemon, some dried white flower, green and golden apples, light stonefruit white peach, a touch of nutty rosted hazelnut with a smokey flinty hint, a bit of bright white tea and just the faintest hint of oak vanilla that is barely perceptible but kindly helps to round up the very fresh and minerally driven nose. The layers on the smell just keeps on giving as it seems that this could age for few extra years but it just sings now without that potential excessive nuttiness that, with time, it might cover up its bight and fresh mantle. The palate kickstart with that oyster juice that recall the nose and then it changes gear into a fairly full character that suggest the memorable vintage that 2010 was. It follows up with ripe lemon again, sweet william pears, white peaches and ripe apricots all flowing through quite seamlessly finishing into a pleasant nutty tone. The texture is impressive for a Chabils and it only lacks of a touch of acidity that would have helped the wine to be just a bit springier on the finish. It ends on a soft note of walnuts backed by a merged flavour of light honey and lemon. I would recommend to drink this fairly soon as there is not much drive trough the back palate. Still none the less delicious! I wish there was more Chardonnay like this around!

Same btl as R&Rler & Brad E. I love this Chablis tonight! Captivating and a head turner. Just terrific. I really have my doubts that Raveneau Clos could top this wine. Fevre might be the best producer in Chablis. They tend to show more intensity, energy and focus then Dauvissat and, I like that. This was exceptional and I always want to be at any table where these 2010 Fevres are opened :).

I knew this was going to be great, but this was even better than I imagined. Flat out stunning, this has an explosive nose, amazing energy and depth, powerful, poised, classic Chablis character with gorgeous green fruits, crystalline minerality, saline and an ocean of minerality, signature Fevre, earth and so lifted, this goes on and on. It doesn't get much better than this. I'm totally enamored by the 2010 vintage in general is it really captures the trifecta of fruit, minerality, and acidity in such a compelling way. At some point we need to get a flight of '10 Fevre Grand Crus together for a direct comparison. 96+ to 97pts.

From Magnum. Deep but bright gold, vastly more advanced than the 2012 Bougros poured alongside it. Perfect current drinking, wonderfully floral nose and some ripe tropical notes too. Palate full and fleshy with great depth of flavour and ripe refreshing acidity. Delicious current drinking, on this showing drink up to catch in full bloom.

Dinner at Tim's (Chicago, IL): Bottled under DIAM -- it's good to see Fevre doing something about premox (of which there is none here, I might add). The nose shows only slightly reductively, and there's a hint of white fruit here. The palate is quite consistent, and there's good minerality and acidity here. It's not as complex or electric as I remember it being though (that was 3.5 years ago). It seems to have mellowed out a little, and I've never been too much of a fan of aged chardonnay. This is still a solid wine, but for my own taste, I'm not holding my other bottle any longer.

Ultra clean and pure. A beauty to be sure. Pale yellow in color and ripe with citrus, pear, and a bit of peach (possibly). At any rate, it's downright delicious and worth every penny we paid for it. Lots of life in this thoroughbred.

Very enjoyable. 2 hour decant helped. Nice balance, limestone minerality, sour apple, long finish, great acid backbone. Feel this is just starting to enter its drinking window and will go for a while. No rush on these, will wait another few years to tackle remaining 10 or so bottles

Sometimes the lack of punch on the nose just tells me good things are coming and this didn't disappoint. Light citrus with some reduction still present. No signs of premox in taste or color but I keep mine at 51 degrees. Lemon lime, fantastic mid palate bite, enough acid, bread yeast notes, tongue curling a bit. Others may say thin, but this has it all for me. Drinking well now with years to go. Oustanding, refreshing.

so good, nonetheless a little worrisome given it was brighter and better on night one vs night two (and in the context of several premox'd '08 bottles recently), on night one this was literally mouthwatering with citrus and acidity but also balanced by fresh fruit, hints of sweetness, touch of rind... stunning right out of the bottle, just a touch of caramel / roundness that my premox paranoid self noticed immediately on night two... drink them now (I have about 20 bottles so we need to chug)

This is what Chardonnay should taste like. The leanness of Chablis plus the multi-dimensions of non-Chablis Burgundies. The reviews say it will get better over the next ten+ years...I hope to keep some that long.

