Lactic and savory, but also quite fresh and mineral. Aromas of raw beef, creme fraiche, vegetable oil, iris, lime juice and pith, honey, mushrooms, caramelized pears, quince preserves. The floral and earthy elements are intense; iris and fungal notes are exuberant and encompassing. Thick and rather soft for Savennieres; floral and spicy mid-palate; structure and freshness to spare, but this is definitely on the fat and plush side for dry Loire Chenin. Considering that this is Savennieres from a ripe vintage, its weight and density is no surprise, and it certainly shows the appellation's typical glittering stony character, so its overall character is not out of line. The mineral nature is baffling and predictable at once. How does a wine taste as mica appears?
I bought a case of this on release and I've got a few left. It took so long to budge. Rich and dense always, but it has finally turned a corner, showing more polish and integration today. Mature, but it may not be at its most interesting stage.... hard to say. Serve with strong cheese, assertive seafood, fungi, carpaccio/tartare, pork belly...
There was about a glass left and after 18 hours of air it is even better: brighter, fresher more delineated. I will be sure to give the next bottle a 6+ hour decant.

The first (screwcap) bottle that's showing a little age. Fantastic honeysuckle, wool. Matured, softening a bit. Really lovely. Based on this bottle, I'd drink this in the next couple of years.

Worth keeping these wines for a while, lots of complexity. Pale, nose of honeysuckle, pear, apple and lovely rich, smoky, honeyed palate and with some lemon freshness on the finish. Perfect with smoked salmon.

Aged for 9 months in stainless steel. 13% alcohol. Bottled under a screwcap.
Moderately intense yellow-green color. Savory and somewhat developed nose with aromas of woolly lanolin, some crunchy white fruits, a little bit of sappy green fruit, light aged notes of creaminess and a subtly lactic touch of buttermilk. The wine is broad, oily and dry yet hinting at sweetness with its juicy, ripe fruit tones. Moderately full-bodied with flavors of sweet red apples, some white peach, a little bit of developed creaminess, a hint of woolly lanolin and a touch of chalky minerality. Despite its broad overall feel, the wine is surprisingly weightless, thanks to its high acidity. Long and fresh aftertaste of steely minerality, creaminess, some white peach, a little bit of honeyed richness, light notes of ripe red apples and a touch of rough stony minerality.
A lovely, fresh and harmonious Savennières that feels remarkably youthful for its age - perhaps due to the screwcap? The wine shows some developed creamy tones and those woolly hints that Chenin tends to develop with age, but otherwise it is young beyond its years. Lovely and harmonious with good sense of depth and richness. Most likely will continue to develop much further; expect the score to go up with age. Recommended.

Still has a nice pale lemon colour. Aromas are complex with honeysuckle, nougat and some tropical fruits and smokiness too. The palate is lush and fat, so different from its youth and absolutely delicious. Lots of complexity on the nose and the palate.

Like nothing else, this wine. Pale color with a touch of gold. The nose is rich and very complex with a hint of sweetness, white flowers, limestone, chalk, apples, pears and honey. It seems to change every two minutes! The taste is dry, with great fruit, minerality, acidity, energy. Quite difficult to pinpoint really. Very chenin blanc. It's very long. Incredible that this wine is 12 years old already. It will keep even longer I'm sure and I'm curious what time will do with this wine, so will keep some bottles to find out. Florent Baumard is a magician!!

Three years since last taste. Still a spectacular wine. Complex nose of mushroom, rubber (like old burgundy), some white truffle but not as much as 1996 and 2002. Strong palate with sweet attack, fullbodied mouthfeel, great acidity both on mid-palate and finish. Some bitterness on the finish. I would not wait longer for these.

Apricot fruit, honey and clove on the nose and this follows on the palate with ripe apricot fruit, richness and multiple layers of spice and There's a pebbly, mineral edge on the finish which gives it a real sense of place and it's delightful to drink, a world class Chenin Blanc.

Year 2 - Super Tasting 5 of 5 - Greg does Loire (Greg's House - Kitchener, ON): I have loved this wine in the past but this was a very interesting animal.... Aromas of caramelized poached eggs, lemon and a very dominant lactic note. The palate sled wool, wet wool, egg yolk, kefir, lemon, white flowers and honey but the lactic notes really take over and are just too much for me. Finish is medium+ I had bunch of these and returned them based on this bottle....not my style at all and based on the fact that I loved this wine young...this is not one to age for me.

