10210 bottles and 150 magnums prodcued Sept 22 disgorgement decanted in glass and allowed to warm to RT nose- honey, nuts, but not really oxidative mouth - there is a nut butter richness here at the core, flanked by fresher and sourer fruit flavors. deep at its core it reminds me a bit of a peanut brittle. There an impressive core of richness here.

This is the 10/18 disgorgement and shows the benefits of aging on cork. Rich and vinous with apple/plum fruits and lots of baking spice and biscuit. Long on the palate and WAY too easy to drink. This bottle disappeared quickly. It's a shame about the current price but there is no doubt about the quality.

Savart-a-thon (Cru and Domaine, Portland OR): This is really aromatic on the nose as the tones of almonds, red apples, bosc pears, biscuits, nectarines, toast, candied lemons, and yellow flowers all weave together beautifully with just the right amount of oxidative tones. The Medium bodied feel is well balanced and lively with racy, high acidity and a lengthy finish. This is showing off a different level from the previous two wines and is where things start to get serious.

Disgorged June 2022. 4g dosage and 80/20 Pinot Noir and Chardonnay. This is long. Not wide, just very long and focused. No opulent palate here. Just very nice linearity (rather than leanness) with Pinot Noir dominant notes of red apples but nothing prototypical (less obvious than Savart's L'ouverture) as there is an array of flavours of various intensity. Very saline finish.

A clear step up from the l‘Ouverture. This is showing nicely perfumed, with notes of sweet spices, vanilla, lemon curd, some mint and hazelnuts, too. It‘s medium-full bodied, with pretty high acidity and excellent mousse. Long finish. A very good Champagne with building up complexity.

This seemed so piercing and one-dimensional. Tasted on opening, after an hour when it got warmer, then second day (well preserved). The best was open a couple hours and ten degrees warmer - high 40s. Then it had a little bit of depth. The lesson? Don’t be in a hurry to drink it on opening. Still - not an experience I care to repeat.

Subtle nose with pear, almond and a touch of reduction. Palate green apple, yellow peach, pear, almond, a slight straw note. Rich and concentrated. Some brioche and "The smell of the heat coming off the freshly cut grass" (to quote Naomi Elegant). An impressive Champagne!

Saturday hangout at Domaine (Chicago, IL): Disgorged June 2019. From magnum. I liked this more than I expected for Savart -- this had a nice roundness to it, and even though it wasn't too complex, it had nice freshness, tart white fruit, and a minerally streak that all felt in nice balance.

I couldn’t finish this bottle. I thought it was going to be great at first, with taut crisp yellow fruit, then on the swallow it seemed a little oily, astringent, and just off. Too bad. It progressively got worse and bottle sat unfinished on counter all night.

Casual dinner with Sushi (Kawasemi): PnP. Disgorged March 2017 with 5g dosage. The usual high tone red fruits aromas associated with Savart but not as pronounced. Palate was rather flabby lacks, tension and acdity one would expect. With a med finish. My first disappointing champagne from Savart.

Still very young and tight with just a little over a year after disgorgement - it could benefit from 2-3 years more in the bottle I'd say. Got better and better as time passed with the bottle open.

May 2016 disgorgement. 80% Chardonnay, 20% Pinot Noir, dosage ~5g/L. Yellow-gold; medium intensity aromatics, lemon curd, slight brioche; palate is medium bodied, medium-plus acidity, quite clean with lemons and some minerality throughout, a bit of brioche though without much oxidation (surprising for its age post-disgorgement), 12% alcohol; medium length finish, quite clean and flavorful. Excellent for the price and level, though I'm not confident that 5+ years in the cellar has made it any better than it was on release. 91

The 50 Big Bash (Harry's NYC): Not entirely sure I've got the right wine. This was a 2000 Savart off the list at Harry's (the special list for the birthday party). I was really impressed with it. Very fresh in style and pretty tasty. Clearly has aged well. Still on the young side. Delicious.

First up I need to say my knowledge of Champagne is limited as I tend to tire of it after a glass or so, so don’t buy much. So my review needs to be seen in this context.
Pours light gold, with a moderate amount of small bead bubbles. So far so good.
Nose. Fairly shy with a touch of toast over baked apples.
Palatte. First off the mousse disappears alarmingly fast for a wine disgorged in 2020. After about 10-15 seconds you’re left with essentially a white wine with a touch of spritz. Flavours are ok. It’s a rich champagne with some toasty elements and then essentially fruit, apples, peach, a touch of white flowers and then (as you would expect) high acidity.
Based on the taste it’s a rich champagne with not much complexity. But the drop off of the mousse is the thing that stands out. Bad bottle? The speed of the drop off would I guess suggest this. So do bear this in mind when you see my rating, but it’s a drink up now and 86 based on this bottle.

