This is really nice! Lots of croissant dough and grapefruit with hints of what i can only describe as an orange blossom cocktail! Maybe there's some fresh apricot in there too. This is a lovely NV champagne that i may have to find more of.

A new load of these, fresh off the truck. We couldn’t wait but it was in good shape (despite the travel and crazy heat) Same as previous reviews, this remains our favorite go to house champagne and has been for 20 years. It may be 5x the price but we are still drinking it. It has a distinct grapefruit note that I don’t find often, even in other Paul Dethune Cuvees.
From Last Bubbles: Pure freshness and untamed verve without sacrificing the ripe fruit orchard characteristics that is definitively Ambonnay. Bright, mineral, and deliciously aromatic with warm toasty croissant dough, honeysuckle, apricot, and orange blossom. Dry but not austere, beautifully generous, long, and intense to the very last sip.

Served in Lehmann Jamesse Prestige stems after a brief chill. At first lots of red apple, followed by more strawberries and white chocolate on the nose. Lively mousse, middle weight mouthfeel. Nice richness and gentle acidity, appealing flavor profile with the quality of the fruit evident. Fresh and not heavy. Could it have had a bit more tension and complexity? Sure, ideally, but at this pricepoint it was a very nice example of type. Paired well with some Midnight Moon cheese and Smoking Goose rabbit and pork terrine. A note to the cult of low dosage that you lose flexibility when you insist on level. 9 g/L may not be my most preferred style, but sometimes my most preferred style would not be the best pairing. This was an excellent match, and a good use for champagnes of this ilk. Very nice indeed.
Drank from mag. Showed well on pouring, as the rich, ripe orchard fruits pop out of the glass. The fruit is well packed on a solid backbone of acidity and freshness.
I did not have this with fried chicken, but this is definitely a great wine for fried chicken (at least one CT reviewer agrees!)

70% pinot noir and 30% chardonnay; 12.5% ABV; Dosage 9 g/L Light gold. Citrus & Red berries on the nose, w/hints of floral and spice. Very energetic upon pour, w/tiny bubbles that follow. On the palate fresh citrus (orange/lime) and strawberry and with a hint of honeysuckle. Almond on the (long) finish. NICE! Very happy I was able to snag a deal on 4 bottles! Had w/Sweet Potato Gnocchi w/Hazlenut Pesto w/lemon drizzle. Wonderful!

Mis en cave 4/2018, dégorge à 10/2019, 50% vins de réserve, 70% PN 30% Chard. Opulently ripe fruit, yellow apple, pear, pineapple, a level of ripeness that I only see in Selosse or Ulysse Collin. Obvious signs of oak, there is sappy pine resin, cedar, it’s not just textural but aromatic as well. There’s so much tension, and just a lot going no on here that it needs more time to quiet down. Also the mousse is quite aggressive despite being quite cold, so much so that it is distracting and again points to much longer aging needed, but this wine has the stuffing to age. Only criticism might be that the dosage seems to be a bit low for the level of extract and bitterness on the finish, but that’s just my preference.

Disclaimer, we don’t know all that much about champagne. This was lovely, easily the best bottle of champagne I have ever had. The nose makes you think you are walking through an apple orchard on a crisp fall day. The palate reveals more apple, pears, and some grapefruit. The few bottles of champagne that I have had would always make me call out Chardonnay, but not here with this bottle. Improved lots over the two hours of consumption. 93 (from a champagne novice)

An attractive light gold in color, a shade richer than the standard champagne. On the nose: Brioche, grapefruit, orange peel, green apple, nuts. On the palate: apricot. High acidity, medium- body, pronounced, balanced. Nice finish... I like it!

This grower’s NV always seems to charm me every time I get the opportunity to drink it. The color is almost a touch brassy. Beautiful, tiny bubbles. The nose is remarkably red fruited with strawberries and brioche on full display. It’s almost like a strawberry shortcake, no cap. On the palate, strawberries, raspberries, lemon zest, minerals. It’s rich, but so impeccably balanced. Absolutely, positively crushable. The dosage is perfect. I haven’t deciphered them code Dethune uses on the bottle to understand then disgorgement date...but I believe was recent.