Year 2 - Super Tasting 5 of 5 - Greg does the Loire (Greg's House): This pours a much lighter shade of straw yellow. The nose is of warm yogurt, honey, white flowers and iron. Some combination of lees or malolactic seems to have given this and the next wine some heavy lactic/custard notes. The palate gives the impression of honey lemon yogurt being a pinch off dry repeating custard and lactic notes on a medium finish. Very good wine, but for me my preference was for the Joly. This is fresh and seems to be aging slowly, especially under screwtop.

The palest of the wines. Beautifully clear and the slightest touch of gold. Fully expressive aromas of white florals, chalk, crushed limestone, fresh orchard fruit (apple and pears), and fresh quince and pungent lemon. Some development in the form of a slight honeyed and nutty character but tightly frame by the mineral vein of the wine which evokes oyster shells as the site often expresses. Great energy. On palate, this is all about texture. While this is totally dry, this has great richness, with taste of almonds, apple, the slightest hint of lemon rind and honeycomb and long-lasting chalky creaminess. This is very primary in its presentation. Very long finish. There is plenty of structure and nerviness to this and this will keep forever. To me this was a great expression of Clos du Papillon and some tasters were really taken by it. Others found it a coarser expression of chenin blanc.

Medium gold in color. Nose of honey, sweet nectarines and minerals. Medium to full bodied, a bit sweeter than I expected (more demi-sec, than dry to me. In fact, some didn't like it bc it was too sweet for them; their loss). Lots of honey, ripe sweet peaches and tart pineapples. Very nice, round mouthfeel, loads of minerality and good length--I get cloves at the back end. A very enjoyable, somewhat lush & uncommon bottle, and my only one unfortunately. Plenty of time to go on this beauty too.

A year ago since last taste. It has some of the truffle notes which I have found in 1995-2001, but which I didn't think would come forward in this vintage. Very racy and taut. On the palate it almost gives a bitter sensation. You would think it had seen wood but this is all raised in steel. Instead it is the minerality from Savennieres that shines through. Steely acidity, broad mid palate, long finish. What more can you ask for in a Chenin Blanc!

Drank next to the '02, the '05 is much riper, lower acid, comes across as buttery / diacetyl. Paired spectacularly with a souffle of saffron and pine nuts, but on their own, I greatly preferred the classic Savennieres profile of the '02.

Screw cap. Decanted 1 hour. Nose dominated by minerals and honey. Some wool. A bit on the fruity side, some pear is noticeable. Striking acidity and minerals also dominates the palate. Some heat is noticeable and not a very long finish. A bit waxy and rich. Overall a good wine. Great with proper food.

Needs 30 minutes to open up. Amazingly, this has taken on some of the truffle notes which I have found in 1995-2001, but which I didn't think would come forward in this vintage. It certainle wasn't there a year ago. At the same time it is fatter and denser than these vintages, which makes a winning combination for me. Steely acidity, broad mid palate, long finish. What more can you ask for in a Chenin. Great style!

On the nose, funky chestnuts, honey, fig, and marzipan. The palate continues with the chestnut theme, but also contains a slightly bitter minerality and racy acidity. Loads of pear and chenin/savennieres character unfold on the finish (some call it woolliness). Great wine with food or contemplation.

Popped and poured (a mistake). The wine is still young, showing lemon, dried honey, lanolin, minerals and searing acidity-- but just a hint of beeswax/oxidation emerging compared to a year ago. If we could have kept myself from consuming the bottle I suspect more complexity would have emerged with hours if not a day of air exposure. Delicious now, but I expect it will be more delicious in time.

2005 was an excellent year in the Loire valley. I had the 2002 and loved it. Only 500 cases of this were imported into the US. The estate was founded in 1634 and is located in the town of Rochefort in the Loire valley. The estate is currently run by Florent Baumard who took over from his Father, Jean, in the early 1990's. This wine is 100% Chenin Blanc and is sourced from a small enclosed butterfly shaped vineyard (hence the name Papillon which means butterfly in French). This vineyard was purchased in the 1960's and is considered the best Savennières site owned by Baumard. Opened my first before dinner. Notes of vanilla, slate and a little petrol. Thick and full bodied. A little too heavy for my liking. 89-90 points.