Dark, brooding nose with notes of toast. Precise and firm in the mouth, dry but with creamy mousse. Two hours after finishing the bottle, the aftertaste reemerged with its notes of strawberries, dust and iron. Fabulous wine.

Based on the 2019 vintage, with reserve wines from 2018. A blend of 80% Pinot Noir and 20% Chardonnay.
Unfurling in the glass with a distinctive note of rasberries mixed with a dash of lemon, pear and bit of apples. Nice little addition of toast and vanilla. On the palate it shows a bit more citrus. Nicely concentrated with a slightly chalky feel. Small bubbles with an almost pillowy feel. This was very drinkable and well done «entry cuvee» - 91-92 points

(Disgorged in July 2021, base year 2017 with 50% reserves from 2016, 80% Pinot Noir and 20% Chardonnay, dosage 4 gr/L) Yellow colour with a promising youthful nose showing liquorice, cream and minerals in a very nice and colourful way. Mature yellow apple’s acidity on the smoothing palate also showing hints of tarragon on top of a fine creamy layer before a pleasant plums peel bitterness turns up the volume on the lengthy finish.. (Best with 1-5 years extra cellar time)

Hard to assess because drank out of red cups at a picnic, but good as usual. Bubbles seemed a bit larger than usual, but I like how this is drinking now based on this bottle purchased over 3 years ago. Normally this can be a bit too incisive for a fresh disgorgement.

Beautiful nose of lemon, apples and hints of brioche. On the palate more apples, oak and chalkiness. Persistent mousse. Quite acidic and focused on a good although ‘young’ way. I think I would like this more with some bottle age. Also significantly improved as it warmed and the flavors became more intense on the palate.

Grand Cru Portfolio Tasting (3/9 Grand Cru Portfolio Tasting, NYC): Fascinating nose of kelp and limestone. Very, very compact but elegant. Tropical fruit a touch, maybe yellow plum, attains a note that's almost reminiscent of vanilla Coke (?!), but a dry finish. Pretty haunting.

Made from 80 % Pinot noir and 20 % Chardonnay, dosage 5 g/l, degorgement in June 2016.
It is nicely golden coloured, bruised apples and yeast on the nose. Creamy, somewhat rich texture w. a good acidic bite which stays until the end. A bit red-fruited palate w. pears and biscuit. Very good.

I always enjoy this wine and this time was no different. A few bottles went down very easily. It pairs great with food. Pours this almost a light orange color which surprised me (noticed it more because I'd started the meal with a glass of white). Served almost room temperature and then chilled it and honestly the warmer wine is more interesting and flavorful. Easy to drink and really enjoyable.
Consistent with previous note. I bought these in 2016. This smelled ok, but the palate was not compelling at all. It also had a chaulky taste/feel, along with a wild yeast flavor. I don't hate this, but I'm not digging it for the $49 price.

Bruised apple, underripe strawberries, orange zest and a slight nuttiness on the nose. Medium acidity. Slight creaminess on the front palate, but a short, slightly mineral finish. Descent champagne, but nothing terribly exciting. I suspect this needs some time.

Another november 2015 disgorgement, not as good as the one in 2019 because this seemed less evolved, with less of the creamy texture that I recall the earlier one having, a little bitter breadiness and lemon peel. The citrus reference thus lands in grapefruit, and this is coupled with both red and green apple, vanilla biscuit, white flowers, salty minerality. Good, but not as good as my best experience of Savart.

The next cuvee up from L’Ouverture. Similar in style, but more intense aromas, concentration and length. 80% PN and 20% Chard. Darker colored and fine bubbles. Ripe fruit notes of lemon zest, pear, almond, brioche and mineral as well. Medium 5gr/l dosage (in my world). Fred Savart is a wine maker to watch!

Disgorged in 2018. Compared to the bottle of my last note, this is showing decidedly more apple fruited in nature rather than citrus, though still in the same style with ocean spray on the nose and great liveliness. The bubbles are aggressive, make sure to swirl a bit to release and get to the underlying wine.

Quite oaky, violets, lavender, freshly cut herbs such as eucalyptus and dill, pears, raspberry cream tart, cranberries crumble, a hint of honey and caramel, spiced cookies, gingerbread, oyster-like salinity, metallic notes, oxidative finish. June 2016 disgorgement. This was very dry and a little austere, but it went down easily enough. On day 3, served in a Burgundy class at close to room temperature, this finally shines. It's still relatively simple, a driven by lime citrus flavors. But I feel like I might finally be understanding Savart. Like Cedric Bouchard's wines, this is sort of like a strict white Burgundy that happens to have bubbles. Accordingly it shines with food, and served warmer than old fashioned Champagnes. So I don't see myself opening these wines in the future except with a meal; I'd imagine they would be lovely with a butter-poached sole, or sashimi.