Seattle Wine Group - Oct 2016 Tasting - "White & Red Burgundy" (Amaroso Room - Wine Storage Bellevue): White Flight: E
Nose was musty/toasty, with hints of marzipan, herbs, flint and lemons. The palate was very different; it was crisp with lemon, stone fruit, unripe nectarines, and an exotic smokiness I haven't tasted before. Pretty acidic. Medium length finish, that hinted at seashells and salty tones.
Total Score: 34 out of 11-55 range (lower is better)

C'est un Chablis soyeux, aérien et délicat - l'acidité tranchante mentionnée par certains s'est évaporée. C'est minéral oui mais très digeste, sur les arômes élégants de fruits blancs. Très bon.

Classic, unmistakably Chablis. Green apple, honeysuckle - but also a butteriness, chalkiness. This is a really great Chablis! Lovely serious , seriously lovely. You can drink this today, but it will certainly age well and should reward further bottle age. Better then the great 2010 Fevre 1er cru Montee de Tonnerre and miles better then the 2010 Fevre Grand Cru Bougros.

Of course, the real challenge is to hold these for 10+ years and not have them pox (but props to using Diam and trying at least something!). But drinking these now is pleasure enough.

Gorgeous, complex and oh so understated! More backwards than the Cote Bougerots at Siggy's earlier in the summer. Pale, white gold color. Super complex palate with tons of geologic matter plus seashore, iodine, flint and lillies. Elegant, round and full bodied palate with white peach and juicy tangerine. Intense palate, good acidity and totally in balance. Very classy!

Lemon zest, tart green apple, sea breeze, crushed limestone. Very young and harsh right out of the cellar. Developed nicely over several days, but these really need a couple more years. Excellent balance front to back. 93+

Superb! Wow, undeniably Chablis. Decanted over 2 hours. Pure and balanced with outstanding intensity that saturates the palate. Piercingly dry that leaves the mouth vibrating. Very long finish. But this is so painfully too young at this stage.

Open for two hours. The aromas are very precise but slightly reticent and include just-ripe pear and crisp red apple. On the palate it is all about purity. Immensely clean, fresh, and sharp, the star of the show is the texture and persistence - after the flavors give way a tangy minerality and acidity linger on the palate for easily a minute. Chablis doesn't get much better than this for me, and even now is showing superb stuff.

Started off very tight, but after an hour or so, notes of minerals, peach and anise shone through. It was never very expressive, but that meant we had to think deeper about the wine. Alongside a 1998 Kistler Chard, this showed greater elegance and restraint.

Preuses always seems to take it to the next level. This bottle really was singing by the second day. Also, I love Preuses for the many multifaceted mineral and earth and soil tones, and this bottle had them and more. This Chablis is dry, piercingly dry, with mineral, silica, and brown earth soil impressions. It is also lemony, with oyster shell and lime stone impressions. It is full bodied but light and nimble. This could use a little more time but it is really a nice wine.

Raveneau vs Dauvissat (Oslo): (Blind) Klar, mild strågul med hint av grønt. Steinete nese med noe eik, røk, lime og sitrus. Bløtt anslag. Fokusert, transparent og limedreven frukt med lett fedme og mild sødme. Frisk, lett bitter grapefruktsyre. Svært lang, mineralsk ettersmak. Litt ung enda.

Slight green tinge. Served very cold. Terrific cut, very steely. Lean but not linear. Not a trace of oak. Slices through my salmon burger like a hot knife through butter. You have to want this style the night you drink it.

This wine is spectacularly good. Incredible density and minerality, slight smoky reduction. Like citrus juice filtered through crushed rock. Great intensity, long finish with an interesting grassy/herbal component.
The S02 addition might have been a bit high, as it's noticeable on the aromatics and the finish - so best to let it rest for a couple of years before revisiting.