Nose of lime, stones, and seashells; Rand doesn't know what he thinks, but says it smells of some acidity. The nose opens after it's poured, and Rand likes the nose better than the taste. The taste is good but one-dimensional, and I'm imagining that the conmplexity might develop in 5 or 10 years...perhaps more. At the moment it's just above average, and might be terrific later on. We had a similar South African white from Tulbagh Mtn Vineyards that was far superior at this point. To try again in 2020-2025.

Absolutely fantastic bottle of Savennieres. Sorry it was my only bottle. Full bodied without being over the top. Great weight and mouthfeel without feeling heavy or cloying. Waxy, earthy, mineraly. Great finish. Very complex and thought provoking. This should age beautifully too.

Old Young, Old Young (San Francisco): Medium yellow. Each time I've tasted this I've been more impressed. Viscous texture, bright, almost Vouvray-like citrus and pear, yet excellent earthy core. Whereas I initially thought that this was somewhat soft, it has gained earthiness and shape over time.

Very unlike earlier examples of Papillon, i.e. vintages 1995 to 2001. This is fatter and more full bodied than earlier. Change of style? This one has a lovely balance and almost a Gewurtz-like spicyness and mouthfeel. No signs of shutting down as the 1996 or 2001 did. I have a hard time seeing that this will ever age as well, nor take on the complex truffle notes as earlier vintages. Lovely right now though.

A nice bottle of wine but not what I expected. Very, very light in color and almost no nose at all, so it was missing something there in my book. Taste was very interesting and different. I liked it. Very mineral in nature, not smooth or silky like many whites and not crisp and refreshing like many whites. Something very different, thus the score.

Glorious example of young Savennieres and Clos Papillon. After drinking multiple Trie Speciale vintages, the Papillon showed the more austere stony mineral qualities to the Trie's quince/melon/apricot fruit characteristics.

Notes from day 2 in Nags head. At room temperature. Nice light gold color. Nose of lychee, a little honeycomb, green banana, pollen, a little lanolin, and a little minerality. Palate of a little buttersotch, vanilla, green banana, beeswax, smoke towards the back with some minerality. The mouthfeel is great, the balance is nice, and the finish is long. On the nose, notes of pineapple, apple, pollen, banana, beeswax, and a hint of petrol. Quite viscous and waxy in texture for a dry white; yet there is also a honeyed aspect on the palate. But even though the wine certainly had character and complexity, it felt a little disjointed and rough around the edges initially, leaving me somewhat disappointed. However, many hours later, I took a sip from a glass I had left on the table after the accompanying meal was over, and the wine had mellowed, which for me presented an improvement, and took on an apricot aroma I had not noticed before. Judging from this, I suppose this has yet to reach maturity, and must either be cellared, or decanted for immediate consumption. 88pts now, 90+ potential. Seems to be a polarizing wine, looking at the CT notes...

Expectations were high. I wasn't disappointed. Toast and citrus on the nose. Ripe melon with slight petrol and excellent acidity. This wine has a ton going on. Nice finish and bone dry. The warm day and great company added to the experience. Plan to order a few more bottles from Wine Library. $28 USD

Somewhat disjointed nose that has a bit too much alcohol showing through. Supple mouthfeel and big creamy peaches, carmelized pears, and vanilla. There's also a smokiness that's integrated throughout. I'm curious about how much oak was used to make this wine.

This is one of the best Savennieres I've had, lush and easy drinking but also complex and full bodied. On top of all that I find this elegant. I don't have experience to know how this will age, but I suspect it will develop well for a long time. B++

Hints of mangoes and pineapple juice with nuances of sweat, rubber and a nice dusty sort of minerality on the nose. Tasted sweeter than expected but with a nice ripe mango pungency. Good acidity on the front but not quite enough throughout to mitigate the sweetness. Still, it's very smooth and has a nice baked fruit/pie crust component on the finish and a fine chalky texture. Unfamiliar with Savennieres in general so I have no idea how this will evolve...

Light yellow. Deceptively ripe, sweet aromatics with citrus and pineapple. Again, an impression of sweetness on the front end with rich, supple Chenin feel. It became more and more interesting over time with flowers, quinine, and then intense Savennieres earthiness on the finish which just sets it apart from Vouvray. Complex, long, and lively despite a level of acidity that seems average (like many '05 Loire wines). This has more shape and complexity than it did last summer.