This is my kind of champagne. Lovely red fruit profile, very dry, crisp, just a hint of lees. Disgorged 4/2017. Not quite as good as the 10/18 lot which is just spectacular, but still excellent. This is quickly becoming my "house" champagne, now that I am priced out of Bouchard.

Disgorged October 2015. 80% PN and 20% Chard, with 5 g/l dosage. Opened this yesterday and then put a decent seal cap on it to maintain the bubbles. A powdered rock aromatic, which is followed by a palate that has a lot of stuffing, with a mix of apple, pear, a tangy kind of cranberry/cherry and some toastiness. Finishes with a flinty, tangy, crisp finish that is just lightly bitter with citrus peel and apple. When this finally became room temp, I noticed what seemed to be a light whiff of vanilla, too.

You've got to hand it to a man that makes wine in a cellar right underneath his house. Living and breathing it, literally. Located in the minuscule village of Ecueil on the slopes of the Montagne-de-Reims, Savart Champagne is a one-man operation run on 4 hectares of premier cru vineyards. Something that really caught my eye when reading about the production was that Savart uses new barrels not because he likes the taste of oak, but because he wants to use as little sulfur as possible - the idea being that new barrels lack the microbial residue of previous vintages. The 'L'Accomplie' is made from the first pressings of 80% Pinot Noir and 20% Chardonnay. Predominant barrel fermentation with 5 g/l dosage (extra brut).
Pale lemon in the glass with bubbles that stay consistent through the course of the 2.5 drinking experience. Quite aromatic, especially as the wine gets warmth and air. Notes of yellow/red apple, lemon, lime rind, roses, peach and a solid dose of lees (cereal, toast). Light on its feet. Mild complexity and grip. Balanced. I guessed a NV house blend because I just couldn't associate its intensity, nor expression with growers I've tried in the past. Not that that's a bad thing, but considering the price, I'd definitely lean towards favorites like Bereche or Marie Courtin.

June 2017 disgorgement. Absolutely lovely wine. Esteel’s note gets it right in terms of the flavors. I’d sum up as having a nice frothy mousse, excellent balance, citrus, toast, and a touch of creme. On the food friendly side but enough richness to drink on its own. Much more enjoyable than last year’s disgorgement for me.

Savart is my current crush in Champagne. I like the spice and texture the barrels impart when measured against the low dosage style. There is tension and density while also spice from the wood (I guess) with a finish that clears the palate with acids and structure leaving you yearning for another sip. Does really well with food. I can't wait to see how this does with a few years in the cellar.

June 2016 disgorgement, dosed at 5g/L. Oh yeah, another bottle of Savart. Really intense cherry fruit. Pretty dry/austere at this stage, even a bit shrill - particularly served straight from the refrigerator. Much better as it warms. Nonetheless this release is still too raw for my tastes; will hold another two years until this gets to the happy place.

Disgorged in June 2016. The color was very pinot noir, modest orange / light gold. On the nose, raspberry foam, sweet cherries, white flowers, on the palate, quite juicy with mixed of red berries and citrus. The wine presented good tannin, finish was quite long.
Brief intro: L'Accomplie" is 80% Pinot Noir and 20% Chardonnay from both Ecueil and Villers-aux-Noeuds. The base vintage makes up 50% of the blend with the other half coming from the previous vintage. 15% of the wine ferments in steel, and 85% ferments in barrels. Partial malolactic fermentation is allowed. dosage is 5g/L.

Nose: The nose is quite aromatic and balanced from the get go and filled with red apples, red berries, biscuits, white florals, some minerals, and pears. There is excellent depth with a feminine take.
Taste: Medium bodied with high acidity. The acidity is bright and refreshing while providing an excellent spine. The feel is well balanced and fresh with red apples, red berries, biscuits, white florals, and a touch of mineral tones.
Overall: This is from 10/17 disgorgement. This is a beautifully fresh and lively champagne that shows off the Pinot fruit perfectly. There is excellent depth on both the nose and palate with well integrated acidity.

Deg ’16 On the nose quite rich with apples, lime, lemon and lychee. Also some iodine and grass. On the palate a bit more stringent with plenty of fruit and substance but laser like focus and acidity. Chalky minerality. Fresh. Very long. Super!

I expected more from this extra brut Savart. A blend of 20% Chardonnay and 80% Pinot Noir, it has tons of bruised apples in the bouquet which come in contrast with its sharp vertical palate. Prickly.

Blind tasting. Brief note. Pours a medium straw color in the glass. Perlage and mousse are are on the finned of medium. Nose and palate have good intensity showing a good amount of toasty and autolytic notes, ginger, pear, red apple skins, white florals, vanilla creme, citrus zest and a dash of mineralité. Midpalate has good weight and a nice creamy texture with very good acidity to balance the richer toasty notes going on to finish medium (+) and quite dry. Very nice.