DG 02/2015 Powerful and round: Ambonnay signature. Gunpowder and smoke, wet stones, a little salty, white chocolate and a hint of coffee with milk, raw peanuts, slightly doughy, a touch of oak is noticeable; ripe and sweet red fruits such as cranberries, blackcurrants and pink grapefruit, red apples, dark cherries. Surprisingly engaging; this doesn't feel like an entry-level champagne, much more complex than you would expect, it maintains a high acidity. An interesting wine to drink with several years of bottle age. 91pt

Yellow and red apple skin, travertine, ginger, Wonder Bread crust, grapefruit, and subtle copper notes.
A 70/30 split of Pinot Noir and Chardonnay, with a less serious demeanor overall than a lot of the Extra Brut and zero dosage Champs I’ve been drinking lately. A friendly and crowd-pleasing type of wine, with just enough complexity to hold interest for anyone looking for a little more than just an Oyster ground pounder. Falls off slightly on the finish, but overall a solid performance given its class.
Paired well with panko and mustard crusted slow-cooked salmon and preserved lemon couscous.
(Disgorged in September 2018, base year 2015 with 50% reserves, 70% PN & 30% CH) Nice on the nose showing tutti frutti, butter and some lime citrus notes. Creamy palate with a rounder acidity showing yellow apples and with a nice bitterness on the nice and lengthy finish. (Best with 2-6 years extra cellaring)

Disgorged in May 2015, shows a little deeper color and shorter mousse. Nice mature pear and caramel apple qualities with cooked ginger and nutty undertones. More of the same on the palate. Slightly coarse bead. Paired nicely with a lobster dip appetizer.

Mid gold colour, surprisingly deep for its age, but the high proportion of reserve wines (see below) may account for that. Lovely nose with plentiful caramel and a touch of pear syrup. Intense, vibrant taste, more like a vintage wine - for once, grand cru quality living up to the name. A note of beeswax and a bit of salinity on the finish. This is really excellent, delicious, and great value. The next day, not as good but still drinkable. 70% pinot noir, 30% chardonnay; 50% reserve wines; bottled April 2016, disgorged July 2018. [Composite cork + cage, with a rubberised coating on the cap I've not encountered before; 12% abv; Woodwinters, ~£30].
I’ve said it before and I’ll say it again, Champagne may be the best wine pairing with the traditional Thanksgiving meal and this NV from Paul Dethune was sublime. Pulled from the fridge and opened about 30min prior. Straw colored with an impressive mousse. About as affable as they come with a bouquet of white peaches, magnolia blooms and a whiff of brioche. On the palate it was stone fruits, citrus and minerals. Every bite of the meal begged for another sip and every sip begged for another bite. What a delight.
Very pale, vibrant and over-energetic; loads of sudsy bead; lemon citrus scented with hints of ginger; great energy (even aggressive), somewhat hard for me to enjoy, my tasting partner loved it. With time in bottle will likely lose that coarseness. 90/91 for me, partner LOVED it giving it 94+. I would need some food with it, tasted it with a salmon spread on dark bread and it was infinitely more appealing to me then. Disgorged 06/17.

No better reason to have breakfast then to do it with Dethune. This is bottle 2 of 2 we grabbed from the grocery store in Healdsburg, with the same disgorge date of 04/2016. Delicious, and the acidity in the wine helped complement the scrambled egg breakfast we did with it. Dethune rocks.

Picked up in Nor Cal from Big John's. Funny enough, tasted this wine at the winery a few months ago in Champagne; however, this bottle was disgorged more than a year earlier. Same base of 2014, disgorged though 04/2016. That bottle from May was dosed at 9 g/l and the back label on this wine doesn't speak to dosage but let's assume the same. And while I don't drink this high of dosage much anymore except for Vilmart, like with what they do, the same holds true of Dethune, as they get the acidity and balance into their wine and the resulting taste is not sweet or heavy. Green apple, honey and the spine of acidity that makes it all work.

Disgorged November 2017 with a base wine indicator of 2016 and 50% reserve wines. Simply, far, far too young. Will be good I think but right now yeasty on the nose and acidity for too intrusive.
Frankly any current Nyetimber offering a better and more ready drink . English sparkling - Nyetimber, Gusbourne, Ridgeview, Camel Valley, Hambledon and others - are a better bet than this.

It's Greek to Me & A Bunch of Whites (It's Greek to Me, Mpls): Light gold color. Tasted over 20 minutes. Well, at least I'm consistent. I had to chuckle as I read my previous note on this wine and felt like this must be deja vu. On 10/29/2017 I wrote: Light gold color. Followed one glass for 20 minutes. Yeast up front on the nose is pleasant enough, but the palate for me just seemed weird, sharp and angular, oxidative, grapefruit. I don't know, this didn't work for me. This was about the exact same experience, though I didn't find the nose particularly appealing this time either. The palate has an oddly woody taste too. Well, I guess that's one less Champagne I need to chase.

