12x Bordeaux 1983 vs 1993: All wines tasted single blind. Not decanted. As anticipated, the 1983 vintage prevailed in our comparative tasting, scoring 8 to 2 wins against the 1993 vintage, with two ties. The structured, classic ’83s exhibited greater depth and harmony compared to the ‘93s, which tended to be simpler, sometimes slightly green and dry, or at their best, fresh and light. However, in both vintages, aside from a few notable labels, many wines were evidently beyond their peak. The standout was, unsurprisingly, the Margaux (94pts). Tasting the some of the same ’83s a second time a few days later with decanting showed a marked improvement, highlighting the need of aeration.
TN: The nose is quite intriguing, featuring dark red and blue berries, cola, earthy tones. On the palate, there's a freshness in the blue and black fruit, complemented by earthy and graphite notes. While the structure is commendable, it lacks the finesse. Good, but not outstanding. 91pts (1983 in the next glass was corked).

Bordeaux 1983 vs 1993 face-off: Almost confit type of fruit, blueberry, red and black cherry. Fine coffee bean notes. Hardly any aging notes to note. Acidity driven mid-palate although with rather drying tannin into the finish.

Magnum OWC from London. Teppanyaki 6 people with fresh Hokkaido abalone, HK local blue lobsters, tiger prawns and Wagyu beef. Decant 30 mins. Colour was ruddy and mature but clear. Balanced body, hint of liquorice, herb, currant and mineral. Texture okay smooth. Sediment was not too much at the base. After taste was quite average but that could be the strong seafood favour and soya sauce. We loved the wine but that was my last bottle. Buy some if you can find them.

Family dinner at the Royal HK Golf club at Deep Water Bay. Magnum ,purchased from UK .. OWC with 6 bottles. Stored in HK for 3 years. Capsule and cork in good condition and level was good. Decant for 30 mins. Initial nose was mediocre but after another 30 mins, the bouquet was much alive and good Paulliac style. Crimson red but it wasn't young anymore.Tannin was integrated and not as harsh as mentioned from previous wine notes on here. Legs were fantastic and long. Served very well with Cantonese style salt baked chicken and braised King prawns. The body was still holding well till the end of the dinner. Unfortunately... this Magnum served for 12 people so I did not have enough. It was a surprise to me for a 93 vintage however it cost only 110 UK pounds each. If you still can find them .... please go for it.