Very expressive nose, a hint of burnt rubber that blew off, cinnamon baked apples. On the palate tart granny smith apples and almonds, long finish with a somewhat bitter note followed by mouthwatering acidity. Very nice, especially with some pre-dinner snacks.

First time with the producer, bought it off the list. Definitely would pay regular retail on this. Complex and textured with loads of ocean spray and ripe orchard apple. A bit of fleshiness on the back end that helps give it a bit more punch to the wine. Very nice champagne at the price.

The nose was wonderfully fresh with floral green apple tones offset by notes of raw dough, smoke, savory herbs and minerals. On the palate, I found zesty textures with soothing fine bubbles in a savory and almost salty expression as brisk acidity cut through it's rich textures and left the mouth watering through the finale. Hints of spiced, crisp granny smith apple lingering long on the finish. This is drinking beautifully. (from magnum)
My first wine from this house, and it did not disappoint. Very dry with bracing acidity. Beguiling nose of quince and Anjou pear with hints of subtle oak. Not showing nearly as much on the palate as on the nose at this young age (this bottle was disgorged in January), but lots of potential. Would like to pick up a few more bottles.

May 2016 disgorgement. 80% Chardonnay, 20% Pinot Noir, dosage ~5g/L. Light Lemon-yellow in color; nose is moderately aromatic, slight bready/biscuity, bruised apple, slight lemon; palate has vibrant mousse, bruised apple here as well, high minerally acid, slight tart lemon, lovely fresh character but also with style and density, midpalate loses just a bit of length; finish is medium length at most, a bit shorter than expected given the complexity on the nose and palate. Overall a nice champagne with good balance and excellent character, excellent value for the price, and may improve over years, but I may like the Bulle de Rose just a tad bit more. 91-92+, but on the lower end of that for today. 2 hours air: Develops more of a richness and brioche with air. This is continuing to improve. Day 2: Similar to yesterday, with a nice brioche toast on the nose; palate has retained plenty of bubbles but also a nice balance between richness and freshness; finish consistent with yesterday with perhaps a bit more flavor but still a slightly restricted length.

Disgorged May 2016. Served alongside the Bouchard Non Vintage Roses De Jeanne and both showed well. While the De Jeanne was the preferred of the two by most this was well received also. Very slightly darker than the near white De Jeanne, with green apple, green pear and lemons.

Although I have long heard good things about Savart, this is my first from the champagne house. This particular one is pinot noir dominated, totaling 80% of the blend with the other 20% comprised of chardonnay. The bubbly is popped and poured into wide-based glasses to help open up the tightly-wound bundle. It pours a somewhat deep golden color with very fine beading and long legs, all of which are signs to prolonged aging of the wine itself. On the nose, it is still somewhat tight, possibly because it is still relatively young. Nonetheless, there is a bountiful, concentrated bouquet of granny smith apples, plenty of citrus, sugarcane, pine, almonds, pears, white jasmine flowers and even some smoky spice towards the end. On the palate, the champagne is very supple and drinks like a well-constructed white blend. In fact, there is just the barest of hints of carbonation. However, much like the nose, the palate is rather compact as well and only yields very primary citrus, fruit-dominated flavors. There is also a particularly strong mineral backbone and adequate acidity in the end to keep things fresh. Just the slightest of smoke towards the end as well to draw this champagne to a close. Admittedly, drinking this now is infanticide. However, I see great potential in this and additional aging would surely help bring out the mesmerizing qualities of the pinot noir.

A tad shy on the nose compared to L'Ouverture. Squeezed apple must, nashi pear, white roses, bitter almond, mango, pine tree, mint and cherry flavoured candy.
Unfortuently to young on the palate. Red apples and red currant with loads of oak character. It shields off most of the wine. Beneath the oak there is pleasent creamy pear sorbet. My fiancée felt aloe vera (?)
Will wait with my remaining bottles. Has great potential.

1982 and other wines: From a magnum. Lots and lots of oak and meat on the nose. Pronounced saltiness on the palate, very intense quince. Hint of smoked eel (!?) on the nose. In has a tremendous concentration and presence, but I would cellar it for at least a couple of years when it all blends togehter and integrates better.

Very fresh and structured revealing abundant green apple, lime and lemon zest, structured minerals and complexity from sweet brioche and lightly roasted walnuts. The palate is fresh and crisp and has a stunningly vivid but still elegant and fine tuned mousse. The length on the finish lasts some 40-45 seconds. A great wine, perhaps a still too young... No idea when this bottle was disgorged but the wine appears young.