Disgorged 10/2017, with a base of 2014, using 70% PN and 30% Chard. 9 g/l dosage. This is close to the level of dosage that I really usually dislike yet this bottle had enough of the Ambonnay cut and chalk that to me it shows nicely fresh, with green apple and cherry, with the lovely cut and good intensity in the finish. Showed great.

Wow, this really took on some depth since the last time we tried it. Time on the cork apparently doesn't hurt this wine. Delicious. Bright and airy with a steely edge of acidity. A touch of brioche on the nose. Just fantastic.

Dégorgement Nov 2014, mis en cave April 2012. The nose is deliciously toasty with notes of red apple, caramel and baking spices. High quality Pinot Noir shines through immediately. On the palate rich and round with good, lifting acidity. Thick, persistent mousse. Very much red fruited, with citrus on the nicely bitter finish. Relatively big yet very fresh. Not massively developed and perhaps a bit short but obviously very well made from very good raw materials. Somewhat vinous but still quite crowd-pleasing. Overall a very delicious Champagne for 27 € that paired nicely with home made (somewhat) gourmet hot dogs.

Very high quality brut NV - 70% Pinot Noir, 30% Chardonnay. I opened two bottles - both mis en cave date of April 2012, 1st bottle disgorgement date April 2014 and 2nd bottle disgorgement date July 2014. The first bottle with earlier disgorgement date showed slightly better especially after a while (having been opened for about 2 hours). So I suggest opening this a bit in advance and not serve it too cold either. Beautiful champagne from a small house that seems to be on great form!

Thanks therhonestore for the share out our tasting. Sparkling straw, high carbonation. Nose is butter, sweet cream, fresh bread rolls. Taste is sharp lime seltzer, bread, sweet peach, white strawberry. Palate is sweet up front and finishing quite sour and dry. Quite nice, but didn't stand out for me as a champagne I would seek out again, but then again I am still learning.

Clear pale straw color. Peach, orange, and tart citrus on the nose. Hints of herbs, grass, and honey. Nicely floral, some cracker, and bread dough. Nice dry palate. Wide open nose of apple, pear, mineral and bready notes. Palate has medium body with a fine, energetic bead. Good racy acidity provides framing and length. This is a rustic styled pinot noir based champagne that is enjoyable. The first two bottles I enjoyed more than this bottle. For whatever reason I thought the dosage was a bit too high in this bottle. This was paired with a crab cake appetizer.

Fresh citrus fruits, young strawberries, and white flowers in the fruity and refreshing nose; on the palate, berries, grapefruits, minerals, and rose petals, plus some yeast-like flavor; medium-bodied; the finish, crisp and medium-long, with bread, citrus fruits, and a touch of pleasant bitterness; overall, 89-90 points; a decent N.V. champagne, though I preferred the palate to be creamier and rounder and the bubbles to last a bit longer in the champagne glass.

This is a well-rounded, Pinot Noir dominant Champagne which shows some of the richness you'd expect from Ambonnay yet somehow fails to inspire or provoke much excitement. The palate offers up a solid showing of pears and a touch of citrus before finishing with some light biscuity tones. Bubbles are slightly coarse whilst the acidity is nicely crisp. Certainly a decent wine but somehow lacking in genuine character or charm.

Sugar cookie notes on the nose with high-toned fruit (grapefruit) and a nice classic Champagne yeast; mouthfeel is well-balanced, medium bodied, with very good length and slight fresh herb notes. Never heard of this producer, but very impressed. From magnum.

Pale with lively fine bead. Fresh, pure apple/lemon nose with no oxidative or autolytic notes. Light, fine fruit with a slightly drier impression than the rose from this producer. Very well rendered in a fruit driven style, but less unique than the Dethune rose which is just a show stopper. Both well made wines, though.

I have had several bottles of this medium dry champagne and like it alot. It maintains its sweetenes without any bitter/sour aftertaste as so many very dry champages tend to have. Fruit is on light side, so this is a great sparkling wine to have with food. We opened the bottle to consume with the caviar course we had at dinner the other night. A perfect compliment. I will add a few more bottles to my inventory.