29th Birthday Celebration; 2/5/2010-2/7/2010 (my apartment): My first glass was too cold...and had a nasty metallic aftertaste. Once the bottle was opened longer, it began to really develop into a stunning bottle of Chenin. At one point I felt like the bottle began to take on bordeaux blanc type characteristics...with diesel, dandilions, and pineapples. Mouthfeel is great with this bottle, and I think this can last for another 10 years!

screwcap! i adore the 02 version of this wine, and have been hoarding my bottles trying to get some age on them. i wanted to try this 05 to get a peek at it in comparison. my first impression is that i prefer the 02, but i'm a chenin fan, and this hardly disappoints. pear, watermelon, and jane and i argued about a peach component. i felt it was there, and jane basically told me i was full of caca. i enjoy this better with just a slight chill below cellar temp (55). it's nice and chewy in the mouth, very rich without being thick. this seems built for aging. hold.

Really a shame to drink so young. Probably not as expressive as it will be in a decade or so. But two things strike me. One, that this wine comes across as both palate staining and elegant. Two, the finish is remarkable. I have no doubt this will be spectacular with time (as long as it's measured in decades).

Dale Cruse's Blind Tasting Party: Rich pear, heonydew melon and a tiny bit of car exhaust on the nose. The mouth is very complex with more pear, clove but with crisp acidity. Very nice body and mouthfeel. I really like this wine. It had richness but was balanced with nice acidity.

Worth keeping these wines for a while, lots of complexity. Pale, nose of honeysuckle, pear, apple and lovely rich, smoky, honeyed palate and with some lemon freshness on the finish. Perfect with smoked salmon.

Moderately intense yellow-green color. Savory and somewhat developed nose with aromas of woolly lanolin, some crunchy white fruits, a little bit of sappy green fruit, light aged notes of creaminess and a subtly lactic touch of buttermilk. The wine is broad, oily and dry yet hinting at sweetness with its juicy, ripe fruit tones. Moderately full-bodied with flavors of sweet red apples, some white peach, a little bit of developed creaminess, a hint of woolly lanolin and a touch of chalky minerality. Despite its broad overall feel, the wine is surprisingly weightless, thanks to its high acidity. Long and fresh aftertaste of steely minerality, creaminess, some white peach, a little bit of honeyed richness, light notes of ripe red apples and a touch of rough stony minerality.
A lovely, fresh and harmonious Savennières that feels remarkably youthful for its age - perhaps due to the screwcap? The wine shows some developed creamy tones and those woolly hints that Chenin tends to develop with age, but otherwise it is young beyond its years. Lovely and harmonious with good sense of depth and richness. Most likely will continue to develop much further; expect the score to go up with age. Recommended.

Still has a nice pale lemon colour. Aromas are complex with honeysuckle, nougat and some tropical fruits and smokiness too. The palate is lush and fat, so different from its youth and absolutely delicious. Lots of complexity on the nose and the palate.

Very aromatic nose of tropical fruits like banana and mango. It lacked a bit of acidity that it had exhibited in its youth but still quite enjoyable. Time to drink up as I don’t see it getting better with more time. 89

Like nothing else, this wine. Pale color with a touch of gold. The nose is rich and very complex with a hint of sweetness, white flowers, limestone, chalk, apples, pears and honey. It seems to change every two minutes! The taste is dry, with great fruit, minerality, acidity, energy. Quite difficult to pinpoint really. Very chenin blanc. It's very long. Incredible that this wine is 12 years old already. It will keep even longer I'm sure and I'm curious what time will do with this wine, so will keep some bottles to find out. Florent Baumard is a magician!!

Apricot fruit, honey and clove on the nose and this follows on the palate with ripe apricot fruit, richness and multiple layers of spice and There's a pebbly, mineral edge on the finish which gives it a real sense of place and it's delightful to drink, a world class Chenin Blanc.

Some combination of lees or malolactic seems to have given this and the next wine some heavy lactic/custard notes. The palate gives the impression of honey lemon yogurt being a pinch off dry repeating custard and lactic notes on a medium finish. Very good wine, but for me my preference was for the Joly. This is fresh and seems to be aging slowly, especially under screwtop.