A very characterful and expressive nose of earthy red fruit (cherry and tangy apple), mushroom and smoke. With time some oaky notes emerge, creating a cherry cola -like sensation. Overall a very enjoyable bouquet that to me seems to speak of terroir. A lively, persistent mousse gives room to a vinous yet very vivid and energetic palate that is very light on its feet. Bursting with red apple and cherry, while also possessing some earthy and herbal notes. Beautifully balanced and deliciously drinkable with seemingly perfect dosage. High acidity leads the wine to a long, mouth-wateringly tart finish. Simply uplifting and just great with both sushi and Dachsteiner cheese. At 28 €, pretty nice.

Champagne Savart with Caviste: Rather powerful apply nose with green-apply notes, some peach and other "deeper/more mature" fruit notes, and slightly herbaceous. Dry palate, fruity, definitely noticeable minerality, green apples, high acidity, aftertaste with quite noticeable minerality. Rather young, drinks well now, 90 p.
This was from a magnum disgorged 2013, the base vintage is 2009. Compared to the current 75 cl release of L’Accomplie (base 2012), the main difference is the more ripe fruit notes here, which means that it more obviously says "Pinot Noir". I believe this is caused by the 2009 base vintage, which usually shows high ripeness but still excellent balance, rather than bottle size or a little extra time in the cellar.

Champagne Savart with Caviste: Nose with ripe and well-waxed green apples, slightly smoky, some flowery and perfumed notes. With time in the glass some oak notes also emerged. The palate is dry and firm, medium-bodied(+) with green apples, citrus, and a noticeable minerality, high acidity and an aftertaste with a noticeable mineral note. Young, but drinks well now, 89-90(+) p.
Disgorged October 2014. The base vintage is 2012 (70%), supplemented by 30% 2011.
Slightly more powerful and complex than the L’Ouverture, with a hint of oak notes that I didn’t notice first when the mousse dominated, but that could be felt when it had been allowed some time in the glass. It has more potential for development. Also here the green apples dominate, but there is also more citrus, and the minerality is definitely more prominent and gives some saline impression.

A lovely Champagne which needs some air if tasted today. The palate first reveals less pleasant tones of yeast (best way to describe it...), but also green apple, lemon and lime zest, crisp minerals and a very intriguing complex tone of white lillies and roasted walnuts(!). After some time in the glass, the yeasty part is totally gone and we are left with all the other lovely components of the nose. The palate is crisp and with the vivid mousse it adds nicely to the balanced and structured impression. The length on the finish lasts some 40+ seconds. Without doubt a great Champagne which needs air if tasted today. I think this bottle was disgorged late 2013.

The nose is all lemons and sour apples. Tastes like lemon mineral water with some yeasty notes on the finish, however the focus and depth here is wonderful. I'm not usually a fan of these sharp, somewhat lean Champagnes but this was really delicious. Great texture, right out of the fridge this had an almost crystalline texture, reminding me of shaved ice. I will definitely seek out more wine from this producer.

Champagne Savart with the importer (Grappe, Stockholm): Bread, some honey, apple, good fruitiness, high acidity, citrus, mineral. Young, 89+ p. The Pinot Noir note (it's 80%) is less obvious in this wine than in the one year younger release of the same wine. I would have believed that this was a blanc de blancs. Less pronounced fruity notes and less apple, but more minerality and higher acidity. Although one year older, it comes across as younger on the palate. Disgorged 2011, base vintage 2008 (50%, supplemented by 25% 2007 and 25% 2006).

Although Pinot Noir comes through with apple and spice notes, I'd rather have guessed that this was a 50/50 blend with Chardonnay due to its acidity and balance. A clear step up from the l‘Ouverture. This is showing nicely perfumed, with notes of sweet spices, vanilla, lemon curd, some mint and hazelnuts, too. It‘s medium-full bodied, with pretty high acidity and excellent mousse. Long finish. A very good Champagne with building up complexity.

Casual dinner with Sushi (Kawasemi): PnP. Disgorged March 2017 with 5g dosage. The usual high tone red fruits aromas associated with Savart but not as pronounced. Palate was rather flabby lacks, tension and acdity one would expect. With a med finish. My first disappointing champagne from Savart.

November 2021 disgorgment, if I remember correctly.
No formal notes done, but man was this just overall a great champagne and my first Savart. For being one of his entry, I really want to see what his vintage bottles can deliver...
Still very young and tight with just a little over a year after disgorgement - it could benefit from 2-3 years more in the bottle I'd say. Got better and better as time passed with the bottle open.