70% pinot noir and 30% chardonnay; 12.5% ABV; Dosage 9 g/L
Light gold. Citrus & Red berries on the nose, w/hints of floral and spice.
Very energetic upon pour, w/tiny bubbles that follow.
On the palate fresh citrus (orange/lime) and strawberry and with a hint of honeysuckle. Almond on the (long) finish.
NICE! Very happy I was able to snag a deal on 4 bottles! Had w/Sweet Potato Gnocchi w/Hazlenut Pesto w/lemon drizzle. Wonderful!

Obvious signs of oak, there is sappy pine resin, cedar, it’s not just textural but aromatic as well. There’s so much tension, and just a lot going no on here that it needs more time to quiet down. Also the mousse is quite aggressive despite being quite cold, so much so that it is distracting and again points to much longer aging needed, but this wine has the stuffing to age. Only criticism might be that the dosage seems to be a bit low for the level of extract and bitterness on the finish, but that’s just my preference.

Disclaimer, we don’t know all that much about champagne. This was lovely, easily the best bottle of champagne I have ever had. The nose makes you think you are walking through an apple orchard on a crisp fall day. The palate reveals more apple, pears, and some grapefruit. The few bottles of champagne that I have had would always make me call out Chardonnay, but not here with this bottle. Improved lots over the two hours of consumption. 93 (from a champagne novice)

An attractive light gold in color, a shade richer than the standard champagne. On the nose: Brioche, grapefruit, orange peel, green apple, nuts. On the palate: apricot. High acidity, medium- body, pronounced, balanced. Nice finish... I like it!

This grower’s NV always seems to charm me every time I get the opportunity to drink it. The color is almost a touch brassy. Beautiful, tiny bubbles. The nose is remarkably red fruited with strawberries and brioche on full display. It’s almost like a strawberry shortcake, no cap. On the palate, strawberries, raspberries, lemon zest, minerals. It’s rich, but so impeccably balanced. Absolutely, positively crushable. The dosage is perfect. I haven’t deciphered them code Dethune uses on the bottle to understand then disgorgement date...but I believe was recent.

Powerful and round: Ambonnay signature. Gunpowder and smoke, wet stones, a little salty, white chocolate and a hint of coffee with milk, raw peanuts, slightly doughy, a touch of oak is noticeable; ripe and sweet red fruits such as cranberries, blackcurrants and pink grapefruit, red apples, dark cherries.
Surprisingly engaging; this doesn't feel like an entry-level champagne, much more complex than you would expect, it maintains a high acidity. An interesting wine to drink with several years of bottle age.

A 70/30 split of Pinot Noir and Chardonnay, with a less serious demeanor overall than a lot of the Extra Brut and zero dosage Champs I’ve been drinking lately. A friendly and crowd-pleasing type of wine, with just enough complexity to hold interest for anyone looking for a little more than just an Oyster ground pounder. Falls off slightly on the finish, but overall a solid performance given its class.
Paired well with panko and mustard crusted slow-cooked salmon and preserved lemon couscous.

Nice on the nose showing tutti frutti, butter and some lime citrus notes. Creamy palate with a rounder acidity showing yellow apples and with a nice bitterness on the nice and lengthy finish.

Mid gold colour, surprisingly deep for its age, but the high proportion of reserve wines (see below) may account for that. Lovely nose with plentiful caramel and a touch of pear syrup. Intense, vibrant taste, more like a vintage wine - for once, grand cru quality living up to the name. A note of beeswax and a bit of salinity on the finish. This is really excellent, delicious, and great value. The next day, not as good but still drinkable. 70% pinot noir, 30% chardonnay; 50% reserve wines; bottled April 2016, disgorged July 2018. [Composite cork + cage, with a rubberised coating on the cap I've not encountered before; 12% abv; Woodwinters, ~£30].

I’ve said it before and I’ll say it again, Champagne may be the best wine pairing with the traditional Thanksgiving meal and this NV from Paul Dethune was sublime. Pulled from the fridge and opened about 30min prior. Straw colored with an impressive mousse. About as affable as they come with a bouquet of white peaches, magnolia blooms and a whiff of brioche. On the palate it was stone fruits, citrus and minerals. Every bite of the meal begged for another sip and every sip begged for another bite. What a delight.