Fully expressive aromas of white florals, chalk, crushed limestone, fresh orchard fruit (apple and pears), and fresh quince and pungent lemon. On palate, this is all about texture. While this is totally dry, this has great richness, with taste of almonds, apple, the slightest hint of lemon rind and honeycomb and long-lasting chalky creaminess. This is very primary in its presentation. Very long finish. There is plenty of structure and nerviness to this and this will keep forever.
To me this was a great expression of Clos du Papillon and some tasters were really taken by it. Others found it a coarser expression of chenin blanc.

Medium gold in color. Nose of honey, sweet nectarines and minerals. Medium to full bodied, a bit sweeter than I expected (more demi-sec, than dry to me. In fact, some didn't like it bc it was too sweet for them; their loss). Lots of honey, ripe sweet peaches and tart pineapples. Very nice, round mouthfeel, loads of minerality and good length--I get cloves at the back end. A very enjoyable, somewhat lush & uncommon bottle, and my only one unfortunately. Plenty of time to go on this beauty too.

Popped and poured (a mistake). The wine is still young, showing lemon, dried honey, lanolin, minerals and searing acidity-- but just a hint of beeswax/oxidation emerging compared to a year ago. If we could have kept myself from consuming the bottle I suspect more complexity would have emerged with hours if not a day of air exposure. Delicious now, but I expect it will be more delicious in time.

2005 was an excellent year in the Loire valley. I had the 2002 and loved it. Only 500 cases of this were imported into the US. The estate was founded in 1634 and is located in the town of Rochefort in the Loire valley. The estate is currently run by Florent Baumard who took over from his Father, Jean, in the early 1990's. This wine is 100% Chenin Blanc and is sourced from a small enclosed butterfly shaped vineyard (hence the name Papillon which means butterfly in French). This vineyard was purchased in the 1960's and is considered the best Savennières site owned by Baumard. Opened my first before dinner. Notes of vanilla, slate and a little petrol. Thick and full bodied. A little too heavy for my liking. 89-90 points.

The taste is good but one-dimensional, and I'm imagining that the conmplexity might develop in 5 or 10 years...perhaps more. At the moment it's just above average, and might be terrific later on. We had a similar South African white from Tulbagh Mtn Vineyards that was far superior at this point. To try again in 2020-2025.

Glorious example of young Savennieres and Clos Papillon. After drinking multiple Trie Speciale vintages, the Papillon showed the more austere stony mineral qualities to the Trie's quince/melon/apricot fruit characteristics.

Hints of mangoes and pineapple juice with nuances of sweat, rubber and a nice dusty sort of minerality on the nose. Tasted sweeter than expected but with a nice ripe mango pungency. Good acidity on the front but not quite enough throughout to mitigate the sweetness. Still, it's very smooth and has a nice baked fruit/pie crust component on the finish and a fine chalky texture. Unfamiliar with Savennieres in general so I have no idea how this will evolve...

29th Birthday Celebration; 2/5/2010-2/7/2010 (my apartment): My first glass was too cold...and had a nasty metallic aftertaste. Once the bottle was opened longer, it began to really develop into a stunning bottle of Chenin. At one point I felt like the bottle began to take on bordeaux blanc type characteristics...with diesel, dandilions, and pineapples. Mouthfeel is great with this bottle, and I think this can last for another 10 years!

Nose of Granny Smith apples, vanilla and lime. The taste was minerals, limestone and green apple. It had a soft, semi-dry finish with a tad bit of sweetness. Easy drinking and enjoyable, but I give a 2 star value (out of 5).

screwcap! i adore the 02 version of this wine, and have been hoarding my bottles trying to get some age on them. i wanted to try this 05 to get a peek at it in comparison. my first impression is that i prefer the 02, but i'm a chenin fan, and this hardly disappoints. pear, watermelon, and jane and i argued about a peach component. i felt it was there, and jane basically told me i was full of caca. i enjoy this better with just a slight chill below cellar temp (55). it's nice and chewy in the mouth, very rich without being thick. this seems built for aging. hold.

Really a shame to drink so young. Probably not as expressive as it will be in a decade or so. But two things strike me. One, that this wine comes across as both palate staining and elegant. Two, the finish is remarkable. I have no doubt this will be spectacular with time (as long as it's measured in decades).

Dale Cruse's Blind Tasting Party: Rich pear, heonydew melon and a tiny bit of car exhaust on the nose. The mouth is very complex with more pear, clove but with crisp acidity. Very nice body and mouthfeel. I really like this wine. It had richness but was balanced with nice acidity.