First up I need to say my knowledge of Champagne is limited as I tend to tire of it after a glass or so, so don’t buy much. So my review needs to be seen in this context.
Pours light gold, with a moderate amount of small bead bubbles. So far so good.
Nose. Fairly shy with a touch of toast over baked apples.
Palatte. First off the mousse disappears alarmingly fast for a wine disgorged in 2020. After about 10-15 seconds you’re left with essentially a white wine with a touch of spritz. Flavours are ok. It’s a rich champagne with some toasty elements and then essentially fruit, apples, peach, a touch of white flowers and then (as you would expect) high acidity.
Based on the taste it’s a rich champagne with not much complexity. But the drop off of the mousse is the thing that stands out. Bad bottle? The speed of the drop off would I guess suggest this. So do bear this in mind when you see my rating, but it’s a drink up now and 86 based on this bottle.

Based on the 2019 vintage, with reserve wines from 2018. A blend of 80% Pinot Noir and 20% Chardonnay.
Unfurling in the glass with a distinctive note of rasberries mixed with a dash of lemon, pear and bit of apples. Nice little addition of toast and vanilla. On the palate it shows a bit more citrus. Nicely concentrated with a slightly chalky feel. Small bubbles with an almost pillowy feel. This was very drinkable and well done «entry cuvee» - 91-92 points

Yellow colour with a promising youthful nose showing liquorice, cream and minerals in a very nice and colourful way. Mature yellow apple’s acidity on the smoothing palate also showing hints of tarragon on top of a fine creamy layer before a pleasant plums peel bitterness turns up the volume on the lengthy finish..
(Best with 1-5 years extra cellar time)

Beautiful nose of lemon, apples and hints of brioche. On the palate more apples, oak and chalkiness. Persistent mousse. Quite acidic and focused on a good although ‘young’ way. I think I would like this more with some bottle age. Also significantly improved as it warmed and the flavors became more intense on the palate.

Made from 80 % Pinot noir and 20 % Chardonnay, dosage 5 g/l, degorgement in June 2016.
It is nicely golden coloured, bruised apples and yeast on the nose. Creamy, somewhat rich texture w. a good acidic bite which stays until the end. A bit red-fruited palate w. pears and biscuit. Very good.

I always enjoy this wine and this time was no different. A few bottles went down very easily. It pairs great with food. Pours this almost a light orange color which surprised me (noticed it more because I'd started the meal with a glass of white). Served almost room temperature and then chilled it and honestly the warmer wine is more interesting and flavorful. Easy to drink and really enjoyable.

Koncentrerad doft som först och främst präglas av äpplen och en elegant toastyness. Sedan följer toner av ananas, gräs och apelsin. Smaken är krämig, koncentrerad och precis. Här finner vi bland annat syrliga karameller och grillad citron. Bra närvaro och koncentration. Syran vet precis när den ska sluta och går inte till överdrift.

Another november 2015 disgorgement, not as good as the one in 2019 because this seemed less evolved, with less of the creamy texture that I recall the earlier one having, a little bitter breadiness and lemon peel. The citrus reference thus lands in grapefruit, and this is coupled with both red and green apple, vanilla biscuit, white flowers, salty minerality. Good, but not as good as my best experience of Savart.

Very nice with an intensity showing orange citrus zest, minerality (Salubrin) and bread notes in a still youthful way. Red apples acidity combined with a fat and buttery note in a still very youthful way on the palate also showing a touch of dried fruit on the finish.

The next cuvee up from L’Ouverture. Similar in style, but more intense aromas, concentration and length. 80% PN and 20% Chard. Darker colored and fine bubbles. Compared to the bottle of my last note, this is showing decidedly more apple fruited in nature rather than citrus, though still in the same style with ocean spray on the nose and great liveliness. The bubbles are aggressive, make sure to swirl a bit to release and get to the underlying wine.

Highly perfumed nose. Quite oaky, violets, lavender, freshly cut herbs such as eucalyptus and dill, pears, raspberry cream tart, cranberries crumble, a hint of honey and caramel, spiced cookies, gingerbread, oyster-like salinity, metallic notes, oxidative finish.
Quite characteristic of Savart. Signs of some good evolution with a juicy, lively texture, and a surprisingly high acidity. Super enjoyable and contemplative; not a basic apéritif champagne.

80% Pinot noir 20% Chardonnay. Dosage 5g Disgorged sep 2018 Aromatics of red apples, pears and cool florals. Quite sweet on the entry, easily approachable and easy to like displaying fine mousse, spices red berries and apples, citrus, subtle spices and some slate towards the end. There is nothing not to like here.

This is my kind of champagne. Lovely red fruit profile, very dry, crisp, just a hint of lees. Disgorged 4/2017. Not quite as good as the 10/18 lot which is just spectacular, but still excellent. This is quickly becoming my "house" champagne, now that I am priced out of Bouchard.