Same base of 2014, disgorged though 04/2016. That bottle from May was dosed at 9 g/l and the back label on this wine doesn't speak to dosage but let's assume the same. And while I don't drink this high of dosage much anymore except for Vilmart, like with what they do, the same holds true of Dethune, as they get the acidity and balance into their wine and the resulting taste is not sweet or heavy. Green apple, honey and the spine of acidity that makes it all work.

Frankly any current Nyetimber offering a better and more ready drink . English sparkling - Nyetimber, Gusbourne, Ridgeview, Camel Valley, Hambledon and others - are a better bet than this.

Yeast up front on the nose is pleasant enough, but the palate for me just seemed weird, sharp and angular, oxidative, grapefruit. I don't know, this didn't work for me. This was about the exact same experience, though I didn't find the nose particularly appealing this time either. The palate has an oddly woody taste too. Well, I guess that's one less Champagne I need to chase.

This half-bottle had a 2013 disgorgement date, and wasn't the freshest – quite mature, and was actually much better with some air. Can't complain with a 50% off deal from BPW though – just $14 for the 375ml bottle!

Wow, this really took on some depth since the last time we tried it. Time on the cork apparently doesn't hurt this wine. Delicious. Bright and airy with a steely edge of acidity. A touch of brioche on the nose. Just fantastic.

Very high quality brut NV - 70% Pinot Noir, 30% Chardonnay. I opened two bottles - both mis en cave date of April 2012, 1st bottle disgorgement date April 2014 and 2nd bottle disgorgement date July 2014. The first bottle with earlier disgorgement date showed slightly better especially after a while (having been opened for about 2 hours). So I suggest opening this a bit in advance and not serve it too cold either. Beautiful champagne from a small house that seems to be on great form!

Thanks therhonestore for the share out our tasting. Sparkling straw, high carbonation. Nose is butter, sweet cream, fresh bread rolls. Taste is sharp lime seltzer, bread, sweet peach, white strawberry. Palate is sweet up front and finishing quite sour and dry. Quite nice, but didn't stand out for me as a champagne I would seek out again, but then again I am still learning.

Clear pale straw color. Peach, orange, and tart citrus on the nose. Hints of herbs, grass, and honey. Nicely floral, some cracker, and bread dough. Nice dry palate. Tons of herbs, citrus peel, and grass. Slight sweetness of peach, honey, and vanilla. Doughy. Nice yeast and mineral character. A touch of apple skin.

Wide open nose of apple, pear, mineral and bready notes. Palate has medium body with a fine, energetic bead. Good racy acidity provides framing and length. Youthful and not the most complex but there are a couple of dimensions and layers on the palate which keeps this interesting. Medium+ finish. Great QPR.

This is a rustic styled pinot noir based champagne that is enjoyable. The first two bottles I enjoyed more than this bottle. For whatever reason I thought the dosage was a bit too high in this bottle. This was paired with a crab cake appetizer.

Dinner Party @ Home (Costa Brava, 11 Island Avenue, #412, Miami Beach,FL): The wine looks Light gold colored. The legs are Medium. It smells like Lemon, Pear, Geranium, and Leesy. The body is Medium/Full. The wine has Round texture. The wine finishes Medium. Served with with Roasted Marcona Almonds.

This is a rustic champagne that delighted me during a casual mid week dinner. Nice and full on the palate with ample acidity...this is easygoing champagne, and I liked it..i paid $29 for this so it was worth the money

香氣表現上有著柑橘、鳳梨、杏桃、和萊姆的果香, 並帶有奶油、礦物和烤吐司的香氣, 且略帶點青草氣息, 香氣表現頗有複雜度! 口感圓潤、氣泡細緻而均勻, 酸度支撐相當不錯, 整體的表現相當的均衡且頗有層次, 相當不錯的一支香檳~

This is a well-rounded, Pinot Noir dominant Champagne which shows some of the richness you'd expect from Ambonnay yet somehow fails to inspire or provoke much excitement. The palate offers up a solid showing of pears and a touch of citrus before finishing with some light biscuity tones. Bubbles are slightly coarse whilst the acidity is nicely crisp. Certainly a decent wine but somehow lacking in genuine character or charm.

I have had several bottles of this medium dry champagne and like it alot. It maintains its sweetenes without any bitter/sour aftertaste as so many very dry champages tend to have. Fruit is on light side, so this is a great sparkling wine to have with food. We opened the bottle to consume with the caviar course we had at dinner the other night. A perfect compliment. I will add a few more bottles to my inventory.