Disgorged november 2015, 50/50 2013 and 2012. Beautiful champagne in a really good spot, just the slightest maturity coming on. Mature green and young red apples, lemon, vanilla crackers, almonds, milk chocolate and appetizing citrus rinds. Delicious!

You've got to hand it to a man that makes wine in a cellar right underneath his house. Living and breathing it, literally. Located in the minuscule village of Ecueil on the slopes of the Montagne-de-Reims, Savart Champagne is a one-man operation run on 4 hectares of premier cru vineyards. Something that really caught my eye when reading about the production was that Savart uses new barrels not because he likes the taste of oak, but because he wants to use as little sulfur as possible - the idea being that new barrels lack the microbial residue of previous vintages. The 'L'Accomplie' is made from the first pressings of 80% Pinot Noir and 20% Chardonnay. Predominant barrel fermentation with 5 g/l dosage (extra brut).
Pale lemon in the glass with bubbles that stay consistent through the course of the 2.5 drinking experience. Quite aromatic, especially as the wine gets warmth and air. Notes of yellow/red apple, lemon, lime rind, roses, peach and a solid dose of lees (cereal, toast). Light on its feet. Mild complexity and grip. Balanced. I guessed a NV house blend because I just couldn't associate its intensity, nor expression with growers I've tried in the past. Not that that's a bad thing, but considering the price, I'd definitely lean towards favorites like Bereche or Marie Courtin.

June 2017 disgorgement. Absolutely lovely wine. Esteel’s note gets it right in terms of the flavors. I’d sum up as having a nice frothy mousse, excellent balance, citrus, toast, and a touch of creme. On the food friendly side but enough richness to drink on its own. Much more enjoyable than last year’s disgorgement for me.

Savart is my current crush in Champagne. I like the spice and texture the barrels impart when measured against the low dosage style. There is tension and density while also spice from the wood (I guess) with a finish that clears the palate with acids and structure leaving you yearning for another sip. Does really well with food. I can't wait to see how this does with a few years in the cellar.

Disgorged in June 2016. The color was very pinot noir, modest orange / light gold. On the nose, raspberry foam, sweet cherries, white flowers, on the palate, quite juicy with mixed of red berries and citrus. The wine presented good tannin, finish was quite long.
Brief intro:
L'Accomplie" is 80% Pinot Noir and 20% Chardonnay from both Ecueil and Villers-aux-Noeuds. The base vintage makes up 50% of the blend with the other half coming from the previous vintage. 15% of the wine ferments in steel, and 85% ferments in barrels. Partial malolactic fermentation is allowed. dosage is 5g/L.

Taste: Medium bodied with high acidity. The acidity is bright and refreshing while providing an excellent spine. The feel is well balanced and fresh with red apples, red berries, biscuits, white florals, and a touch of mineral tones.
Overall: This is from 10/17 disgorgement. This is a beautifully fresh and lively champagne that shows off the Pinot fruit perfectly. There is excellent depth on both the nose and palate with well integrated acidity.

Blind tasting. Brief note. Pours a medium straw color in the glass. Perlage and mousse are are on the finned of medium. Nose and palate have good intensity showing a good amount of toasty and autolytic notes, ginger, pear, red apple skins, white florals, vanilla creme, citrus zest and a dash of mineralité. Midpalate has good weight and a nice creamy texture with very good acidity to balance the richer toasty notes going on to finish medium (+) and quite dry. Very nice.

The nose was wonderfully fresh with floral green apple tones offset by notes of raw dough, smoke, savory herbs and minerals. On the palate, I found zesty textures with soothing fine bubbles in a savory and almost salty expression as brisk acidity cut through it's rich textures and left the mouth watering through the finale. Hints of spiced, crisp granny smith apple lingering long on the finish. This is drinking beautifully. (from magnum)

My first wine from this house, and it did not disappoint. Very dry with bracing acidity. Beguiling nose of quince and Anjou pear with hints of subtle oak. Not showing nearly as much on the palate as on the nose at this young age (this bottle was disgorged in January), but lots of potential. Would like to pick up a few more bottles.

Day 2: Similar to yesterday, with a nice brioche toast on the nose; palate has retained plenty of bubbles but also a nice balance between richness and freshness; finish consistent with yesterday with perhaps a bit more flavor but still a slightly restricted length.

Disgorged May 2016. Served alongside the Bouchard Non Vintage Roses De Jeanne and both showed well. While the De Jeanne was the preferred of the two by most this was well received also. Very slightly darker than the near white De Jeanne, with green apple, green pear and lemons.

Although I have long heard good things about Savart, this is my first from the champagne house. This particular one is pinot noir dominated, totaling 80% of the blend with the other 20% comprised of chardonnay. The bubbly is popped and poured into wide-based glasses to help open up the tightly-wound bundle. It pours a somewhat deep golden color with very fine beading and long legs, all of which are signs to prolonged aging of the wine itself. On the nose, it is still somewhat tight, possibly because it is still relatively young. Nonetheless, there is a bountiful, concentrated bouquet of granny smith apples, plenty of citrus, sugarcane, pine, almonds, pears, white jasmine flowers and even some smoky spice towards the end. On the palate, the champagne is very supple and drinks like a well-constructed white blend. In fact, there is just the barest of hints of carbonation. However, much like the nose, the palate is rather compact as well and only yields very primary citrus, fruit-dominated flavors. There is also a particularly strong mineral backbone and adequate acidity in the end to keep things fresh. Just the slightest of smoke towards the end as well to draw this champagne to a close. Admittedly, drinking this now is infanticide. However, I see great potential in this and additional aging would surely help bring out the mesmerizing qualities of the pinot noir.

Deg November 2015. 80% Pinot Noir, 20% Chardonnay. Vintages bases: 2012-2013 (50/50). Dosage 5 g/l.
A tad shy on the nose compared to L'Ouverture. Squeezed apple must, nashi pear, white roses, bitter almond, mango, pine tree, mint and cherry flavoured candy.
Unfortuently to young on the palate. Red apples and red currant with loads of oak character. It shields off most of the wine. Beneath the oak there is pleasent creamy pear sorbet. My fiancée felt aloe vera (?)
Will wait with my remaining bottles. Has great potential.

1982 and other wines: From a magnum. Lots and lots of oak and meat on the nose. Pronounced saltiness on the palate, very intense quince. Hint of smoked eel (!?) on the nose. In has a tremendous concentration and presence, but I would cellar it for at least a couple of years when it all blends togehter and integrates better.

Very fresh and structured revealing abundant green apple, lime and lemon zest, structured minerals and complexity from sweet brioche and lightly roasted walnuts. The palate is fresh and crisp and has a stunningly vivid but still elegant and fine tuned mousse. The length on the finish lasts some 40-45 seconds. A great wine, perhaps a still too young... No idea when this bottle was disgorged but the wine appears young.

February Rotating Wine Dinner (Mon Ami Gabi - Chicago, IL): Another great showing! Beautiful melange of pears, apples, cherries, yeast, and chalk. I love this wine because it's got the bready/yeasty notes I love in champagne, but it doesn't approach the weight of the big houses. A bit lighter on its feet...one of Savart's better cuvees.

With time in the glass this really gains depth and richness. Starts off very chalky and precise with background creamy honey notes. After and hour this is a rich deep Champagne. Excellent.

The nose showed green apple, peach skin, wet stone, raw dough, and hints of blue cheese. On the palate, I found soothing textures with notes of stone fruit, tropical citrus, saline minerals, and a bitter twang setting off mouth-watering acidity. The mineral laden finish lingered long with green apple and inner florals.

This was from a magnum disgorged 2013, the base vintage is 2009. Compared to the current 75 cl release of L’Accomplie (base 2012), the main difference is the more ripe fruit notes here, which means that it more obviously says "Pinot Noir". I believe this is caused by the 2009 base vintage, which usually shows high ripeness but still excellent balance, rather than bottle size or a little extra time in the cellar.

It has more potential for development. Also here the green apples dominate, but there is also more citrus, and the minerality is definitely more prominent and gives some saline impression.

A lovely Champagne which needs some air if tasted today. The palate first reveals less pleasant tones of yeast (best way to describe it...), but also green apple, lemon and lime zest, crisp minerals and a very intriguing complex tone of white lillies and roasted walnuts(!). After some time in the glass, the yeasty part is totally gone and we are left with all the other lovely components of the nose. The palate is crisp and with the vivid mousse it adds nicely to the balanced and structured impression. The length on the finish lasts some 40+ seconds. Without doubt a great Champagne which needs air if tasted today. I think this bottle was disgorged late 2013.

The nose is all lemons and sour apples. Tastes like lemon mineral water with some yeasty notes on the finish, however the focus and depth here is wonderful. I'm not usually a fan of these sharp, somewhat lean Champagnes but this was really delicious. Great texture, right out of the fridge this had an almost crystalline texture, reminding me of shaved ice. I will definitely seek out more wine from this producer.

Awesome Champagne. Great nose of fresh bread, white flower, and lemon/lemon rind. The palate translates these along with a significant amount of minerality. Acid and richness are in great balance here too.

The Pinot Noir note (it's 80%) is less obvious in this wine than in the one year younger release of the same wine. I would have believed that this was a blanc de blancs. Less pronounced fruity notes and less apple, but more minerality and higher acidity. Although one year older, it comes across as younger on the palate.
Disgorged 2011, base vintage 2008 (50%, supplemented by 25% 2007 and 25% 2006).
